The restaurant opens at 11:00, so I arrived around 10:45 on the weekend and there was only one group of customers ahead of me. Surprisingly, some customers were already eating inside the restaurant. You buy a meal ticket before lining up. The interior has only counter seats, with a limited number of seats, but it's clean for a ramen shop and has a welcoming atmosphere even for solo female diners. We were seated before 11:00 and left around 11:10, with about 6 groups waiting. I ordered the Ajitama Chuka Soba for ¥950. There are three types of noodles available: Chuka Soba, Tsukemen, and Tantanmen. Many people were ordering Tantanmen, but it was my first visit so I went with the classic Chuka Soba. The soup, made without additives, has a base of dried fish but doesn't have a strong fishy smell; instead, you can taste the richness and umami of soy sauce, which was delicious! The homemade noodles are thin and straight, with a pleasant texture. They pair well with the clear soup! The toppings include two types of chashu, thick menma bamboo shoots, komatsuna greens, and a perfectly soft-boiled seasoned egg. It's a luxurious topping for this price! Once a month, it's curry day at the restaurant. As usual, X wasn't on the menu, so I had my daughter confirm, and it seems like they're serving curry anyway. When we arrived, two groups of customers came in one after the other. We got to the restaurant a little after 11:30. This time, there wasn't a line at the restaurant, but it was fully seated. We waited for about 5 minutes. We sat at the counter and were served promptly. The Wagyu fillet steak curry was as meaty and chunky as ever. The other curry was squid and yellowtail with evening primrose, a gentle seafood curry with small spear squid. It was delicious as always. Thank you for the meal. I'll come back someday to try the ramen.

During my business trip to Hachioji, I used to frequent this restaurant because I lived nearby. I remember enjoying their special Chinese soba and tantan noodles alternately! Both were the best ramen I've ever had. I would love to visit again when I have the chance to go to Hachioji in the future!

Today, I visited my favorite soy sauce-based ramen, the "Heartwarming Chinese Noodles with Oxtail." The passionate touch of the owner is reflected in the flavor. This Chinese noodle dish, with a clean yet robust taste, is made without any artificial seasonings. Everything is handmade. This time, I chose the special Chinese noodles for 1300 yen. The presentation of the noodles and toppings is beautiful, and the moment you pour the sauce over the chashu at the end, it's simply amazing.

Arrived on a weekday at 11:50. There were 4 people waiting. Only 6 seats available, but we were seated in about 10 minutes due to fast turnover. Ordered the Chinese ramen for 950 yen. The noodles looked beautiful and delicious. The soup had a clear bonito flavor at first, followed by a well-balanced and tasty chicken broth taste. The clean noodles were medium-thin and slightly firm. They had a good texture when slurped, and chewing them brought out the delicious taste of wheat. The chashu and menma were also high quality, and with the seasoned egg included, it was a great value for under 1000 yen! Enjoyed the meal. Thank you for the feast~.

I had the Special Tan Tan Men for 1300 yen. It was my first visit in a year. Last time, I had the Chuka Soba and it was amazingly delicious. This time, I wanted to try the Tan Tan Men. It was a flavorful bowl with a strong spice kick, heat, and numbing sensation. It was incredibly delicious. I think I want to have the Chuka Soba again next time.

At Motsuke-san in Hachioji City, Mancho Limited Edition, I had the Chilled Tantanmen with Onsen Tamago for ¥1100. This week is the last chance to try it, so I visited to have a taste! The refreshing bonito-based cold soup has a clear umami flavor. As you eat, you can enjoy the sesame flavor of the Tantan, the sweetness, the spiciness of homemade chili oil, and the numbing sensation of Sichuan peppercorns - it's incredibly delicious! The homemade thin noodles, finished in ice water, have a springy texture and a smooth surface that feels great to slurp. The richness of the meat miso, the crunchy texture of the onions, and the deliciousness of the soft-boiled egg are all superb. This bowl of Chilled Tantanmen was a delightful experience. Visited the restaurant after watching a certain ramen YouTuber. It's about a 10-minute walk from Hachioji Station South Exit. Excited for the seafood-based ramen, there were about 4 groups waiting, but we were seated after about 10 minutes. The staff kindly guided us to avoid the hot sun, showing their warm hospitality. As soon as you enter the restaurant, your whole body is enveloped in the aroma of bonito broth. Ordered the special seafood ramen (4 slices of char siu, 3 wontons, 1 extra seasoned egg). The refreshing soup with a strong bonito flavor pairs well with the sharp soy sauce. The homemade straight noodles are excellent, and the bamboo shoots, char siu, seasoned egg, and wontons are all fantastic. It was a delightful and refreshing deliciousness that makes me want to come back again.

