Hakodate is a town that I often visit. While the best time to visit is probably the end of April to the beginning of May when the cherry blossoms at Goryokaku are in full bloom, I also have a soft spot for Hakodate in the winter when tourist numbers drop and you can experience the everyday atmosphere of the town. This time, I visited Ricoruma for the second time after a gap of three years. The chef at Ricoruma is known for his commitment to using high-quality ingredients, and to maintain this standard, the restaurant has limited reservations to four people per day starting from June 2022. The restaurant is quite spacious, allowing for a relaxed dining experience. The dishes feature seasonal ingredients from the Hakodate area, prepared in a way that enhances the natural flavors without overdoing it. Ricoruma boasts a wine selection of around 250 varieties, including a rich stock of Hokkaido wines. The wine cellar is impressive, with a walk-in cellar and built-in cellars on the walls, as well as three box-shaped cellars. The extensive wine collection reflects the passion the restaurant has for wine. While wine pairing is currently not offered, we enjoyed selecting our wines with the help of the knowledgeable sommelier. The dining experience lasted over three hours, which felt a bit long, but the exclusive and relaxed atmosphere of dining with only four people made us forget the hustle and bustle of daily life. The meal allowed us to fully appreciate the terroir of southern Hokkaido. It was a delightful experience. I was lucky to be able to make a reservation by chance. The result was fantastic. I will definitely come back. First of all, the concept of using local ingredients is great. The wine list is extensive. (We opted for wine by the glass due to the number of people and each one was delicious). The kitchen is run by the husband alone, so the dishes are served leisurely. The atmosphere of the restaurant is nice, allowing for a relaxed and enjoyable time. The dishes all show attention to detail. The tomato soup appetizer had a perfect balance of acidity, sweetness, and oil, with tomato jelly on top. The homemade Kitara with snow crab was outstanding. The fried conger eel with basil cucumber had a harmonious combination of sauce and eel. The tuna cutlet had a crispy coating but the tuna inside remained cold, resulting in a melt-in-your-mouth texture. The abalone with caper sauce had a firm texture with a refreshing caper and butter sauce, along with tender Ezo abalone. The porcini mushroom risotto was intensely flavorful. The ragu sauce pasta with eggplant was comforting, with a strong pork umami flavor. The roast lamb from Setana had a distinct lamb flavor without any gaminess. The perfectly cooked roast lamb was so delicious that we ended up eating too much. Finally, the cheese or dessert options were great. The hospitality, flavors, and atmosphere make me want to come back again.

I miraculously managed to secure a reservation at the top-rated restaurant in Hakodate on Tabelog, Enoteca La Ricorma! I enjoyed a course meal for 13,000 yen featuring dishes made with locally sourced ingredients. Despite going with a big appetite, I only had to cut back a bit on the main meat dish! The hospitality of the owner and staff was exceptional, as they bowed until the taxi was out of sight when we left. I would definitely love to visit again if given the chance.

I went on a trip to Hakodate because I was able to make a reservation✈️ Overall, the portions were quite generous, so I think women would be more satisfied if they ordered everything in smaller sizes in advance. We were able to enjoy delicious Italian cuisine made with Hokkaido ingredients. The service was also excellent, with very polite and attentive staff. I highly recommend this place to anyone visiting Hakodate!!

I originally planned to stay in Hakodate for 2 nights, but I was able to secure a reservation at Enoteca for dinner on the 3rd day. It was a restaurant I really wanted to visit, so I extended my stay to 3 nights. It was lucky to get a reservation during the busy Obon period. Enoteca is a restaurant where reservations are limited to 4 people per meal. On the day of our reservation at 6:30 pm, we visited with a family and friends, totaling 4 people. The restaurant is run by a husband and wife in a spacious house, and we had the entire place to ourselves, which felt luxurious in the evening of Hakodate. 1. Niseko LaLaLa Farm Fruit Tomato Soup 2. Iwanai Purple Sea Urchin Cold Pasta 3. Matsumae Natural Bluefin Tuna Cutlet 4. Esashi Anago Fritter with Cucumber and Basil 5. Hakodate Ezo Awabi 6. Ueno Natural Red Seabream Risotto 7. Funkawan Snow Crab Tomato Sauce Pasta 8. Setana Blessed Farm Pasture-Raised Black Pork Roast Dessert or Today's Cheese 9. Today's Crepe and Daiku Yogurt Gelato Assortment The food was delicious, especially the roasted black pork which was juicy and flavorful. The desserts, crepe, and yogurt gelato were also very tasty. The kind wife even offered my son more bread multiple times, as he wanted to try everything. The homemade bread and butter were also praised. We were able to talk to the chef before leaving, and both the chef and his wife were lovely and gracious. Despite the weather not being ideal due to a typhoon, our visit to Hakodate was made memorable thanks to Enoteca. We look forward to visiting again in the future. Thank you for the wonderful meal.

