Here, you can enjoy a premium beef tongue experience with various cooking methods. The unique texture and rich flavor of beef tongue are truly captivating! Beef tongue enthusiasts can enjoy not only grilled meat but also a variety of delicious options here at Isshin Tansuke. The restaurant has been trending on numerous media platforms like "King’s Brunch" and "Sakagami & Sashihara's Uncrushable Store"! With a specialized factory in Miyagi and its original location in Ueno, Isshin Tansuke has expanded to include four locations in Tokyo: Ueno, Yurakucho, Ikebukuro, and Meguro.
I had the pleasure of visiting the new Meguro location that just opened in June. Their Sendai beef tongue differs from the thinly-sliced tongue typically served at other restaurants; it's cut slightly thicker, allowing you to enjoy various flavors based on its aging process, saltiness, and grilling method. At each table, there is a staff member trained in the perfect grilling of beef tongue, who carefully cooks each piece right in front of you to provide the best tasting experience.
Unique to the Meguro location is the new menu item, "Ultimate One Tongue". This luxurious dish uses the tongue's root, cooked with low-temperature methods then finished on the grill right before your eyes. It boasts an excellent texture and is low in fat. Additionally, there is the extravagant "Beef Tongue 5 Kind Assortment," where you can enjoy different cuts with varying thicknesses, grilling methods, and seasonings. Also on the menu is the "Yakiniku Yukke of Sendai Black Wagyu," which features rich egg yolk sauce, making it a must-try that pairs well with the beef tongue's unique texture.
There is only one course available called the "One Tongue Tansuke Course (130 min)," with two patterns to choose from:
1) "Sendai Black Wagyu Experience" – Enjoy Sendai black wagyu and rare cuts over 80 minutes, with a 20-minute "Gluttony Time" (all-you-can-eat period).
2) "Gluttony" – The first 50 minutes is a course meal, followed by a 50-minute all-you-can-eat time.
Every visit, if you complete a simple questionnaire, you receive drink discounts; ¥200-¥300 drinks become free, while ¥400 drinks are just ¥100, with other beers and wines also offered at about half price!
This time, I ordered the "One Tongue Tansuke Course (Sendai Black Wagyu Experience)" which included:
**Appetizers (3 kinds)**

- Green onion namul (side dish that goes well with beef tongue)

**Beef Tongue Assortment**

I savored the entire tongue ranging from the root to the tip. The "Upper Tongue Salt" was enjoyed with different seasonings: the first slice without garnish highlighted the natural saltiness, while the second was paired with green onion namul, the third with wasabi, and the fourth with aromatic miso.

The Sendai beef tongue came in two thicknesses of 8mm and 15mm, showcasing a rare cut from the tongue root that is only available in small amounts. The 8mm cut provided a delightful "snap" texture, while the 15mm cut was rich and juicy due to its higher fat content.

This cut is rare, known for its chewy texture but here it's thick-cut and marinated in miso for a crunchy experience.
**Choose Your Grilled Meat**
- Upper lean cut
This was incredibly tender, perfect for the menu's Gluttony Time, so order it beforehand!
**Ultimate One Tongue**
Using the root of the tongue, it was low in fat yet full of flavor! After being cooked with low-temperature techniques, it was lightly grilled before being sliced. The pink interior looked delicious! With the lemon-infused blended salt and green onion sauce, it was even tastier!
**Sendai Black Wagyu Fillet**
Juicy and tender, bursting with flavor as you bite into it. The accompanying fresh pepper provided a spicy and refreshing contrast.
**Yakiniku Yukke of Sendai Black Wagyu**
Thinly sliced Sendai black wagyu grilled just right, then coated with rich yolk sauce. It was almost like a sukiyaki experience, perfectly complementing rice.
**Rice**
Specially developed rice that pairs well with grilled meat, simply divine when enjoyed with the deliciously grilled meat.
**Gluttony Time**
For 20 minutes, you can enjoy unlimited offerings from the menu!
**Sudachi Cold Noodles** - Refreshing with a hint of sudachi citrus, making it perfect for cleansing the palate!
**Rare Cheese Mousse** - A delightful treat that is light and fresh, reminiscent of yogurt!
**White Peach Sherbet** - Packed with bits of fruit for a fun texture!

The experience of "Gluttony Time" offers a fresh, indulgent take on all-you-can-eat, something only guests can truly relish! It was fantastic to indulge in delicious beef tongue until I was completely stuffed! The restaurant’s interior features a chic gray base, creating a stylish atmosphere with both open seating and semi-private options, suitable for various occasions. Once again, I'm completely satisfied! Thank you for the amazing meal!
