One of my top 3 favorite ramen shops in Sapporo is Fujiya. It had been a while since my last visit, so I decided to go and try their miso tsukemen since I had only tried their shoyu tsukemen before. Here is my review:
Miso Tsukemen - ★★★☆ - 980 yen - 3.8
Overall, the noodles were delicious as always, but the miso soup wasn't really to my liking. The soup had a bitter taste, possibly due to a blend of strong red miso. The toppings included large bamboo shoots and chashu, which were satisfying.
Soup - ★★★ - 3.0
The miso soup was different from regular miso ramen, with a bitter taste. It seemed like a blend of red miso. While this might work for tsukemen, it wasn't my preference. I remember my wife trying it before and it was a bit sweeter, so I wonder if they changed the blend. I need to try their regular miso ramen again soon.

The thick noodles were chewy and delicious, as always. They had a great texture and coated well with the soup. I really like the noodles here.
Overall, I won't change my rating this time, but I will definitely try the regular miso ramen again soon to see if there have been any changes. I'm looking forward to it!

I wanted to have tsukemen for lunch, so I went to a place near my home. My stomach was growling, so I decided to order the spicy tsukemen with four times the normal spiciness. Last time, the regular spiciness was a bit lacking for me, but four times was too spicy! Next time, I'll try two times for the right level of spiciness. And when you dip the noodles in the soup, it creates a whole new taste experience. It's elegant. The yuzu is a nice touch. The fried rice is also delicious, with a nice crispy texture. I ordered the recommended miso ramen for 950 yen at the restaurant. It seems they use special miso, which pairs well with the seafood broth. However, popular shops are popular for a reason, and this one was no exception.

I ordered the extra-large miso tsukemen (1,130 yen) with a flavored egg (+130 yen) and sliced roasted pork (+130 yen), as well as a roasted pork bowl (450 yen) for a total of 1,840 yen. When I arrived around 12:20 pm on a weekday, the parking lot in front of the restaurant was full, so I had to wait on the street for a spot to open up. Eventually, I found out that many customers parked at a nearby large parking lot. The specialty of this restaurant seemed to be the miso-based dishes, so I decided to try the miso tsukemen instead of the regular ramen. The wait for my order was about 15 minutes, but it was worth it. The soup was delicious with a salty flavor, and the noodles were also very tasty. The roasted pork bowl was flavorful with a perfect balance of sweet and savory sauce. Overall, I was very satisfied with the quality of the food, despite the slightly higher prices. I would definitely recommend this place and look forward to trying their Michelin Bib Gourmand-rated sister restaurant in Susukino next time. Thank you for the delicious meal!

The miso ramen costs 950 yen and is a rich fish and pork bone broth with plenty of back fat, two large slices of chashu, green onions, and is relatively simple. The rich soup coats the noodles well and is delicious, making me want to order rice as well. However, I resisted because it would affect my health check-up. The restaurant only has a counter, but the environment is cool and pleasant, and the service speed is good, so I was satisfied. Other menu items that caught my eye are miso tsukemen for 980 yen, shoyu tsukemen for 930 yen, and shoyu ramen for 900 yen.

This is a ramen restaurant located in Higashi-ku, Sapporo, along the circular line. On this hot day, I ordered the limited-time cold Chinese soba. The salt soup with chicken and kelp dashi has a refined taste with a light and refreshing Japanese flavor. The kelp thickens the soup nicely and blends well with the noodles. Personally, I prefer a slightly stronger flavor. The noodles are straight and smooth, with very little kan sui flavor, almost resembling cold noodles. Towards the end, I felt it was lacking a bit, so I tried adding some Sakana Kosho from the table condiments, which really enhanced the taste. I probably should have added more from the beginning. I feel like it could use a bit more punch, but it's quite refreshing and enjoyable on a hot day. If they offer this menu again next year, I might give it another try. Thank you for the meal~(^_^)

I arrived at 13:20 and the restaurant was packed with several customers already seated. I had to wait for 20 minutes before being seated. There were 3 male staff members working efficiently.
Today, I ordered the spicy tantanmen with double the spiciness for 950 yen. It arrived in about 5-6 minutes. The soup looked very spicy, but it was actually based on pork bone with a hint of fish flavor, not too spicy. It had a good balance of spiciness and umami flavor. The noodles were smooth and chewy, a perfect match with the spicy soup. The chashu and menma were also delicious. Overall, it was a tasty meal. Thank you, I will definitely come back again!

A rich miso ramen that gives off a fishy flavor. Personally, I think the fishiness would go better with soy sauce. Also, the menma (bamboo shoots) is on the larger side, so the inside tends to be cold, which is a bit disappointing.

Simply delicious. The egg and nori (seaweed) under the char siu (roast pork) do a great job. On the counter, there are tissues, alcohol disinfectant, toothpicks, Sakana Koshi (seasoning), coarse black pepper, shichimi (Japanese spice blend), garlic powder, and vinegar available. You receive water when seated, and refills are self-serve. You can also use self-serve paper towels and paper aprons. The service is good. I'm curious about the fried rice that's only available at night.

The soup was gentle until the end and I finished it all. However, honestly, the miso ramen I used to like (with lots of green onions) is completely different. It used to be a chicken white broth base, but now it's a fish and pork bone base with back fat. The noodles used to be curly noodles. The owner, who trained at various famous ramen shops after visiting hundreds of ramen shops, will not continue with the same thing forever, and I look forward to the various changes in the future due to his curiosity. By the way, I heard that the meat miso that used to be placed in a dumpling shape in the past is now melted from the beginning. I hope it will be revived for the enjoyment of changing the taste...