I was recommended to visit Ricorma, an Italian restaurant, by the Madame of a French restaurant that I have always loved. It was my long-awaited first visit. The restaurant opened in 2003 and moved to its current location in 2007, already 17 years in operation. Both the chef and the Madame are sommeliers and wine enthusiasts, which is evident in the restaurant's elegant atmosphere and wine cellar. The wine list is impressive. They only accommodate up to 4 guests at a time, so it's run by the couple alone. Despite being veterans of over 20 years, both of them are humble and kind. It was a type of hospitality that you don't often see in Tokyo, and I really appreciated it. I made a dinner reservation for 7:00 pm, and that night turned out to be a luxurious dinner where a family of three had the entire main dining table to themselves. There was another guest dining at a table in the back, but they were so quiet that I didn't even notice them. The 13,500 yen course consisted of 9 dishes, focusing on quality ingredients with many pasta options and a simple yet clear composition, which suited my family's taste. The truffle marinated in thick slices had a texture similar to sea bream, served with dashi jelly. The cherry salmon had its skin removed, coated with herb breadcrumbs on one side and cooked perfectly, with a crispy skin. The cold pasta with snow crab had a delightful aroma of hand-cut chitarra pasta and olive oil, complementing the sweetness of the snow crab. The asparagus velouté, meaning smooth in Italian, was served with onsen tamago, although I personally prefer it chilled rather than lukewarm. The Ezo abalone was incredibly tender and delicious, accompanied by abalone broth and caper sauce. The Kinmedai risotto was delightful when served hot. The pasta with button shrimp, with live shrimp deep-fried and combined with tomato sauce, was also excellent, although I prefer it served hot. The Oguni beef roast was outstanding, with a choice of a 100g or a smaller 30g portion. It was not greasy, tender, and juicy. The desserts and bread were equally delicious with no compromises. The wine selection was excellent, and they often feature wines from the local winery in Hakodate, Norakura. The 3-hour dinner was a satisfying and memorable experience.

