It's about time for a recharge at Saimi, so on Friday night, without going out for drinks, I visited the restaurant. There is a third parking lot near the shop. Please refer to the photo for details. Around 6:30 PM, there was a line of about 9 people outside the shop, so I lined up. While waiting in line, I placed my order, contributing to the fast turnover. The char siu that was sold out last time was still available, so happy! The temperature was just right, neither hot nor cold, making the wait bearable. About 15 minutes later, I was seated, and soon the ramen arrived. The operation was impressive as always. Now, let's eat! First, I took a sip of the soup. Oh, it's a spicy miso tonkotsu clear soup with a rich flavor. It's delicious, this is it! Next, I tried the green onions with the soup. The medium-thick curly noodles from Morizumi Seimen were springy, a perfect combination with the soup. I scooped up some rice and it was delicious. I took a bite of the tender pork shoulder char siu, so soft and amazing! I was happy to see there were still 4 pieces left. I dissolved grated ginger in the soup for a flavor change, and the spicy miso soup became vibrant. Stir-fried vegetables, menma, noodles, and then rice. Char siu on rice, and a large pickled radish for a palate cleanser. It was all gone in no time, it was so delicious as always. Thank you for the meal! From the taste to the operation, this restaurant is well thought out and I enjoyed the miso flavor. I left the restaurant around 7 PM. Last time, there was no line at this time, but today there was. Unfortunately, I couldn't take a photo of the exterior of the shop due to the line. I don't like lines, but I will come back to recharge at Saimi again! Oh, I forgot to try the vegetable-heavy option, I want to challenge that next time. Maybe I'll try miso with extra vegetables next time?

It's Thursday, just past 12:20. There are about 30 people waiting for about 35 minutes. Sumire is the first of the 5 shops that share the same noren. I have already eaten at Daishima, Minsan, and Goyo in the Kanto region. Mixing grated ginger into the fragrant soup enhances the flavor and makes it delicious. The lard and garlic are not too overpowering, just the right amount, which I like. Perhaps the flavor composition is surprisingly simple. If you eat on a weekday for lunch, it's best to go around 2 pm. Thank you for the meal.

I visited a popular ramen shop in Sapporo, Hokkaido around 7 pm and waited for about 20 minutes. The miso ramen here doesn't have corn or any extras, just regular miso ramen with amazing yellow noodles. The soup is not too strong, with a hint of spices that give it a fragrant and light taste. It's so delicious... I saw someone ordering salt ramen and now I'm curious about that too! But this time, I was completely satisfied with the miso ramen. I definitely want to come back here when I'm in Sapporo again.

This is a restaurant I've always wanted to try. I arrived an hour before opening time at 10 am on a Saturday of a long weekend, but when I got there, there were already about 20 people in line! It seems you have to wait in line to enjoy something delicious! I ordered the Chashu Miso Ramen (large) for 1,300 yen: - The chashu comes in both thinly sliced and cubed pieces. - Grated ginger on top of the chashu adds a nice flavor twist (miso and ginger surprisingly go well together!). - The noodles are the classic Sapporo ramen curly type. - The miso broth is light and seems like you could keep eating it endlessly. - The chashu ramen was so tasty that even with 4 slices of chashu, you still want more! It was a delicious meal. Thank you.

Arrived at the parking lot at 4:30 PM on Saturday. Already 13 people were lined up. After that, cars kept coming and the line quickly grew longer! The dedicated free parking lot fills up quickly, so I recommend arriving early. The store opens at 5 PM, and we managed to get in on the first round! Inside the store, there were counter seats and table seats, and it seemed like they could accommodate around 20 people. The menu had options like salt, spicy miso, and soy sauce, but since it was my first time, I ordered the miso ramen. It had a rich miso flavor, oil, yellow curly noodles, slightly thick, and it was delicious.

