The interior of the restaurant was quite spacious and had a calm atmosphere, which was nice. I didn't really taste the flavor of the soba noodles, but the dipping sauce had a good bonito flavor and the tempura was also good. The two major producers of soba in Hokkaido are Horokanai Town and Shintoku Town, and their specialty is soba. The central figure in Shintoku Town is this restaurant, so maybe my expectations were a bit too high? I ordered the large portion of Jitokko Soba for 1650 yen. The soba was a bit weak in texture and a bit watery, but of course it was delicious. The chicken, which is a specialty of Shintoku, was different from duck soba. It's obvious, but I think the leeks should be grilled a bit, as well as the chicken. The aroma was lacking and I'm not sure about the broth... The restaurant is surrounded by blooming soba flowers, creating a spectacular atmosphere for dining.

Since we couldn't see the sea of clouds, we decided to stop by here to have soba in Shintoku on the way back. I have been to Shintoku many times, but I had never tried their soba, which is essential. I have had plenty of Horokanai soba before. The restaurant was spacious, with a fully equipped souvenir corner, and even soba soft serve ice cream near the entrance. Well, everyone seems to turn everything into soft serve ice cream (laughs). Now, from the menu, I was curious about the Shintoku Jidori soba set with gobou tempura. It was served in no time, which was a bit surprising. Now, how is the Shintoku soba?! Well, it had a distinct hand-made feel, and the soba flavor was lighter than Horokanai, closer to a Soba variety called Sarashina. The broth was also quite tasty. The gobou tempura came with a separate dipping sauce with grated daikon radish and ginger, making it delicious until the end. The Jidori chicken had a slightly burnt aroma, which was a bit disappointing, but I thought it would go well with the warm soba. They also had other options like tempura rice bowl sets, perfect for families. I couldn't bring myself to try the soba soft serve ice cream (laughs), but it was a delicious way to end the trip. I ordered the seiro soba and tempura rice bowl set for 1200 yen. The soba had a nice chewy texture and a smooth throat sensation. I savored the flavor of the soba as I chewed. Delicious! The soba broth was also great, with the cloudy water mixing with the soup. I added a little wasabi for a refreshing kick. The tempura rice bowl had shrimp, eggplant, bell pepper, and pumpkin, all delicious with the rice and sauce. I think I'm going to get even more into soba now. On the way out, I tried soba soft serve ice cream, which was satisfying. I also bought some soba flour rice crackers as souvenirs. The slight bitterness and aroma were delightful. In May, during a long holiday lunch break, we drove through a mountain road to reach the Shintoku town and have some soba noodles at the Shintoku Soba House. It was a fun drive through the mountains after a long time. Upon entering the Shintoku Soba House, we first saw a glass-walled hand-made soba experience area where you can try making soba noodles yourself. There is also a direct sales store for Shintoku soba, which we planned to visit on our way back.
Finally, we arrived at the soba restaurant "Genjo" that we were looking forward to. There was a line just a while ago, but luckily it cleared up by the time we arrived and we were seated right away. As we ordered, I got the mini pork rice bowl set with one shrimp tempura. The rest of my family ordered the local chicken soba, a hot soba, and one tempura set.
The food arrived sooner than expected and we started by trying the soba without dipping it in the sauce. It was smooth and had a good texture, very delicious. The sauce had a slightly sweet taste with a strong bonito flavor, which I liked. The mini pork rice bowl was amazing, with a perfect balance of sweet and salty sauce. The shrimp tempura was also good.
After paying the bill, we decided to buy some souvenirs. We purchased the town return-use dried soba noodles. I had the impression that these might be made with cheaper ingredients, but when we cooked and tried them at home, they turned out to be surprisingly delicious. I visited this place last autumn but forgot to leave a review on Tabelog. I originally planned to go to a famous restaurant in the city, but the parking lot was full and I couldn't wait any longer. With my next job approaching, I decided to visit this place on the outskirts instead. When I looked at the menu, I saw a dish called "Kansarashi Soba." I ordered a set of seiro (bamboo basket) soba and a mini tendon (tempura rice bowl), and was recommended to upgrade to Kansarashi Soba for an additional 100 yen, so I decided to try it. Kansarashi Soba is made with 100% buckwheat noodles. I wanted to eat a lot of soba, so I paid an extra 200 yen to have a large serving of seiro soba. There were only about three other groups of customers, so my order arrived in about 5 minutes. It also came with locally produced Yama-wasabi. I took a bite of the soba... Wow... the aroma of the soba is amazing! When I put it in my mouth, it was filled with the wonderful flavor of soba that I love! I felt that the flavor was even stronger than the new soba I had before. And with a little bit of Yama-wasabi on top, I took another bite. Yes, this is the best. It's so delicious (laughs). The dipping sauce is also fantastic. It has a rich dashi flavor and is slightly on the stronger side, which I like. The tempura rice bowl was also delicious. The batter was crispy. The eggplant, green pepper, and shrimp were all made with good quality ingredients. The texture of the batter reminded me of a high-quality tempura restaurant, and I felt very satisfied! I finished it in no time. Finally, I drank all the dipping sauce with soba water. The soba water was delicious too. It also had a strong flavor and was a clear white color. Seiro + Mini tendon set 1,150 yen, Upgrade to Kansarashi Soba +100 yen, Large serving of seiro +200 yen, Total 1,450 yen. It's a bit pricey for a lunch soba, but the content was very satisfying. The popular soba restaurant may have lines depending on the timing. Soba is delicious after all. It is slightly thicker than the more common type, allowing you to enjoy the chewiness even more. I prefer cold soba, but I wonder how it tastes warm? I'm curious. This time I chose the set with a bowl, but maybe it would have been good to try it with dipping sauce or in a steamer? On the way to Asahikawa, I stopped for lunch in Niikappu. It was quite crowded probably because it was lunchtime. You can also experience making soba noodles here. In fact, I did this about 15 years ago. I ordered a set of kake soba and mini pork bowl. It arrived in about 10 minutes. The soba was quite ordinary with a strong dashi flavor. The pork bowl was on the sweeter side. The meat was tender and good, but the sauce could use a little more flavor. I probably wouldn't order the pork bowl on its own.

It was nice that we didn't have to stand in line. I passed the time by taking my dog for a walk and listening to music in the car. When I thought it was about time to be called, I went to check in front of the restaurant and, as expected, we were next in line. After about a 5-minute wait, we received the call. We were seated at a table and looked at the menu to decide what to order. I chose the "Niikappu Jitokko Soba" (1,400 yen) while my wife ordered the "Tempura Soba" (also 1,400 yen). The staff at this restaurant were very nice and provided excellent service. The atmosphere was very comfortable, and the wait didn't feel that long. The soba arrived, and it looked amazing! The flavor of the broth was just right for me – not too strong or too sweet, exactly to my liking. The soba noodles were hand-cut and had a great texture, perfectly complementing the broth. When you drive from Niikuni Town towards Sahoro on the national highway, you will see a shop on your left after passing through the speed camera. On the way back from Obihiro, I stopped by "Genjo" at the "Shintoku Soba Museum" to try the "new soba." I watched someone making soba at the hand-made dojo and considered buying some souvenirs, but then I saw they were selling soft-serve ice cream. They had something called "soba soft-serve." I ordered a cup for 270 yen including tax. The ingredients listed were "milk components, soba, wheat, soy," but I couldn't really taste the soba flavor in the soft-serve. There were two star-shaped crackers that came with it, and those were surprisingly good. It didn't feel very special, but it was a unique experience trying soba soft-serve. After that, we crossed the Karikachi Pass and headed back to Asahikawa.