At Motsuke-san in Machi, Hachioji City, the special Tantanmen for ¥1400 is amazing! The sesame sweetness, umami, spicy homemade chili oil kick, and numbing Sichuan pepper flavor in the Tantan soup are superb. The homemade medium-thick noodles have a satisfying chewiness and slurpiness, very delicious. The minced meat miso and diced char siu are voluminous and incredibly tasty. The rich and flavorful seasoned egg is irresistible. The silky wontons with soft filling are also very delicious. The simmered pork is tender and packed with flavor. Another upgraded bowl, thank you for the feast!

On a weekday, I had a late lunch after work at Motsuke-san in Hachioji. Last time I had their ramen, so this time I chose the popular tantanmen, which was available as a limited-time chilled version for the summer. I arrived at 2 p.m. and was able to walk straight in without waiting in line! The limited chilled tantanmen cost 1,100 yen. The noodles were the same as their regular ramen, thin and straight with a good texture, but the chewiness is what makes Motsuke-san stand out. With the chilled version, there was ice in the soup which gradually tightened the noodles, making it delicious until the last bite! The soup was amazing! The flavor of sansho pepper and sesame was strong! It seemed quite spicy at first, but when mixed together, it became easy to eat with full umami flavor. It's strange how well it matches the base soup, creating an authentic yet mild flavor. In terms of spiciness, it might be on the milder side for tantanmen, making it easy to finish the soup completely! The toppings included crunchy greens, minced meat, diced onions that stood out, and a seasoned soft-boiled egg. When eaten with the soup, it was just amazing. The onions were the highlight of Hachioji ramen! The flavor of sansho pepper, the soup, the umami of tantan, the chewy noodles, the distinctive onion topping - it was a very delicious limited chilled tantanmen! Next time, I will try their warm tantanmen. Thank you for the feast!

I had some business in Hachioji, so I came to this restaurant. It's about a 10-minute walk from Hachioji Station, and I arrived at 11:45 AM. There were about eight people waiting outside. I bought a meal ticket first and then lined up. I chose the "Hasshou" ramen on the top left. It's been a while since I had such a delicious soy sauce ramen. The finely chopped onions must be a specialty of Hachioji ramen, right? It's so tasty! I'm surprised! The noodles are great too! The soup is great! The meat is great too! I went to Menya Motsuken in Hachioji, Tokyo. Last time, I had the regular ramen, so this time I ordered the tantanmen. My companion ordered the special ramen. I was surprised by the unexpectedly punchy authentic tantanmen. The thick and chewy noodles were delicious. I remember the regular ramen having thin and well-cut noodles, but it seems they have changed them. The tantanmen had plenty of minced meat and onions, making it incredibly tasty!

