■Special Salt Ramen ¥1,350 ■Special Niboshi (dried baby sardine) Ramen ¥1,350 ■Mixed Rice ¥150----------------------------------------------------------------------Yesterday, I bravely challenged the top-ranked, extremely popular restaurant in Tokyo on Tabelog, only to be defeated. Feeling down, I lifted my spirits and tried this restaurant, ranked 5th in Tokyo on Tabelog. I arrived an hour before opening and was the 5th in line. By the time they opened, there were about 20 people waiting. First, I tried the salt ramen. Made with duck, chicken, and seafood broth. The chicken oil was abundant, but the taste was very mellow. The balance of the salt sauce was exquisite. Although I didn't try the soy sauce version, I'm sure the salt ramen offers a more pronounced flavor of the ingredients than the soy sauce version. The noodles were very thin and straight, with a delicate silkiness and smooth slurping texture. Not focusing on firmness, but on the ease of slurping. Noodles that make you want to slurp them forever. Thanks to these thin noodles, the serving time was incredibly fast, and the turnover was very efficient. The chashu (roasted pork) included both loin and belly. The belly meat crumbled easily and had a sweet and delicious fat content. My favorite type of chashu. The wontons were generously filled with meat, making them quite voluminous. There were even two large wontons. The seasoned egg had a runny yolk soaked in broth, overflowing with richness. You could sense the meticulous preparation. And then, the dried baby sardine ramen. These were delicious dried baby sardines. This was perhaps my first experience with dried baby sardines that were both strong and gentle in flavor. It felt like only the best parts of the dried baby sardines were extracted. The mixed rice was the pinnacle of mixed rice infused with chicken broth. All in all, undoubtedly top-notch bowls in Tokyo. Highly recommended. I must try the soy sauce ramen next time. Along the bus street leading from Sengawa to Seijo Gakuen area, there are various distinctive eateries scattered around. Today, with a late start to work in the afternoon, I finally visited "Shibata" that I had been eyeing for a while. I arrived at the restaurant at 11:05. Following the staff's guidance, I found a seat on the outdoor bench and purchased my meal ticket in advance before waiting outside. I entered the restaurant around 11:15 and my meal was served at 11:23. I ordered the Special Chinese Ramen for 1,560 yen. I exaggeratedly thought of it as a once-in-a-lifetime encounter and ordered the all-inclusive option. It's clear that they have put a lot of effort into enhancing the quality of all the ingredients in this bowl. The journey to reach this soy sauce-flavored soup must have been quite an endeavor, and I am truly impressed. The complexity of the soy sauce base hits you without feeling overwhelming. It's truly a classic soy sauce ramen. The chashu (pork loin and pork thigh), wonton, bamboo shoots, seasoned egg, and green onions all come alive when combined with this soup. However, personally, I'm not a big fan of soy sauce ramen, so I apologize for that. Thank you for the meal.

It was being featured in the media quite a bit, so I thought it would be crowded. There were many people changing trains, so I was hesitant, but since it's getting cooler, I finally decided to visit! I arrived at 1:30 pm on Saturday and there were 10 people waiting. Entered at 2 pm, received my bowl at 2:05 pm. With two people operating, the turnover may be fast. *When you get close to the line, the staff will instruct you to buy a meal ticket. I hadn't eaten anything since morning, so I ordered a large serving with the special option. The soup had a very beautiful color as shown in the photo, with thin noodles like somen. There might be a lot of chicken oil, but it didn't bother me much. Even with the large serving, I was out of the store in less than 10 minutes, so I don't think it's too heavy. The chashu was delicious and seemed to blend well with the soup. The yuzu shichimi sprinkled at the end was a nice touch for flavor variation. As for the overall impression... I realized something important this time. I started to think, "Are all soy sauce ramens considered high-level the same?" It's just my personal opinion, so I don't expect everyone to agree. I've been feeling this way for a while, but it seems like I'm the type of person who thinks like that, maybe I have an unsophisticated palate. But I don't understand, is there really that much of a difference... I wonder if I'll feel the same about the ○○ shop that I haven't visited yet? I'll have to consider my future dining destinations. Finally went to Shibata for their special Chinese soba. Oh man, it was delicious! The soup made with premium ingredients like Tanba black chicken and recently changed from duck to tender chicken, along with branded pork, had a rich aroma of chicken oil from the moment it was served. The first sip revealed a deep and rich flavor. The blend of multiple soy sauces in the soup base was profound and exquisite. The tender chicken was also present and flavorful. Quite powerful and I loved it. The homemade noodles, made in the noodle room next to the restaurant, were thin straight noodles with a fantastic aroma and great texture that paired well with the soup. The chashu, made with low-temperature cooking, featured both lean and fatty cuts. The wontons were also deliciously satisfying. A renowned top 10 restaurant on Tabelog, it's a well-known gem. Due to geographical reasons, it was on my to-visit list for about 10 years, but I wish I had gone sooner. I finally visited this ramen shop that serves only salt ramen, even though I've tried their soy sauce and dried fish ramen before. The shop is always crowded, but the turnover is fast. The shop is small with an open kitchen, so you can feel the energy up close. The atmosphere and vibe are unique and delightful! You can see ingredients like chicken wings, chicken feet, whole chicken, and bones sticking out of the pot right in front of you. The salt ramen that arrived had a clear soup with a generous slice of pork. The broth looks clear, but the taste is rich like a white broth. The salt flavor is smooth and well-balanced without any harshness. The blend of gentle saltiness and the bold flavor of chicken is unparalleled here! The homemade thin noodles are supple and soak up the soup well, creating a blissful moment in your mouth. The pork slices are cooked at low temperature, with both lean and fatty cuts. Recently, I've been really into exploring different ramen shops. This time, I visited the popular restaurant "Shibata." I've been curious about this place for a while, but due to its location, I never took the step to go there. I have no connection to Sengawa Station at all (bitter smile). By chance, I ended up visiting this time and arrived about 30 minutes before opening, with a wait of 6-7 people. I was prepared for a long line, but it wasn't that bad. In front of the counter seats, there was Shibata-san, with a distinguished beard as his motif. He seemed calm and composed. I ordered two items and shared them with my child. The special Chinese soba... a soup specially blended by Shibata-san with multiple chicken broths and various soy sauces. It had a distinct strength and occasionally a refreshing and gentle flavor that passed through, creating an indescribable deliciousness! The noodles were thin like somen, smooth yet not too soft. The tender chashu made of loin and belly pork, wonton, and flavored egg were included. The special salt soba... a salt soup with an extreme richness and no off-flavors. It was so good that you'd want to keep drinking it forever, making you think it could even work for a hot pot broth rather than just ramen! It was on par with the soy sauce version, also an excellent bowl. The toppings were the same as the soy sauce version. Wow, I was truly moved!! Despite the heat, I felt that it was a ramen shop worth visiting.

