I also ordered a cheese platter, opting for the three varieties since I was already getting full. I was delighted when asked if I didn't like blue cheese. Normally, I would ask for something else to adjust the direction, but when I inquired about the tomatoes, the bartender confidently explained, "We change the origin of the tomatoes depending on the season to achieve the taste of a star bar." This response made me lose my enthusiasm, so I left after just one drink. I realized once again that star bars and I are not a good match.

The ice, made without impurities, is cut with a knife. The Gin & Tonic was served on top of this high-transparency cube ice. I even took a photo of it because it was so perfect. This cube ice mellows the Gin & Tonic nicely. You can buy Beefeater's Gin & Tonic anywhere, but it doesn't compare to making it at home. One glass cost 3200 yen. It's a fantastic bar.

The bill came to 5,300 yen, typical for Ginza, but the young bartender's skills and the quality of the cocktails were truly commendable. Although I didn't catch his name, he is likely to become a renowned bartender even in competitions. It felt like discovering a hidden gem.