About a 10-minute walk from Hachioji Station South Exit, I was planning to go to "Motsuke" after visiting "Tantan" at Keio Hachioji today. I realized halfway that it was actually Sunday, not Monday as I had thought... Surprisingly, today was their regular holiday. Due to this rare mistake, I decided to head to the first place. Arrived at 10:50 AM, there was a 15-person wait, and I entered in about 20 minutes. The turnover is fast. The rule is to buy a meal ticket first and then line up. The way to line up is written near the ticket machine, so if you don't check, it's hard to understand. I ordered the Special Chinese Ramen for 1300 yen (with 4 slices of char siu, 3 wontons, and an extra seasoned egg). The seasoned egg was 100 yen, and half rice was 100 yen. The soup, which is said to be chicken-based, has a deep flavor with hints of bonito and mackerel, offering a unique taste that I haven't experienced elsewhere. The noodles are medium-thin with a nice firmness that blends well with the soup. The wontons with ginger were delicious. The char siu was decently good. It's a bit far for me to visit often, but if it were closer, it would be a place I'd like to go occasionally. The service was good, with kind words of consideration received. Thank you for the meal!

Located in Hachioji, this ramen shop's concept is "no chemical seasoning, no additives, homemade noodles." The owner, who trained in Chinese cuisine for about 15 years and was involved in launching "Gokunotsukemen Bunbunmaru" in Minamiosawa, started this shop in 2016. The inspiration for starting the shop came from being impressed by the ramen at "Niboshi Wataran Ramen Maru," which offers no chemical seasoning and homemade noodles in the same Hachioji area. The name "Hokkori Chuka Soba Motsuke" comes from the nostalgic feeling of "hokkori" Chinese soba and the Tsugaru dialect meaning "cheerful" and "enthusiastic." The sign of "Yamato-ya" on top of the shop is said to be from a traditional tofu shop that was previously located here. The shop mainly serves three types of ramen: "no additive soup" Chinese soba with a clear yet robust taste, tantan noodles with a sesame base and a focus on homemade ingredients, and tsukemen. They also offer a limited menu of chilled tantan noodles. I visited on a hot weekday afternoon and waited for about 30 minutes in a line of over 20 people. I ordered the "Special Chuka Soba" (¥1300) with an additional seasoned egg (¥100). The toppings on the beautifully presented noodles and the curve of the medium-thin noodles resembled an art piece. The soup was surprisingly original when I took the first sip. Although I could taste bonito and mackerel flakes, the balance was so well done that I couldn't tell it was chicken-based without being told. The noodles smoothly carried the soup while maintaining a satisfying firmness. The seasoned egg had a firm white and a soft, gooey yolk that coated the tongue. The three wontons in the special were slippery with a good texture, but the filling was hot and meaty. The ginger in them seemed to raise my body temperature slightly. The two types of chashu, shoulder loin and thigh meat, were contrasting - the fatty shoulder loin filled me up quickly, while the thigh meat provided a chewy texture. I usually leave some soup behind, but on this day, I willingly drank every last drop. It was a pleasant experience with the shop's cheerful atmosphere echoing with "Thank you for coming in this heat!"

Bou-bou chicken cold noodles for 1100 yen with a side of oxtail at Hachioji. Arrived a bit before opening time and was 16th in line. Waited for 50 minutes before being served. The sesame sauce and sansho pepper on the Bou-bou chicken were amazing. It's no wonder, as the chef used to work in a Chinese restaurant. Makes you crave a beer. On August 18th (Friday) at 12:10, I bought a meal ticket in advance and lined up. There were about 8 people waiting outside the restaurant. After waiting for about 30 minutes under the scorching heat of Hachioji, I felt like it could be deadly. It's essential to have a parasol and stay hydrated when lining up in the hot weather. (I was able to line up in the shade at Motsuke-san's place.) I ordered the Special Chinese Ramen (1,300 yen). The toppings were very luxurious, including boiled komatsuna, chopped onions, seasoned egg, menma, 3 wantons? (I got so engrossed that I forgot.), chicken chashu, and pork belly chashu. The soup had a strong flavor and aroma of bonito flakes, with a good sharpness of soy sauce. The balance was at a very high level, not tiring at all, but very delicious. It's difficult to create such a taste from scratch. You could sense the efforts and dedication of the owner. The menma topping is worth mentioning for its good texture and taste. The overall quality of this bowl, including the noodles, is very high, and you can feel the owner's dedication. I was extremely satisfied, but there was only one concern - the portion size was large. Towards the end, I started to worry if I could finish it all.