The restaurant has high hurdles with its regular holidays on Wednesdays and Sundays, but I decided to visit as they mentioned being affected by Monday holidays as well. I got off at Sengawa Station for the first time, and the area around the station was quite lively. The restaurant itself is a bit far from the station, so you might get a little lost if it's your first time. I arrived in front of the shop before 12 o'clock, and there were about 6 people waiting in line. After about 15 minutes, the line had grown to about 15 people, so I might have timed it well. I ordered the special Chinese noodles and mixed rice. The biggest surprise this time was the soup! The soup, which I personally loved, had a strong flavor of chicken broth and umami, and I was able to drink it up easily with a solid taste and a refreshing aftertaste! The char siu, wonton, seasoned egg, green onions, and bamboo shoots were all of high quality as well. Anyway, the soup might have been my favorite recently. I want to try the salt ramen too, but it's quite far away...

On a Saturday in September at 1:30 PM, I was the 6th in line. I waited outside for about 10 minutes, but entered smoothly. It still feels less crowded compared to the colder seasons. The soup was amazing as always! The chashu was large, tender, and moist. A few years ago they used Sanpoya noodles, but now they use homemade noodles.

It was my 191st bowl in 2023! I visited a nearby famous ramen shop that I had never been to before because it was a holiday! I visited three shops on this day. It was surprisingly easy to get there, just a few minutes by bus from Seijo Gakuen Mae, which is only 3 minutes from the nearest station on the Odakyu Line! It's convenient to arrive at the bus stop right in front of the shop haha. I arrived at 10:50 and was the 11th in line, so the turnover was quick, and I got my bowl at 11:25! The noodles were thin straight noodles made in the shop's noodle-making room, cooked to a soft texture. It's been a while since I had such soft thin noodles, and they were delicious! The soup had a strong chicken flavor with a perfect balance of soy sauce, so tasty! The combination of different soy sauces with brand chicken was great♪ The chashu was large, 2 slices probably from 2 types, and both were incredibly delicious. It's better to eat the rare chashu before it absorbs too much heat from the soup! The menma was thinly sliced with a good texture and flavor, my favorite type! The green onions were a nice accent!

Arrived at 18:55 on a weekday, had to wait for 5 people ahead. Seated after a 20-minute wait, served the dish 5 minutes later. Ordered the "Wonton Ramen (1350 yen)". The soup had a slightly strong soy sauce flavor, supported by a rich oiliness. Though it felt a bit salty, it was undeniably delicious. The moist texture of the pork chashu, when soaked in the soup, offered a blissful taste. The wontons were freshly wrapped and boiled upon ordering, leaving a satisfying meaty impression. However, the noodles... weren't quite to my liking. I believe they were homemade, but they were extremely thin and slippery like somen noodles. They tended to become too soft and mushy as I ate. Chukasoba for 1,100 yen. This super famous restaurant won 1st place in the ramen division of the Tabelog rankings in Tokyo in 2019. Known as "Shibata" when it comes to soy sauce ramen. I was lucky to find no line during lunchtime on a weekday, so I hurried to a nearby coin parking lot. I was blessed with good luck to be able to eat Shibata's ramen without waiting. The food rack includes simple toppings like chashu, menma, and green onions. The soy sauce soup with a strong chicken flavor pairs perfectly with the yuzu shichimi on the table, making it a must for changing the taste in the latter half. Along the Keio Line alone, there are many famous ramen shops in Sengawa, Shibata Tsutsujigaoka, Shibazakitei Kokuryo, Kumao, Ishikawa-ya Chofu, Takechan, Boshiramen Nishi Chofu, Ichiban Dashi Ramen Shin Sen, and Neko to Tsuki Chofu.

