In late November 2022, I visited a ramen shop that caught my interest because the owner is from Kazuya. I arrived 15 minutes before opening on a weekday and was the first person in line. When the shop opened, there were 8 people waiting. The ticket machine had big buttons for Wonton Men, Char Siu Wonton Men, Tantan Men, and Wonton Tantan Men. The dipping noodles were sold out that day. I bought a ticket for Wonton Men and waited at the counter seat. The shop had 5 counter seats and 4 two-person tables. There was a noodle-making room at the back of the shop. The young owner, a female assistant, and a female server were working. The owner skillfully handled the noodles just like at Kazuya, and a beautifully presented bowl of ramen was served. The soup was mainly based on bonito with a solid support of animal ingredients, and the balance with the soy sauce seasoning was excellent. The homemade medium-thin straight noodles were delicious and slurp-worthy. The toppings included 5 Teletel-style wontons, 2 slices of char siu, menma, seaweed, and green onions. The wontons were filled with juicy meat and a hint of ginger, making them delicious. The char siu had a good chewy texture and a retro flavor. The menma was soft and slightly different from usual. I finished every last drop and bite, enjoying the delicious Wonton Men that reminded me of the original shop. Next time, I might try the Tantan Men with a side of wontons. I look forward to visiting again soon.

First visit. After checking out a store in Tajo and Higashi-Tajo, I took a break under a tree, feeling the sun on my back. I walked towards the store that caught my interest and found it surprisingly close. As I walked along the Kandai Street towards Itabashi City Hall, I was relieved to be out of the sun. I turned right at Nakajuku intersection and headed south on the Samezuka Oyama Line. I could see a line of people from the level crossing near the store. There were a few bikes parked in front of the store, and there were about 10 people in line at 1:30 in the afternoon. I waited comfortably in the shade, surfing the internet on my phone. After about 25 minutes, a female employee called me in. I bought "Chinatown Soba" from the ticket machine and waited for about 5 minutes inside the store. There were mainly table seats, and the noodles were served to the customers before me. After waiting for 15 minutes, my bowl arrived. I first tasted the noodles, which were thin and had a great texture. The piping hot soup had a rich flavor with a perfect balance of animal and fish stock. The saltiness was just right, and the taste was nostalgic. It was a delightful meal. As I left the restaurant, I noticed that even though it was close to closing time, there was still a line of people waiting outside. Now, I'll try to walk a few more stops towards my accommodation (laughs).

I had been looking forward to dining at the yakiton restaurant owned by Mr. Hotta and the cloud noodle restaurant owned by Mr. Osada for a while now. Despite the rainy weather, the sound of rain hitting the umbrella is soothing. I used the navigation system to find the place and arrived to a warm welcome. I ordered the cloud noodle for 1100 yen. The dish arrived promptly, with a clear soup and flavorful roasted pork. The noodles had a good texture at first, but seemed to get softer as I ate. The cloud dumplings were to my liking, with a nice chewy and smooth texture, although I prefer less meat.

There is a noticeable amount of oil, giving it a slightly oily feel. The noodles are thin and straight, perfectly blending with the soup. The wontons have thin skin with a strong filling flavor. The char siu has a satisfying chewy texture. The umami flavor lasts even as you continue eating. I am curious about the tsukemen and tantanmen, so I will definitely revisit.

Arrived at 12:00 on a holiday, waited for about 15 minutes (luckily it was short as there was a long line outside when leaving). I think it was a very well-executed bowl of ramen. Truly deserving of its reputation as a top ramen shop. However, there were a lot of noodles and the portions were large, so I think it's best suited for those with a confident stomach. The chashu was also to my liking, with a generous amount that was excellent.

Visited the shop around 12:30 on Sunday. There were 5 customers inside and 3 outside when I arrived. By the time I left, there were nearly 10 people waiting outside. Soon after, I moved inside and purchased a meal ticket from the ticket machine. "Wonton Char Siu Noodles for 1,400 yen." With recent inflation, this price has become quite normal. I received my bowl in about 5 minutes. The soup had a chicken base with a seafood broth, very easy to drink. The Char Siu was a mix of rare pork loin and slightly chewy pork belly. The noodles were quite thin. They were slightly soft, so I timed the cooking to be about 1.5 minutes. For this thickness, maybe less than a minute would be better? Since this was the fourth bowl being made together, it may have been slightly overcooked. The flavoring of the bamboo shoots and Char Siu was excellent. Some ramen shops have a strange balance with these ingredients, but here they matched the soup perfectly. The wonton was average, perhaps because my expectations were high. The filling was strong in flavor and slightly firm, which could be a divisive factor. I prefer a softer, juicier filling. Next time, I will try the tsukemen and the lo mein. Thank you for the meal.