I visited the Italian restaurant "Enoteca La Ricorma" located in Hakodate, which is also chosen as one of the top three night views in Japan. The restaurant is a hidden gem with a stylish interior in brown tones. The menu included dishes such as Hakodate-grown mushroom soup, marinated cherry salmon with aromatic vegetables, chilled pasta with local snow crab, fried Chika fish with local kale, and more. One highlight was the King Shitake Mushroom Risotto made with Nanatsuboshi rice, which had a rich flavor. Originally, they earned one Michelin star in the 2017 Michelin Guide. The location is about a 15-minute taxi ride from Hakodate Station. The restaurant is a simple house on a spacious property. The interior is unified with dim lighting. It's surprisingly spacious, so you won't be bothered by other customers. They only allow up to 2 groups of 4 people each day, making it a rare and exclusive dining experience. The service from the Madam was polite and attentive. The food shows a dedication to quality ingredients and careful preparation. Everything was delicious with no misses. Although located in Hokkaido, I believe it's on a national level. Highly recommended Italian restaurant. The restaurant is a single-story house located about a 15-minute drive from Hakodate Station and a 20-minute drive from Hakodate Airport. The interior features a calm atmosphere with a dark brown color scheme. The restaurant offers a single course menu starting at ¥15,000, focusing on using fresh, seasonal ingredients from Hokkaido, particularly from the Hakodate area. The chef's motto is to cook dishes that they would enjoy eating themselves. The cuisine is simple, enhancing the natural flavors of the ingredients. The inconspicuous, inorganic appearance with a black-themed decor, combined with the fact that it was a snowy night for the first visit, made for an interesting experience. We arrived safely following the navigation system. The spacious interior only had two groups, with a maximum of two groups per day it seems. We were able to leisurely enjoy our meal over a 3-hour period from entering to leaving. Personally, I was impressed by the homemade bread with a wheat aroma, fresh olives, casco soup, and risotto. The young chef seems to cook in a way that gently and moistly brings out the flavor of the ingredients, as everything was delicious. Hakodate, Hokkaido "Enoteca La Ricolma" is an Italian restaurant where you can enjoy delicious local ingredients near Hakodate. On this day, we enjoyed dishes such as "Deep-Fried Conger Eel with Cucumber" made with conger eel from Kamiiso in western Hakodate, and "Tuna Cutlet" made with tuna from Toi in Hokkaido. The "Roasted Fillet of Oguni Beef" from Oguni Ranch in Hokuto was also juicy and perfectly cooked. The Matsue Purple Sea Urchin Cold Capellini was also delicious. The high-quality Italian dishes were truly a delight. The wines we tried included NORA Blanc 2019 and Hagaikuburan 2020 from Hokkaido, as well as Kaze 2017 from Kamihoro Wine in Iwamizawa, Hokkaido. Overall, it was a fantastic dining experience with dishes like Marinated Natural Tiger Pufferfish from Kamiiso, Tuna Cutlet with Red Wine and Tomato Sauce, and Roasted Fillet of Oguni Beef. The Yogurt Gelato, White Chocolate and Nut Choux Cream, and Pudding were also delightful.

There was a wonderful Italian restaurant in Hakodate. They used carefully selected local ingredients from Hakodate and Kita-ku, and the dishes were very elaborate. I will write my impressions, but it was a restaurant that I really liked. The marinated natural tiger pufferfish from Kamiiso, Kita-ku had a good balance of the chewy texture of the tiger pufferfish and the refreshing taste of the jelly. The breaded natural bluefin tuna from Toi was extremely delicious. It disappeared in no time (because it was so delicious). The cold dish of purple sea urchin from Shiriuchi (pasta) also had a great combination of the rich flavor of the purple sea urchin and the chewy yet light texture of the homemade pasta. The fried basil and cucumber with eel from Kamiiso, Kita-ku was also delicious. The risotto with abalone from Hakodate, natural red snapper from Kamiiso, and buna shimeji mushrooms from Komagatake (Nanatsuboshi) were excellent. The pasta dish with homemade salsiccia and eggplant from Niseko "LaLaLa Farm" was also very tasty. The roast beef from Oguni Farm in Kita-ku was very tender and to my liking. The bread from Akai River in Morimachi, made by Obaba Bakery with natural yeast, was not only fluffy but also delicious with butter that I couldn't help but eat a lot. For dessert, there was white chocolate and nut choux cream and today's gelato.

A top-notch private restaurant with exceptional hospitality. They use local ingredients to the fullest. Everything was delicious, but the sea urchin, pork, and conger eel were particularly outstanding. The quality of the ingredients must be superb, but the meticulous cooking and finishing touches result in unbeatable flavors. Hats off to Hakodate. The red and white wines from the Norage Winery have a strong acidity, but offer a fantastic smoothness and flavor. This restaurant is the epitome of local production and consumption, and I will definitely come back. It's worth coming all the way to Hakodate for this place.

