On Christmas Eve, I decided to avoid the crowded city center and went to Tagano for a special meal. They have a system where you can get a ticket and wait in line using a QR code on your smartphone. However, it didn't seem to work very well. I ordered the special Awakuni salt ramen (A) for 1,150 yen plus topping of chashu for 400 yen. The soup was a slightly lighter amber color with thin noodles. The special toppings included seasoned egg, chashu, menma, and extra seaweed, which I topped with more chashu. The noodles had a nice firm texture and the soup had a delicate flavor with the richness of dashi, saltiness, and hints of chili pepper, yuzu, and sesame. The toppings were well-balanced and didn't overpower the overall taste. Despite having so many toppings, the bowl was refined and elegant. It was a truly impressive meal. Thank you.

If you register with LINE, you will receive a notification when it's your turn. The restaurant has a traditional feel but the system is quite high-tech. They offer various types of ramen such as Chinese-style ramen, salt ramen, tantanmen, and tsukemen, all of which have won numerous awards. I ordered the classic special Chinese-style ramen this time. It was a simple yet delicious bowl of ramen with a great overall balance that was enjoyable until the last sip of soup. However, I had to wait quite a while as I received my ticket around 11:15 AM on a holiday and didn't get to eat until 2 PM, so it might be challenging to revisit for salt ramen or tsukemen.

I was busy and hadn't been able to go for 3 months. They were selling Tagano ramen at the supermarket, but after trying it, I still prefer the tsukemen at the restaurant! The Tonkotsu Kamo Tsukemen costs ¥850 and the amount of noodles may feel a little too much for women. I always enjoy it deliciously.

After a long time, I visited the restaurant. I arrived at the reception at 13:45, got called around 14:00, and was seated at 14:10. I usually never tried the "Special Spicy Sesame Soba for 1250 yen + Large Serving for 150 yen" because the Chinese soba and dipping soba were too delicious. But this time, I decided to order it. The appearance was impressive, but when I tasted it... it was delicious. Just as I thought, it was delicious. It wasn't as spicy as it looked, but I ended up sweating a lot towards the end. I visited my favorite ramen restaurant after a year and five months. My son wanted to eat there again, so he woke up early in the morning to get a ticket. He even bought a ticket for a large serving because it had been a while since we last visited. I was surprised by the portion size! I ordered duck ramen with extra toppings and a large serving of noodles. It was a lot of food, but I managed to finish it, although I was too full for dinner later. The owner's wife was surprised that I ordered a large serving, as it was the first time she had seen me do so. My son had a large serving of Chinese soba and a pork bowl with a huge amount of toppings. The noodles and soup at this restaurant are my favorite, made from whole grain flour that includes bran and germ, which is rich in iron, vitamin B1, and dietary fiber. I doubt I will find a better ramen place than this one. However, I think I'll stick to regular serving sizes next time, as the balance between noodles and soup is better that way. (laughs)

Today's special is Goma Spicy. It's another hot day. The special Goma Spicy soba for ¥1250 is essentially tantanmen. The dipping soba was also delicious, so I have high expectations. The Goma Spicy is prepared by blending it directly in a bowl with a hand blender. It comes with the usual toppings (soft-boiled egg, chashu, menma, nori), as well as diced chashu, onions, and green onions. Today, the pork thigh chashu was surprisingly large. The soup is based on seafood broth with a strong sesame sauce and sesame flavor. It's quite spicy too. It's not exactly authentic tantanmen, but more of a Togano original tantanmen. It's addictive. The chewy medium-thick noodles go well with the soup, and you can't stop eating. After finishing everything, the soup with onions and nuts has a nice texture and it's delicious too. I couldn't help but finish it all. Amazing, everything here is delicious. I thought I had tried all of Togano's menu, but oh, there's still the Hot and Sour Soup Noodles left. I'll try that next time.

I have visited this ramen shop twice before and enjoyed the high level of their Chinese ramen, so this time I decided to try their salt ramen. The customer next to me seemed like a regular, as they expertly sprinkled salt on the char siu that was served first and ate it cold. It was my third visit and I still didn't quite understand the proper way to eat at this shop, so I couldn't help but smile at myself. I opted for a regular size (1,250 yen) instead of a large because I knew I couldn't finish it all when the pyramid-like mound of noodles arrived. However, my worries were unfounded as I managed to finish it all. The first bite, with the noodles dipped in the sauce, left me in awe of the rich umami flavor. The soup had a well-balanced saltiness, and although there was Aokishima salt on the table, there was no need to add any. The dipping sauce was so delicious that there was no need for any flavor adjustments. I noticed the Michelin emblem in front of me, indicating that this shop had been awarded a Michelin star in 2015 and 2016. Despite the years that have passed since the award, they have not compromised on quality, maintaining a level that is truly like a national treasure.