I visited after a long time. I ordered the miso ramen as usual. It is indeed the original of Sapporo miso ramen. This restaurant has made a great contribution to the development of Sapporo ramen. It is undeniable that it has become the base of Sapporo ramen. The rich miso and sautéed vegetables on top add a nice aroma. The soup is rich in animal ingredients, with a sweet garlic flavor. The chashu is made from pork loin and is not strongly seasoned. The noodles are the classic Hokkaido style with added water, egg, and medium-thin curly noodles. It was delicious as always when I tried it after a long time. However, personally speaking, with the emergence of ramen shops that have taken this as a model and elevated it, I may not feel the need to wait for an hour in extreme weather conditions just to eat here.

9/13 Menya Ayami Miso Ramen for 900 yen. After Thursday, this place is from Sumire. I arrived around noon and was shocked to see a line of 60-70 people... I was prepared to wait for 2 and a half hours under the scorching sun. It's not cool like in Hokkaido... haha. But surprisingly, the line moved quite well, and I ended up getting my bowl in about 1 and a half hours! When it comes to Ayami, I'm all about the Marudon! The soup is pork bone-based, rich but light with a refreshing aftertaste! When you dissolve the ginger in it, you can keep drinking endlessly. The noodles are from Morizo Seimen, and they taste even better thanks to the delicious soup. The stir-fried bean sprouts topping is crunchy and delicious. The chashu is meaty and tasty too. It's a miso ramen that's worth waiting in line for. I recommend lining up during a cooler season... haha. Thank you for the meal!

When I arrived at the restaurant around 10:15, there were already 5 people waiting in line. I placed my order at 10:30 without hesitation, opting for miso char siu ramen and a beer. By 10:45, I was able to enter the restaurant (I think it was due to the shop's opening hours) and finally enjoyed the miso ramen I had been craving. It was a satisfying meal. It was worth the trip from Fukuoka.

The toppings included chashu, bean sprouts, bamboo shoots, green onions, and ginger, with medium-thick curly noodles. It was not the typical "Sapporo Miso Ramen" taste but more of an evolved version. While it was delicious, it didn't quite meet my expectations of what miso ramen should taste like. The soup itself was very tasty, and while I recommend trying it at least once for its unique flavor, I wouldn't judge Sapporo Miso Ramen based solely on this ramen. 【Small Rice】 Despite being called "small," it was a regular serving of rice, and it even came with pickled vegetables at a great price of 50 yen. The rice had a perfect texture, not too hard or too soft, and paired well with the miso soup. Highly recommended for those who want to savor the soup even more. 【Waiting Time】 The wait from lining up to getting the food was about 45-50 minutes. I visited on a regular Sunday around 6:40 PM, with about 20 people already in line. The food arrived at around 7:25 PM. Compared to other popular ramen shops in Sapporo where waits can be up to 90 minutes, this was relatively short. There were many tourists, while locals seemed to give up on waiting due to the long line. 【Access】 It's a 3-5 minute walk from Exit 1 of the Toho Line on the Sapporo Municipal Subway. 【Other】 The chashu ramen was sold out, so if that's what you're after, it's best to go early as it tends to sell out. This was my first visit despite living in the Sapporo area. The sudden long line in a quiet residential area made it clear why this place is so popular. With the rising prices of ramen these days, it's becoming common to see prices exceeding 1000 yen per bowl in Sapporo. Considering the quality and price of this ramen, it's quite impressive. There are many delicious ramen shops nationwide, but in terms of cost-performance, this one seems to rank high, offering great quality for less than 1000 yen. I believe miso ramen is best enjoyed in the dead of winter when you're freezing and starving, making it taste even better. I look forward to visiting again in the winter. Thank you for the meal!

