On the final day of the Sapporo expedition, after being disappointed by many miso ramen shops in Sapporo, I visited a legendary shop on a weekday afternoon. I arrived around 10:45, and there was already one customer waiting. The shop opened promptly at 11:00, and I ordered a miso ramen for 980 yen and a large fried rice for 950 yen from the ticket machine near the entrance. The spacious restaurant quickly filled up with customers. The miso ramen I received looked different from any I had tried before. The soup had a rich aroma and a thick layer of lard on top, with a deep and flavorful taste. The noodles were curly and yellow, the strongest I had ever encountered. They paired perfectly with the rich and salty soup. The toppings included diced pork, green onions, bamboo shoots, and stir-fried bean sprouts, with the standout being the diced pork that blended well with the soup. I also tried the fried rice, which was moist and delicious. Finally, I found the best miso ramen in Sapporo, and it was a perfect ending to my miso ramen journey. I highly recommend it.

The restaurant where I first became a ramen lover. I have been going there for over 30 years, even before it moved. It had been a while since my last visit, but it was still exceptional. There was a line of 10 people 10 minutes before opening, and another 10 people by the time it opened. When I left, the restaurant was full and there was a line outside. As always. Today, I had the miso chashu with a staff meal rice. I started with the chashu ramen. The extremely hot soup covered with a layer of lard was uniquely rich and salty. How many slices of chashu were there? Too many! The balance between lean and fatty parts of the pork was just right. But still too many slices. The staff meal rice didn't have detailed explanation on the menu. It was basically chashu ramen with mayonnaise on rice. More chashu... The deliciousness of the bamboo shoots stood out. Despite trying various ramen places, this one always brings me back. Thank you for the meal.

It was Thursday afternoon around 1:30. There were four people waiting in line inside the restaurant. We waited for about 10 minutes. We then took a shared bicycle to Ramenya Ayami, which is said to be run by the eldest son of Nakajima Junren, the previous owner. This is the first of the five shops that were spun off from Sumire. I have already tried "Ojima," "Mitsun Toraji," and "Sato" in the Kanto region. The soup at Sumire restaurants is known for being hot and rich with lard. Some miso enthusiasts may not like it, but I personally enjoy the flavor. However, the saltiness is strong and I couldn't finish the soup. The restaurant is clean and the staff are friendly. When it comes to Sapporo, it's all about miso ramen. And when it comes to miso ramen, it's all about Jun Sumi (Junren, Sumire). This place is the mecca of Jun Sumi style, a must-mention when talking about Sapporo miso ramen. It's about a 20-minute train ride from Sapporo Station. We arrived around 1 pm on a holiday, lined up, and reached the food ticket machine to make a purchase. We got our bowls in about 30 minutes. First, take a sip of the soup. The incredibly rich miso flavor hits you like no other, with thick lard adding depth, creating a warm, ginger-scented oil film that warms you up. Next, the noodles. The chewy yellow curly noodles, essential to the miso ramen equation. Add the melted butter topping for an even more impactful flavor, and of course, the corn pairs perfectly. Before we knew it, we had finished it all. Our faces might be swollen the next day, but if you've come this far, of course you're going to finish it. It's just so delicious. Recently, there are a lot of pure and clear soup noodle shops. I have tried various places, but I wanted to go back to basics and reaffirm the original taste. So, I visited this place. It was around 2 p.m. on a holiday, and there was a line outside. It took about an hour from lining up to getting the food. Of course, the must-order item is miso ramen. And I shared a fried rice with my partner. Ahh, this is it. This ramen has no peculiar taste or off-flavors, and it's incredibly deep in flavor that spreads throughout the mouth. I don't usually eat oily food, but the rich oil coating the soft vegetables is amazing. It's quite a large portion, but I finished it without any problems! Of course, the fried rice too. We shared the fried rice, and it was almost like having two bowls of rice. But the overwhelming deliciousness made us finish it in no time. The only thing is that we didn't get the soup that came with the fried rice. Maybe they forgot to give it to us? Well, it's not a problem since we have the ramen soup. I truly felt the greatness of Junren's food once again! It's amazing. I will definitely come back!

