Arrived at 12:30 on a weekday. There were 2 people ahead of me. I ordered the Wonton Shoyu Ramen for 950 yen. The beautiful rare chashu and thin noodles looked delicious. When I tasted the soup, I could strongly feel the clear umami of bonito and dried fish, followed by the rich flavor of chicken broth with a strong taste of animal stock. The soy sauce seasoning and scallion oil matched the soup well and tasted delicious. The noodles were medium-thin with a low water content, giving a chewy texture and a nice wheat flavor when bitten into. I enjoyed the combination of the soup, scallion oil, and noodles, which suited my taste perfectly. The rare chashu was especially delicious, with a soft texture unique to rare chashu and a direct taste of the meat's umami. Although there are many delicious ramen shops in Hachioji, this one is my favorite. The price of 950 yen also offers great value. I look forward to trying the Chashu Shio Ramen next time. However, the turnover was fast, so I was able to enter the restaurant in about 20 minutes! There is no parking lot for cars, but many customers on bicycles or motorcycles were parked in front of the store. The interior of the store has only a counter with 12 seats. After buying a meal ticket, a cheerful staff member will guide you to an available seat. I ordered the classic special soy sauce ramen and menma. The rice bowl dishes looked delicious, but they were sold out on that day, so I gave up. I had imagined a clear soy sauce-based taste, but the soup had a strong umami from the oil. The wonton in the special ramen enhanced the Chinese flavor. It was very delicious.

The noodles were firm and had a smooth texture. The special ramen came with 2 slices of slow-cooked chashu, 3 wontons, 1 flavored egg, thick menma, and green onions. For 1000 yen, the generous toppings of chashu, wontons, and flavored egg made it a great deal. I finished every last bit.

Hachioji, a place I rarely visit, about a 10-minute walk from the station through an underground passage, and even right after opening there's already a line here! Why have ramen on a hot day? Because they have a special cold ramen that you can only get now. First, the beautiful presentation: neatly arranged noodles, pink-colored chashu, purple onions, finely sliced shiso leaves, and seaweed - all rare for ramen! The soup is a clear and delicious light salt broth with a strong chicken base and hints of bonito flakes and kelp. I stopped by #MenemiKozuma in Hachioji while running errands in the area. They only serve lunch on weekends and holidays from 11am to 4pm, but surprisingly it was quite crowded even after 3pm. It was my first time there, so I ordered their signature dish, the Special Soy Sauce Ramen. The special version comes with 2 slices of chashu, 3 wontons, and 1 seasoned egg as additional toppings. The regular Soy Sauce Ramen without extra toppings is priced at a reasonable ¥700. The clear, brownish broth made from blending chicken and bonito stock with soy sauce was delicious. The thin slices of chashu, cooked at low temperatures, wrapped around the medium-thick straight noodles made every bite even more enjoyable. Unfortunately, they had run out of rice dishes by the time I arrived late, so I recommend going a bit earlier next time. ☝️