I visited during the daytime on a regular day, but the restaurant was full with 2 groups waiting ahead of us. We waited for about 15 minutes before being seated. The menu was full of tempting options for someone like me who loves wontons. I couldn't decide whether to try the Wonton Tantanmen or just go with the Wonton Noodles... After much deliberation, I chose the Wonton Noodles (¥1,100-) with an added seaweed topping. It was delicious! Very delicious, but I started to worry about whether I could finish it due to the generous portion. However, I managed to finish it. Thank you for the meal!

I felt like exploring delicious soy sauce ramen in Tokyo, so on a Sunday afternoon, I headed to Oyama, a place I rarely visit. I arrived 15 minutes before the 11:00 opening time and there were already 5 people waiting. The line kept growing after I arrived, but I managed to slip in on the first round. Just before opening time, I bought a ticket for the Char Siu Wonton Men with extra noodles (1,500 yen). The ramen was served efficiently in sets of 3 bowls. At first, I didn't feel any particular excitement or punch when I took the first bite, but as I continued eating, the umami of the soup and the balance between the noodles and soup started to come together. It was subtly delicious. The wontons and char siu didn't overpower the dish, but played their parts perfectly. Serving the green onions in warm soup to reduce their sharpness was a nice touch. And the fried green onions on the table added a great crunch. The staff's precise movements were impressive, and they were attentive and considerate. It's a truly remarkable restaurant. It may be a bit out of the way, so I'm not sure when I'll be back, but this soy sauce ramen was delicious and it made me want to try their tantanmen or tsukemen next time.

Ramen TOKYO has now reached its 75th store, and this time we visited a famous Chinese soba shop in Oyama, Itabashi-ku. The shop's training ground was Kazuya in Meguro. The soup is made from chicken and seafood, with a rich and smooth texture due to the chicken oil masking. The seasoning in the soup is exquisite, making it easy to drink. The noodles are thin straight noodles with a low water content, cooked firm to maintain their texture until the end. The wontons were especially delicious, filled with juicy meat rather than being skin-focused. The chashu, similar to the training shop, is a hanging chashu with little fat but a strong smoky flavor. It pairs well with beer. Every detail, including the toppings, was solid and flawless. This bowl of ramen was comforting and nostalgic. Thank you for the meal.

Tobu Tojo Line Oyama Station is famous for its bustling Happy Road shopping street, but a little off from the shopping street and close to the station is the ramen restaurant called Shina Soba Osada. I lined up before opening and was the 8th in line, which allowed me to enter on the first round. I ordered the Chashu Wonton Men for 1,400 yen and the Lurou Fan for 300 yen. The thin noodles were easy to slurp and had a great texture, while the soup was based on a soy sauce broth with dried fish flavor. Although the soup was slightly thin, I was able to adjust the taste with the provided condiments halfway through. The Chashu and Wonton were excellent, with the thick-cut pork Chashu providing a satisfying bite. Despite being a bit pricey, I highly recommend the Chashu Wonton. The Lurou Fan had a generous portion. The service was good, and the atmosphere of the restaurant was pleasant. There were 13 seats in total, including 5 counter seats and 2 tables for 4 people each.

The atmosphere inside the restaurant was like a hidden gem, bright, with a few table seats and counter seats, making it easy for families to visit. First, the small rice and char siu arrived, and then the Chinese soba appeared. The soup had a beautiful color typical of soy sauce ramen, with just the right amount of oil floating on top. The amount of oil in the soup was personally to my liking. The noodles were well-coated in the soup and tasted amazing. It seemed like there were about two servings of noodles. It was a satisfying amount. As I left, the staff thanked me with a big smile, and I was able to leave feeling content. Next time, I will go try the wonton!

I visited the restaurant on my day off after a night shift. It was actually my second time coming here, as the first time they unexpectedly closed, leaving me disappointed. But today, I was determined to finally try their famous Char Siu and Wonton noodles. The aroma from the restaurant was enticing even from outside. The other day, I decided to visit the restaurant without checking Twitter first, but unfortunately, the owner was feeling unwell and the boiler was broken so they were closed. Today, I decided to try again for the evening service, bringing a friend along. I introduced the restaurant with great enthusiasm, sparking interest in my friend who had never heard of Oyama before. The Char Siu was thickly sliced and there were about 5 pieces of Wantan, which were very soft and melty! The soup was a nostalgic and comforting flavor that made me feel at ease! The noodles were thin and easy to slurp! It's no wonder they are nominated as one of the top 100 restaurants on Tabelog for their deliciousness!
