"Sushi Suzuki" is a prestigious sushi restaurant in Ginza that received the SILVER award in the 2023 Tabelog ranking and was one of the top 100 restaurants in 2022. The owner, Mr. Suzuki, used to work at "Sushi Aoki" before opening his own place. The course menu for today included various dishes such as Aomori flounder with liver, seared cutlassfish from Ishigaki, bonito tataki, mantis shrimp, steamed abalone with octopus, whale meat, white squid, white shrimp marinated in kelp, red meat, medium fatty tuna, fatty tuna, sandfish, gizzard shad, barracuda, horse mackerel, Japanese jackknife clam, spot prawn, red sea urchin, clam, conger eel, and egg. The sushi had a gentle blend of mild rice vinegar and red vinegar, with each piece showcasing Edo-style precision. The portion sizes were generous, and the flavors were direct and impactful. The tuna pieces were small and light, while the horse mackerel, Japanese jackknife clam, and clam were particularly delicious with large cuts of fish. However, the prices were slightly on the expensive side, which is to be expected in Ginza. The chef was friendly, and the dining experience was pleasant. Overall, the food was delicious.
