Just next to the New Shinbashi Building. Not a back alley, but a narrow space between buildings. Passing through a narrow path where people can barely squeeze by, you'll find a small L-shaped counter with only 8 seats. The famous dried squid soup with chicken salt broth catches the eye, but first, try the basic Hira-ko Niboshi Ramen. When you take a sip of the soup, you'll think, "Wow, this is delicious!" The noodles are thin and straight, firm, with a good chewiness. The soup has a soy sauce base, rich in the flavor and umami of dried sardines. There's a hint of bitterness, a thick texture, but no slimy cement-like consistency or the unpleasant fishy smell typical of dried sardines. Compared to regular dried sardines, Hira-ko Niboshi has a more refined flavor and less fishy smell. Indeed, that's true. The toppings are simple: chashu, seaweed, and trefoil. The chashu is tender and flavorful, releasing a delicious taste with each bite. Since the soup is the star, the toppings are kept simple. I finished both the noodles and the soup without getting tired. It's been a while since I finished a bowl of soup. Ah, it was truly delicious! Even though I'm technically an OL in Marunouchi, I feel like I've been posting a lot about ramen lately and turning into a ramen blogger. LOL

I had the tsukemen and it was really delicious. Just like others have mentioned, the noodles were very tasty and I enjoyed the 400g extra-large serving without getting tired of it. The compatibility with the dipping sauce was also great and I was moved. I plan to try the ramen next time I visit. I recommend adding a seasoned egg as a topping, so please give it a try.

While waiting, I purchased a ticket from the vending machine and handed it to the staff. After entering, the ramen was served in 2 to 3 minutes. The niboshi soup was rich and delicious as the name suggests, but personally, I found the noodles to be outstanding. They were chewy, smooth thin noodles with a great texture and mouthfeel. If it's not too crowded, I would love to come back again. Thank you for the meal today.

A small restaurant with about 8 counter seats near Shimbashi Station. It was said to be difficult to find due to the narrow alley, but I found it easily because there was a sign. I purchased the Special Hikoshi Niboshi Ramen (1,100 yen) from the ticket machine. It was served in less than 10 minutes. The portion was a bit small, but it looked luxurious with four large chicken chashu slices and a half-boiled seasoned egg. The soy sauce ramen with a niboshi (dried baby sardine) base was light and nostalgic, yet the rich niboshi flavor was prominent, leaving you completely satisfied. I finished the soup after a long time. The thin and chewy noodles had a Japanese-style texture. With the presence of crunchy menma bamboo shoots, seaweed, and flavorful chashu, it was a well-balanced and high-quality bowl.

Special squid and dried chicken white broth soba for 1250 yen. Arrived on a weekday after 2 PM, waited in line with 3 people. Served in about 15 minutes. The soup had a weaker squid smell and taste than expected, with a strong impression of chicken umami and saltiness. Nonetheless, it was still delicious. The noodles were medium-thin and straight, with a slippery texture. The chicken breast chashu slices were rare and had a good texture. The perfectly firm and salty flavored seasoned egg was impressive. Toppings with just the seasoned egg are recommended.

84th bowl of ramen in 2023, visited on September 19th around 2 pm. I was torn between the dried squid and chicken shirotan broth ramen, but decided on the squid as it's not something you see often and reviews mentioned it was delicious. I thought it might smell funky, but went for it. The counter seats were a bit high, making it a bit awkward to sit (laughs). There was almost no wait, but as soon as someone left, another customer would come in, so it was always full. When the ramen arrived, it had a dark soy sauce-like appearance, making it hard to imagine the taste. Let's see... It was delicious! The squid flavor wasn't overpowering and had no fishy smell at all, it paired really well. The bamboo shoot menma was tasty too, and I usually love menma (*^^*). The chicken chashu was incredibly tender, I wanted more of it. The noodles were straight and slipped down easily. If there was more, I would have mixed rice in and eaten it. I definitely want to come back here. This ramen is something you can only eat here. I was planning to go to a play but almost missed it because of the ramen, but it was worth the wait as I was starving and the ramen was delicious. I topped my Hikoshi niboshi ramen for 850 yen with a boiled egg for an additional 120 yen. The restaurant is located in a narrow alley between buildings, making it quite hard to find! The space is so small that it might be a bit challenging for strollers. There was a wait for one person and it was hot while waiting... Inside the restaurant, instead of icy air conditioning, they rely on hardworking fans to keep it cool! As for the ramen itself, the soup was incredibly delicious! It had a great aroma of dried sardines. The soft-boiled egg was wonderfully gooey and tasty! The chashu pork was a bit dry, which was the only downside. Overall, it was a really delicious bowl of ramen! Thank you for the meal~