Arrived on Sunday at noon. The line was from inside the restaurant to the entrance. I waited in line. I ordered the Ajitama Shoyu Ramen with firm noodles, and also the Shoyu Ramen with firm noodles, along with fried rice. The noodles were originally firm, but they were made even firmer for me. They stayed firm until I finished eating. The charred vegetables added a nice smoky flavor to the shoyu soup. I love both the noodles and the soup. By the time I finished eating, the line had extended outside the restaurant.

The second half of the wait was not too bad as there were waiting seats available. This is a popular and long-standing restaurant that is a regular spot for 100 people on Tabelog, and is essential for discussing Sapporo miso ramen!! I took the subway to get there!! It's about a 10-minute walk from the station. I arrived on a Saturday evening around 5:15 PM and there were a few groups waiting, but we were seated right away. There were many families there, probably because it was in the evening. There were both counter seats and table seats available. I ordered the miso ramen for 980 yen. Surprisingly, there were also people ordering soy sauce ramen. They also offer sets with fried rice and a staff meal bowl. As for the taste, the rich miso soup with a good balance of lard makes it a classic Sapporo miso ramen. It also has a bit of spiciness to it. I couldn't help but slurp it all up. The curly egg noodles were delicious, and the chashu was tender with minced meat in it, making it extremely tasty. I was extremely satisfied!!! If you come to Sapporo, I recommend checking out Junren at least once!! I will definitely come back again!

The image appears quite red, but this is likely due to the thick layer of lard on the soup causing a change in color. In reality, the color was more natural. The soup was too hot to drink, so I had to wait for it to cool down. It took a long time and I couldn't finish it. The soup was also too strong in flavor, which is why I left some of it.

'Sapporo Junren' is next to Soma Shrine, a 5-minute walk from Sumikawa Station on the Sapporo Municipal Subway Namboku Line. The history of Junren is long, so let's skip that (laughs). This was the first stop on my solo trip to Hokkaido! It was quite a distance to travel from New Chitose Airport to Sapporo Station and then transfer to the subway to Sumikawa Station. I arrived at the shop around 3:30 pm, and almost 90% of the seats were taken... Seriously? On a weekday, and I missed lunchtime, what would it be like on weekends and holidays? Feeling a bit of fear, I passed through the curtain with the two characters 'Junren' written on it. I arrived at the shop and purchased a ramen ticket from the ticket machine. I bought the miso ramen (regular size). After handing in the ticket, I met the ramen in about 10 minutes. I usually order thin Hakata-style tonkotsu ramen, so the wait felt long, but I guess this is normal! The shiny film of oil... This is the Junren I've dreamt of... I took a sip of the soup... Rich! And hot enough to burn! The oil film acts as a lid to keep the soup from cooling down, a clever idea unique to cold regions! It seems there are both rich and light versions of miso ramen, and this shop seems to be the rich version. As I'm not very familiar with miso ramen shops, I'm not sure, but despite the oil film, it was very easy to eat, with the richness of miso and the crunchy toppings being exceptional. And the noodles are, of course, Morisumi Seimen! A Hokkaido classic! Hokkaido. Sapporo Junren, a must-visit famous shop that exceeded my expectations with its incredibly delicious miso ramen! The soup was thick with a layer of hot lard on top (be careful of burns), rich miso flavor with a strong garlic punch. The noodles were yellow curly noodles from Morizumi Seimen. Toppings included thinly sliced chashu, soft bean sprouts, and green onions.

I visited the restaurant on a Saturday night, so it was crowded. I ordered miso ramen and a side dish bowl. It took about 40 minutes from entering the restaurant to getting my food. The soup had a hot layer of lard on top, so it remained hot until the end! It's what you would call a rich miso ramen flavor. However, at this level, you could probably get a cup ramen from a convenience store for 350 yen that tastes similar. The onions were limp and didn't add much to the texture. They could have added more onions and bean sprouts. The price was also high. I'm not sure if the miso ramen for 900 yen is worth it. I didn't order it this time, but the fried rice for 800 yen seems too expensive! Well, they do offer a half fried rice set for an additional 400 yen, so many customers might go for that. In conclusion, it's definitely tasty ramen, but it has a bit of an outdated taste and the prices are a bit high. If you want to try a nostalgic Showa era miso ramen, then why not give it a try?