I visited this ramen shop, "Menya Saimi," which is located about a 3-4 minute walk from the Subway Misono Station. I visited on a Saturday, around 10:30 am, and there was already a line of about 30 people waiting, so I had to wait for about 30 minutes. Despite the opening time listed on Tabelog as 11:00 am, the actual opening time seemed to be 10:30 am, and I was able to enter by 11:00 am, but still had to wait a bit inside. I ordered the Miso Ramen and the "Sepia no Shigeki," which turned out to be a Beet Cider (limited to Hokkaido) drink, as I was not familiar with it. The ordering is done while waiting in line outside the shop. The Miso Ramen looked delicious from the start, but it was not as rich as I expected, with the lard floating in the soup being somewhat restrained. The yellowish medium-thick curly noodles paired perfectly with the soup and were incredibly delicious! The toppings included stir-fried bean sprouts and minced meat, one slice of chashu, menma, green onions, grated ginger, among others, and the balance was excellent. The Sepia no Shigeki was made with beets, a crop grown only in Hokkaido in Japan, which is also used as a sugar source, and it was a traditional cider made with mineral water from the Lake Shikotsu water system. Overall, this shop seems to be the most popular for authentic Hokkaido-style miso ramen, but personally, I prefer a bit more richness. Nevertheless, it was a top-notch bowl of ramen that I would line up for again. If I have the chance, I would definitely visit again!

They opened 30 minutes early. There were over 50 people waiting in line. - Spicy Miso Ramen ¥950: The moment I tasted the soup, I realized it was a weak-bodied soup. It seemed like they simmered a small amount of chicken bones and pork bones for a short time. There is a saying that "Miso is a seasoning that spoils ramen chefs." The richness of the flavor is so strong that even a shortcut soup like this can pass. The owner trained under the original owner and opened a shop in Kitami City. I had been avoiding this restaurant because it was slightly away from the center. However, I decided to visit in the lingering summer heat. I arrived on a Saturday at 4:20 PM, expecting a long line, but to my surprise, there was no one there. I got the best spot with no wait. Around 30 minutes later, people started to line up and by the time the restaurant opened, the line was so long that I couldn't get in on the first round. The staff was efficient and pleasant. I ordered the miso ramen as the char siu topping was sold out. It arrived in about 3 minutes. I had heard from a French chef that it was a gentle flavor that you could eat every day, and it was true. Although it didn't have the strong impact like some other ramen shops, it had a mild and addictive taste that made it hard to stop eating. This is what a true popular restaurant is like. I would like to come back again when I feel like it.

I arrived at the parking lot at 4:30 PM on Saturday and there were already 4 people there. I was able to park on my first round at 5 PM. I ordered miso ramen but they were not serving chashu today. The miso ramen was prepared quickly, within 2 minutes of ordering. The flavor was rich yet light with a hint of ginger, and the soup was so good I wanted to drink it all. The turnover is quite fast. I highly recommend this place!

Finally, I made it to Sapporo! I visited Menya Ayumi, the number one restaurant in Hokkaido on Tabelog. I arrived around 11:55 AM on a Friday after a direct flight from Chitose Airport. I thought it wouldn't be crowded on a weekday, but there were 40-50 people waiting in line. I decided to wait in line along the building. It took about 60 minutes to reach the front. I ordered the miso ramen for 900 yen, which seemed to be the popular choice. The ramen arrived quickly after I sat down. The broth had floating lard and a rich miso flavor, but surprisingly had a light aftertaste. It was flavored with ginger, and I finished the soup completely. The curly egg noodles matched well with the soup. This classic Sapporo miso ramen was well-balanced and satisfying. It's no wonder that the Sapporo-style ramen from the Sumire group is so delicious. I was very satisfied with the meal. Thank you for the delicious food!

