"MEN-EIJI HIRAGISHI BASE"さん's recent little craze is "tsukemen" (^ω^) ... I visited here after a long time in search of delicious "tsukemen". I arrived before the opening time of 11:00 on Saturday afternoon. Surprisingly, there was no long line, and I was able to enter smoothly (*´ω`). The purpose of tsukemen has 3 types: - "TsukeBUTO" - "Spicy TsukeBUTO" - "TsukeBUTO Fish Curry" Each type has options for regular, large, and extra-large noodle portions. I chose the "Spicy TsukeBUTO (Large @ 300g) @ 1,100 yen". I wanted something spicy, so I chose this one. The dipping sauce is based on tonkotsu and has a rich flavor (^ω^) ... The seafood flavor is also well pronounced and delicious. The noodles have a firm texture, and they mix well with the dipping sauce! The burdock root, as a substitute for bamboo shoots, also has a nice flavor. By the way, the spiciness is not just mildly spicy, but rather quite spicy with a strong impact!! It turned out just as I expected and I enjoyed it thoroughly! It's been a while since I visited, but the main store here always maintains a high level of quality no matter what you order. The noodles are homemade using six types of wheat from Tokachi, and most of the other ingredients are also from Hokkaido. It's not your typical Sapporo ramen, but a very high-quality ramen that showcases Hokkaido ingredients. It has a gentle flavor without any artificial seasonings, and the use of dashi and yuzu jelly keeps it interesting until the last bite. I finished it all in one go.

Sapporo Junren, a famous restaurant in Sapporo with 100 regular customers on Tabelog and franchise expansion, is located a 15-minute walk away or a short drive. I visited on a Saturday around 5:50 pm, with no customers initially but a few families and individuals arriving after me. The restaurant is located in a residential area, which was surprising but easily found with Google Maps. They have a parking lot as well. I ordered the seafood pork bone soy sauce ramen for 980 yen, as it was my second stop of the night. The broth was not too heavy on the pork bone flavor, leaning more towards a bonito base. It had a strong and refreshing aroma, with a light soup that was delicious to the last drop. The seafood and yuzu jelly added a nice touch. The noodles had a good chewiness, made with wheat from Hokkaido. The char siu was unexpectedly tender and flavorful. The addition of burdock was unique but surprisingly complemented the soup well. Overall, the balance of flavors was great, and I finished the bowl feeling satisfied. The menu emphasizes the use of Hokkaido ingredients. I ordered the "BUTO Tsuke" with the large size (1,050 yen), added a flavored egg (+120 yen), and also got a chashu rice ball (200 yen) for a total of 1,370 yen. I initially planned to order the seafood pork bone soy sauce ramen, but when I saw the photo of the BUTO Tsuke, I liked how the noodles were served, so I chose that with a flavored egg topping. I also decided to try the chashu rice ball. The food arrived promptly. I took a sip of the soup and it was delicious! When I dipped the noodles in, I found them to be a bit soft and lacking in firmness. Not my favorite type of noodles. As I continued eating, I found the soup to be too strong and it became a bit overwhelming. It was quite challenging by the time I finished the noodles... However, adding the soup base helped improve the flavor. Perhaps diluting it earlier would have been better. As for the chashu rice ball, it tasted more like mixed rice and wasn't what I expected. It's not really to my liking. Overall, I would rate the taste around 3.0, but the friendly service and cleanliness of the restaurant bumped up my overall rating. Please note that this rating is subjective and the food wasn't bad. Ramen can be tricky. If I visit again, I would stick to my favorite and order the seafood pork bone soy sauce ramen. It had a strong seafood aroma but was relatively light as a seafood and pork bone broth. The noodles were medium thick and straight with a chewy texture. The seafood jelly on top added a refreshing citrus flavor as a nice accent. Overall, the ramen was consistently delicious, although it didn't stand out as exceptional. When I left, there were only two other customers in the shop, so there were plenty of empty seats.