They also sell frozen ramen for takeout, but you have to buy it when getting the morning ticket, as it might sell out. Well, I probably won't line up again.

I have tried to visit many times but always missed out due to time constraints and other reasons. I was fortunate to have a second chance at this rare and precious opportunity. I think it's pointless to go into specifics about the ramen review now, that's how close to perfection the soy sauce ramen was. The soup had a strong and elegant seafood aroma without cloudiness, complemented by the scent of soy sauce. The tender texture of the chashu soaked in the soup was delightful. Everything was done exceptionally well. The soup is like a cultural heritage, something I hope to pass down to the next generation.

Today I had the salt tsukemen. Even though summer should be ending according to the calendar, there is still a heatstroke alert in effect today. The special Awa Country salt tsukemen for ¥1200 was delicious. The warm version was also tasty, but this one was just as good. The dipping sauce was similar to ramen soup, with a refreshing and clear taste. It was rich and piping hot, which paired well with the Tagano noodles. The pork and duck were good, but I think I prefer this one. They also added sesame when serving it warm, just like the other one. I chose the special A today with the flavored egg, but it was a bit bland and the flavor didn't penetrate well. For tsukemen, the smoked egg might be better. They thanked me for coming regularly recently. I was happy that they remembered me, as I've been coming every week. Next time, I'll try the sesame spicy one.

When it comes to Chuka soba, Togano is one of my top 5 favorite ramen shops. It had been about a year since my last visit. I was expecting the usual, but this time the flavor seemed stronger. I usually finish my bowl by the first or second slurp, but this time I was almost at the end when I noticed the intensity. Maybe the soup had been getting richer as it simmered longer, or perhaps they adjusted the saltiness for the hot weather? If this is the new norm, it might start resembling the heavy-flavored ramen shops nowadays. I hope they return to their previous gentle taste. I remember the shop's philosophy was to aim for a ramen that you could eat every day, but today's flavor seemed to deviate from that. I usually finish every drop of soup, but this time I left some behind when it got too spicy. The chashu used to be thick and firm, but this time it was thin and fell apart easily when picked up with chopsticks. I hope they go back to the way it was before. Come to think of it, maybe the recent closure due to COVID-19 had an impact, as I also had a case where things didn't taste right after recovering and it took about two weeks to return to normal. It's still delicious, but this time it felt quite different from the usual. I hope it goes back to normal next time I visit.

So today, I had the Awakuni salt ramen for ¥900 with a special topping of smoked egg for an additional ¥300. The salt used is Awakuni Island sea salt from Okinawa, which is also available on the table. As soon as I took a sip of the soup, I couldn't help but say "delicious" once again. The light and refreshing soup with a hint of spiciness from red pepper and a rich flavor from Hinai-jidori chicken broth was truly delightful. The noodles seemed different this time, with wheat germ included according to the description. I'm not entirely sure about the difference, but the noodles had a nice wheat aroma and were delicious. The special topping, as usual, was the smoked egg served separately. It had a strong smoky flavor, so I didn't want it to overpower the ramen. It was also delicious. I felt like having a beer with this meal. The chashu today was exceptionally tender and tasty. The salt ramen was really good. All that's left is to try the spicy sesame ramen and the salt tsukemen to complete the experience.

I visited around 2:20 pm on a weekday and managed to get the last ticket as the final customer. After a 20-minute wait, I entered and received my bowl within 10 minutes. The large portion and special toppings were impressive. The soup had a refreshing umami flavor from salt sourced from Aguni Island in Okinawa, with a hint of sweetness. The noodles, made with seaweed like nori, were medium-thick and had an excellent texture. They even reheated the dipping sauce halfway through and offered a complimentary addition of ground sesame seeds, which added a mild flavor variation. The chashu topping was juicy with just the right thickness. The chili pepper added a spicy kick, providing a nice contrast to the mild taste. With a diverse menu, I'm curious to try other items as well. Due to its popularity, getting a ticket is necessary, but I highly recommend visiting this place.