Located a 6-7 minute walk from Misono Station on the Toho Line in Sapporo's Toyohira Ward, "Menya Saimi" is a restaurant where you can write reviews... Hailing from Hokkaido and known as the originator of the pure sumi-style miso ramen, this renowned shop was trained at "Sumire." A must-visit shop for ramen enthusiasts! I visited on a Thursday. I arrived at the shop quite early, around 9:50. No one was there yet... Could it be... closed for the day!? I could hear noises and lively chatter coming from inside the shop. Phew, they're open today. Upon closer inspection, there were cones lined up for waiting in line. It's still before 10 am... they must be used to this! So, I secured the pole position today! Yes! First in line, and the memorable shop is Saimi! Double the joy! Around 10:00, a few customers arrived. Around 10:20, a staff member came out to take orders. Of course, I ordered the miso ramen! I also ordered the sepia shigeki. Shortly after, the curtain was drawn, and I was ushered into the shop. A slightly early entry. Menya Saimi, a popular shop with a wall full of signed papers! Impressive! After sitting down, it took 2-3 minutes before I finally met the ramen! I came all the way from Fukuoka just to eat this! The ramen was shining like gold (or so it seemed)!! - Miso Ramen - I slurped the soup. Compared to Junren and Sumire, the soup was quite light! However, it had a rich miso flavor. When I dissolved a little grated ginger and slurped it, the taste was even more different. The refreshing ginger flavor was outstanding! The noodles were from Morizumi Seimen. The thick curly noodles are a staple of Hokkaido! With a firm texture, each noodle had volume, so personally, this noodle goes well with light soup, or rather, it's my preference! Each ingredient was meticulously prepared. Everything matched perfectly with the soup! - Sepia Shigeki - Beet is a crop produced only in Hokkaido, made from sugar as a raw material, and this beet cider is made from it. As a side note, the popular comedian Beat Takeshi's "Beat" is derived from this crop. Beat Takeshi → Genius Takeshi The pun on "genius" and "beet" seems to be the origin of the name Beat Takeshi! I had longed to eat at Menya Saimi and finally made it here! Truly the number one shop in Hokkaido! I left the shop at 11:00. There was a line of about 20 people! I'm glad I went early. Another side note, there is a shop in my city, Kitakyushu City, Fukuoka Prefecture, where the chef trained at Menya Saimi. "Menya Gen" is a popular shop that offers the only pure sumi-style miso ramen in Kyushu! I'll also introduce this as a PR for Kitakyushu (laughs).

I went to Ayami after trying Junren and Sumire's Sapporo miso ramen. When I arrived at the restaurant at 11 o'clock, there were about 30 people waiting in line. They provided umbrellas outside, which was nice. We were seated after about a 40-minute wait. I ordered the spicy miso ramen with extra pork topping and a side of rice. The soup of the spicy miso ramen was a bit lighter in miso flavor compared to Junren, but stronger than Sumire. If you prefer a stronger miso flavor, the spicy miso ramen is a good choice. When eating similar types of ramen in succession, the evaluation tends to become more critical. Personally, I didn't feel a significant difference between Junren, Sumire, and Ayami, so if you want to eat Sapporo miso ramen, you can't go wrong with any of these three restaurants. I also tried dipping the rice in the soup, thinking it might taste good, but it didn't work out.

We ordered 3 miso ramen (900 yen each) and 3 sepia shigeki (200 yen each) for the three of us. 11:18: We entered the store after being asked for our order in advance and due to the simple menu, the store opened quickly. 11:24: The ramen was served. The soup had a fragrant miso flavor with a hint of ginger. The ginger was not too spicy but complemented the soup well. The noodles were medium thickness and curly, typical of Sumire. The bean sprouts topping was fragrant, and the whole meal was very delicious. The store was quite hot today due to the high temperature outside, which was a bit of a downside. Upon leaving, there was still a line of about 50 people waiting.

As we entered the restaurant, a miso and garlic-like smell filled the air, stimulating our appetites. Since we had pre-ordered, our food was served promptly without much waiting. Everyone around us was having miso ramen, but I decided to try the soy sauce ramen. My companion had the miso ramen. Both were excellent choices. The soy sauce ramen had a delicious blend of umami and sweetness in the soup, making it irresistible! The fact that it doesn't contain artificial flavor enhancers was evident in its smooth and clear taste. If I were asked whether I would order soy sauce or miso ramen on my next visit, I would have a hard time deciding. The miso ramen was also mild and flavorful, never getting boring no matter how many times you eat it. Both the pre-mixed and post-mixed versions with ginger were delicious! It had been over 15 years since my last visit, but I'm glad I came back to this ramen shop!