Today, I went on a ramen walk to Minami Hiragishi Station in Sapporo. There is a restaurant here called MEN-EIJI HIRAGISHI BASE, which has been selected as one of the top 100 restaurants on Tabelog. It's about a 5-minute walk from the station. The restaurant was already full 10 minutes after opening, with a waiting time of 2 groups. You can wait inside the restaurant. I ordered the most popular fish and pork bone soy sauce ramen with seasoned egg using a food ticket. It seems like many families and groups of people come to this restaurant. Please note that there is almost no parking available at the restaurant, so be careful if you come by car. The operation in the dining area may need some improvement. I waited for about 45 minutes, but it seemed like I would be served soon. I was guided to the counter and my ramen was served. The fish-based pork bone soup was thick and creamy with a refreshing taste. There was a Japanese-style broth and yuzu jelly that added umami and a refreshing touch. It was amazing how it didn't compromise the original soup's flavor. The seasoned egg was flavorful, and there were two thinly sliced pork slices. The noodles were unique and probably the smoothest I've ever had! The smooth texture was incredible. Yeah, it was delicious. The broth had a rich seafood flavor. I could sense a bit of bitterness, maybe from dried sardines or seafood. But when mixed with the jelly, it balanced out and tasted just right. The noodles were smooth and really tasty, maybe made from whole wheat. The chashu was excellent, made from pork loin with a slightly rare texture. It had a good thickness and tenderness, truly delicious. I think adding chashu toppings is a good idea. The seasoned egg was also delicious, with a nice creamy texture and rich flavor. The scallion oil rice was tasty as well. I might have set the bar too high from the first time I tried it, but it was still delicious. I would like to try the chashu rice ball and cheese chashu rice ball next time.

I was aiming for the fish and pork bone salt ramen, but it was sold out. So I opted for the salt ramen instead. The beautiful presentation, with the jelly sitting elegantly on top, really whets the appetite. The rich soup made from pork bone and seafood, combined with the jelly and vinegar-soaked dried fish, allows for subtle flavor changes with each bite of the unique homemade straight noodles. The burdock root and chopped onions also add wonderful texture. The rare chashu pork is outstanding, almost like a high-quality ham. Overall, the value of this ramen exceeds its price. It was my first visit in a while, but they remembered our previous conversation, and despite being a very busy and popular restaurant, they were very friendly. Today, I felt like trying the maze-men rather than the ramen. My first impression of the maze-men is that it's really heavy on the garlic. They mentioned that they source locally and cook it at low temperatures for over 10 hours. The flavored egg was decently cooked. It was delicious! The green onions and chopped purple onions were a nice touch. And the burdock was tasty too!

Today, before traveling 400km from Sapporo to Kitami for work, I decided to have a meal in Sapporo. Since the lunch rush was over, I was able to enter the restaurant without waiting. Even after entering, customers continued to arrive one after another, indicating that this is a very popular shop. They offer ramen, tsukemen, and maze-soba, all of which looked delicious. I decided to indulge in a double meal today. I purchased tickets for "Bara Soba ¥980" and "TsukeBUTO Regular (230g) ¥950" at the ticket machine near the entrance. I first requested the "Bara Soba" to be prepared. It was ready in about 10 minutes. Thinly sliced pork belly chashu was neatly arranged on top of the soy sauce ramen. The noodles were homemade thin noodles made from whole grain wheat from Hokkaido, with a low water content. The soup was made from carefully extracted essence of Hokkaido pork without any chemical seasonings. It was a delicious ramen made primarily with Hokkaido ingredients. An interesting twist was the use of burdock instead of bamboo shoots. It was a long time since I had such delicious soy sauce ramen, so I finished every last drop of soup and every last bite of noodles. Even though I didn't order anything, the "TsukeBUTO Regular (230g)" was ready in about 5 minutes after finishing the ramen. They provided it at a perfect timing. The noodles were also homemade using whole grain wheat from Hokkaido, but they were thick and slippery with a higher water content, creating a nice texture. The dipping sauce was a rich seafood broth with plenty of collagen that made my lips smooth. It was another delicious tsukemen, and despite having a double meal, I was able to finish it all without losing my pace. I ended by drinking all the soup as well. It exceeded my expectations and I left very satisfied. Both dishes were delicious. Thank you for the meal.

It's been a while since I visited MENEIJI Hiragishi store. I always have a hard time deciding what to order, but this time I went with the tsukemen. The maze-men and seafood soy sauce ramen are also delicious. Everything is so tasty that I always have a hard time deciding. I wouldn't mind coming back multiple times, but sometimes I have to turn back because there's a long line. That's how good it is!
