At Triton Handmade Sushi in Sapporo, there are items that come around on a conveyor belt, but mainly it is handed to you directly. Located in Teine, Sapporo, it is a 9-minute walk from Teine Station (JR Hakodate Main Line). The parking lot is spacious and on-site facilities include Jay R Fresh Market, Tokyo Oil Group Teine Branch, Komeda Coffee, Penguin Bakery, Tsukiji Gindako, Chateraise, Satsudora, Daiso & THREEPPY, coin laundry, beauty salon, and barber shop. After receiving a waiting card, we waited for about 20 minutes inside the restaurant before finally being seated at the counter. The recommended 3 types of sushi included carefully selected raw salmon, flounder, and local squid, which was marinated with kelp to remove moisture and had a good texture and saltiness. The salmon was moist and creamy. The lean tuna was a bit subtle, while the soft Hokkaido scallop had a sweet and savory taste. The boneless raw herring from Aomori melted in the mouth with its freshness. The blackthroat seaperch from Miyagi, delivered live and fresh, was soft and delicious. The broiled conger eel with rock salt was rich and tasty. The large scallop from Hokkaido was standard in size and would have been more impressive if it had been thicker. The ikura with soy sauce was popping and easy to eat. The homemade pickled mackerel had a mild acidity and tender flesh. The sea urchin had a mild taste and a good saltiness. The shrimp and snow crab battle featured the snow crab's umami flavor. The large shrimp had a familiar taste and texture, and the rice was in good condition. The rice was slightly on the soft side, but overall it was good. You can choose between the normal portion or half portion of rice. I have a Triton card, but I don't know where it is anymore.