I visited this restaurant for the first time for Saturday lunch. However, even though I thought I had arrived at the restaurant, I found myself wandering back and forth in the back alleys. Upon closer inspection, I realized that the restaurant was not along the back alley, but further down a narrow path between two buildings. As mentioned in some reviews, it's a bit hard to find. Despite it being shortly after opening, we were seated quickly, but by the time we left, there was a line of about 5 people waiting. I ordered the special Hikoshi niboshi soba in large size. The thin curly noodles arrived promptly. The flavor of the niboshi was there but not overpowering, giving a traditional Chinese soba vibe. The chashu had a firm texture rather than being melt-in-your-mouth tender. The inclusion of bamboo shoots was a pleasant surprise, and the seasoned egg had a good flavor. Thank you for the meal.

After having grilled hormone for lunch in Shinbashi, I filled my stomach with ramen as a snack. The soy sauce ramen with a strong bonito flavor was light and exactly the taste I was looking for, so I was very satisfied. It was a bit difficult to find the restaurant, but it was good that we were seated right away with only a 2-person wait. Thank you for the meal.

I was looking for a lunch option near Toranomon area, went to another ramen shop but had to wait for 30 minutes. Changed my target and visited this place. Just like the reviews, I couldn't find it at first... went in and it's another small Pencil Building. Didn't have to wait long to be seated. The ramen arrived quickly. Sorry, but personally, I felt the taste was like an average hitter. I think it's delicious, but combined with the scale of the restaurant, it didn't quite click with me...

I was lucky to get in without waiting in line ♩ The restaurant is a bit hard to find, but there is a sign outside! I tried the special Hikoshiboshi Ramen (dried fish broth ramen) (^^) The broth was very tasty with a strong flavor of dried fish ♩ The noodles were chewy and mixed well with the soup! The chashu (roast pork) was tender, a good size, not too thick, and had a delicious taste ♩ The bamboo shoots were also soft and easy to eat.

Today was my first time here, so I decided to challenge the 850 yen Hiyashi Niboshi Soba. I had purchased a ticket in advance, so when I arrived at my seat after being called, the dish was promptly served. It was not too salty and had a nice light flavor, with plenty of richness from the fat. I arrived just before 7:00 PM and there were about 5 people waiting in line, but the turnover was very good. The 2 staff members efficiently handled the service. I feel like this place could become more memorable if they had some distinctive features in their chashu or noodles.

Today, I visited "Shinbashi Matsumaru" after a long time to have some delicious ramen. This place has been listed in the top 100 ramen shops in 2018, 2019, and 2020, and currently has a Tabelog rating of 3.77. Since it's still hot outside, this time I tried the "Rich Chicken Tsukemen" instead of the regular Hikoshi Niboshi Ramen. I watched as they boiled the noodles and then rinsed them thoroughly before serving. The soup was rich but not overpowering, with a focus on chicken flavor. I finished it in no time, even drank some of the soup with water, so be mindful of the salt content. Thank you for the meal! 3.77 stars.

Weekday. Evening. Dining alone. I may have waited for about 30 minutes. It was raining that day. Delicious. But personally, I feel a bit hesitant about waiting in line. It's counter seating only and quite narrow, so it might be tough for people with lots of belongings.

I visited the restaurant after lunch time ^_^ I got a bit lost not knowing where it was and wandered around for a while, haha. Finally found it at the end of a narrow alley after spotting the sign! I had to wait for about 5 minutes, but then I was able to enter. I ordered the special ramen with appetizers and a beer. The gentle dried fish soup and chewy chashu noodles were just the right thickness. The soup was so delicious that I finished every drop!

I arrived at around 11:30 and there were about seven people waiting. It's a hidden gem location. I ordered the special Heshiko Niboshi Ramen for 1100 yen. The ramen was served shortly after I sat down. The char siu had a good chewy texture with 5 slices, and the noodles were thin. It had onions in it. The taste was well-balanced, and overall it was a satisfying ramen.

Visited for dinner. The location was already hard to find, but with the new tall buildings around, it became even more confusing. Walked through a narrow alley and entered the restaurant. Ordered the special flatfish and dried fish ramen. The rich flavor of the dried fish in the soup was unchanged, with a perfect balance of saltiness and depth. The noodles were cooked perfectly, and the way they picked up the soup when slurping was just right. Everything was well harmonized and very delicious. The chashu was flavorful and not too salty, just the right amount. Both I and my companion were very satisfied. It felt like a ramen that would be loved by people of all ages and genders.