Traveling to eat local cuisine...it's all about the food, and Hakodate is the place to be. Atmosphere: A surprising single house with a room dedicated only to wine. Despite having multiple tables, there were only two groups dining, giving it a luxurious feel like a guesthouse. Ordering process: Reservations can be made on their website starting from the 1st of the previous month at 10:00 for the entire following month. Reservations are only accepted via phone, and it may take several attempts to get through. Wine is mainly served by the bottle, with no pairing options available. Customer base, crowd: Only two groups were dining during our visit. Duration: Started at 18:30, with dishes arriving every 15 minutes. Dessert was served at 21:08. Service: The kitchen and floor were likely managed by a couple, so they do not accommodate large groups or rushed customers. Menu: Priced at ¥13000, the recommended course is the only option available, with allergies and preferences asked in advance. A wide selection of Hokkaido wines and international options were offered, with a choice of cheese or dessert for the final course, and coffee, tea, or herbal tea to accompany it. Parking: Ample parking space available. Food: Generous portions with a focus on seafood and bonito meat, all delicious. The local "Kuma Cola" wine was a favorite, and we received furikake as a souvenir. The combination of portion size, atmosphere, and quality makes it a great value.

I was able to visit a restaurant that is difficult to book, with reservations limited to almost one group per day. The head chef, who is among the top in Japan, was mentioned, so I had high expectations for this strict and perfectionist restaurant. The precision and high quality of the dishes made me feel the chef's meticulousness. The dishes were simple but satisfying. I was surprised by the efficient pace of the meal, which was better than I had imagined. I could sense the tremendous mental strength behind it all. The service was impeccable as well. This restaurant, with its valuable Hokkaido wines and high standards, offers a wonderful and comfortable dining experience.

The scallop tartare with cherry salmon was excellent. The monkfish in cocotte was the best I've ever had. Despite being a soft fish, the flesh was firm and delicious around the bones. The abalone risotto and the golden eye snapper pasta were also very tasty.

I regret not visiting this stylish restaurant in Tomioka-cho, as I usually stick to drinking in Honcho, Hakodate. The exterior of the restaurant is a trendy house, while the interior is spacious, beautiful, and tranquil. The food is incredibly delicious. In December, I visited the restaurant twice, once in the beginning of the month and once at the end. The food was delicious without fail each time. The menu is usually the same, but if you keep eating it regularly, you can notice slight differences. In winter, the white roe of cod and bluefin tuna are definitely the best. The fried live conger eel is also delicious. They will reopen on January 10th next year (but it was already fully booked when I checked). The omakase course is probably around 13,000 yen.

During the long weekend, I visited Hakodate to conquer all the Michelin-starred Italian restaurants in Hokkaido. "Enoteca La Riccolma" was my first visit. They offer only one course priced at ¥10,900 (excluding tax and service charge). The ingredients are locally sourced, with the origin clearly stated for each dish except for dessert (refer to the menu photo). The high-ceilinged interior with only three tables felt very luxurious. The restaurant is run by a husband and wife team. I tried the "Operator," a wine-based cocktail, which was delicious. The dishes included a paprika and cheese mousse with a strong paprika flavor and mustard seeds as an accent. The grilled whitefish with creamy roe was crispy on the outside and tender inside, served with a tomato and red wine sauce. The deep-fried live conger eel had a spicy seasoning in the batter, and the eel was fluffy, perfect with a squeeze of lemon. The sautéed Ezo abalone was a luxurious whole piece, but the lentil sauce was a bit monotonous and might get a bit boring. The bread was made with levain natural yeast, slightly sour with a unique aroma reminiscent of dog food, which I personally enjoyed. The butter was a French fermented butter with a cheese-like flavor. The Bolognese pasta with black pork offal and brussels sprouts had a strong offal smell that might divide opinions. The slow-cooked black wagyu roast was surprisingly tender and flavorful. Unfortunately, the dessert, coffee gelato and tiramisu crepe, was quite disappointing and seemed ordinary. Overall, the dishes were delicious and reassuring with a focus on local ingredients, although lacking in extravagance.

The menu has changed, with prices ranging from 10,900 yen to 13,000 yen excluding tax. Reservations must be made at least two days in advance. Open at 6:00 PM or 8:30 PM every Tuesday, with occasional irregular holidays. Non-smoking. The sea bream cooked in a cocotte and the porcini soup with sea bream have great textures and delicious flavors. There are two pasta options, both tasty. The braised cheek of black-haired wagyu by Oguni-san has an incredible texture for a braised dish. With Tanizawa closed, this is the go-to place for foodies in Hakodate.
