A few years ago, when I visited Tokyo, I was shocked by the delicious ramen at "Madai Ramen Men-u" in Kinshicho. The flavor of the sea bream was unbelievably good, unlike anything I had experienced before. I tried to find a similar sea bream broth ramen in Osaka, and "Hiyori" in Morinomiya came close, but unfortunately, it closed down. Since then, I haven't been able to find a sea bream broth that I like. Today, I didn't have dinner at home, so I took the opportunity to visit Marude (Circle Triangle) for the first time. The restaurant is located on the west side of Shin-Osaka Station and specializes in sea bream white broth ramen, run by Gin no Budo, known for Zakin. There were 8 people waiting outside at around 8 pm, showing its popularity.
I ordered the recommended sea bream tsukemen, "Kirari" (980 yen). The tsukemen was soaked in kombu water, giving it a beautiful and glossy appearance. The dipping sauce is made only with Rausu kelp and sea bream head, resulting in an elegant flavor. The noodles are flat noodles made by Menya Teigaku, soaked in kombu water, with a firm texture and perfect compatibility with the dipping sauce. Additionally, it comes with a side dish of steamed chicken and sea bream with kombu, menma, and two flavor-changing items (ume jelly and oyster ajillo-style). For a tsukemen under 1000 yen, the variety and quality of the toppings are excellent.
I also ordered a side dish of sea bream rice (small, 220 yen). Pouring the dipping sauce over the rice enhances the deliciousness of the sea bream. The service was polite and hospitable, as expected from a restaurant affiliated with Gin no Budo. However, the dipping sauce was too refined, lacking a stronger punch of sea bream flavor. I would prefer a bit more robust sea bream taste.