Arrived at 10:54. It had been a while since my last visit, and I lined up behind 6 people waiting outside. I was able to get a seat at the 8-seat counter on my first try. I purchased a meal ticket with the help of the staff and brought my own water to the table. I was aiming for the tsukemen, but it was no longer on the menu, so I decided to try the shio ramen, which I hadn't had before. I sat down at 11:03. Ordered the Special Shio Ramen for 1450 yen with extra noodles for 180 yen. The ramen was served at 11:14. The thin noodles were neatly arranged on top of the soup, with 3 slices of chashu, seasoned egg, 2 wontons, menma, white and chopped green onions. The chicken-based soup was mild and had a sweet taste, very delicious. The noodles were thin and slightly soft, but had a satisfying texture. The chashu, seasoned egg, wontons, and menma were all delicious and comforting. Everything was well-balanced even with the salt flavor, it was wonderful. After finishing the meal and stepping outside, I was pleased to see a line of over 10 people, showing the unchanged popularity of the restaurant.

After a 5-year absence, I visited the restaurant to buy ramen as our stock of frozen souvenirs had run out. I arrived at 13:31 with 5 people waiting. Entered at 13:46. Served at 13:50. I had the "Ajitama Chuka Soba" for 1,250 yen. The first sip of the soup was dramatically impressive! It was delicious as always. The balance between chicken and soy sauce was quite good. The chicken oil may be a bit strong, but surprisingly it was light. The thin noodles went down smoothly like somen. The seasoned egg was rich and flavorful, truly delicious. My daughter had the "Char Siu Chuka Soba" for 1,450 yen, but she found the pork belly a bit tough and hard to bite through. It was disappointing that they are currently not offering souvenir ramen, as that was my main purpose for the visit, especially since it takes over an hour to get there from home. I wish they had announced this on social media. Nevertheless, it was an incredibly delicious ramen. Thank you for the meal.

Arrived around 12 PM on Friday, waited with 8 people, first time visiting Shibata in a month and a half♪ It's my first time visiting on a weekday afternoon, is it because of the influence from the recent popularity of Ravitto, or is it because a typhoon is approaching? Either way, I'm happy to be able to get a seat with an 8-person wait for this delicious food. Was seated in about 20 minutes, and my dish arrived in about 5 minutes. As always, the taste was unbelievably delicious. I planned to buy some souvenir ramen to take home, but unfortunately, they were sold out.

I finally visited a restaurant that I had been curious about and had high ratings on Tabelog. I managed to find parking at a coin parking lot during a break from work. I arrived around 11:30 and there were about 10 people waiting in line. The restaurant had 8 seats, but the turnover rate was good! I ordered the shoyu ramen, which was beautifully presented. The taste was a classic shoyu ramen – quite gentle and pleasant.

Special Chinese noodles: 1,480 yen. From the end of May, they changed from duck to shredded chicken. Hmm, even though it's different, can't really complain. But it's a bit sad to not have the lingering taste of Shibata on the way home. Rating on Tabelog: 3.95 (self-standard 4.5 for Tengoku ya, 4.0 for Meiten ya, 3.5 for Hutuu ya, 3.0 for Zannen ya).

I drove to the restaurant. There is a Mitsui Repark nearby. We arrived around 11:20 on a weekday. There were 7-8 people in line, and we waited for about 10-15 minutes. Two of us entered, and my companion ordered the special ramen while I ordered the ramen with flavored egg. The noodles were thin and the soup was delicious. The char siu (roast pork) was also very tasty. My companion liked the char siu as well, but thought the soup was a bit oily. The souvenir char siu trimmings cost 300 yen.

My name is World Wide Schwarz Nessie XVI. Nice to meet you. The restaurant I want to review this time is "Chuka Soba Shibata." The nearest station is Sengawa Station. It's a bit far from the station, about a 10-minute walk from Sengawa Station. I arrived at the restaurant around 7:30 PM. There was no line, so I was able to enter immediately, but the inside of the restaurant was almost full. There was a bearded owner with glasses that ramen enthusiasts may have seen in magazines or online. I ordered the Ajitama Chuka Soba with extra noodles. The price was 1380 yen. The ramen was served in about 5 minutes. The large slices of chashu were impressive. The soup had a gentle taste that allowed you to directly feel the umami of the chicken, and it was simply delicious. It had a slightly sweet flavor, with a strong umami and depth, allowing you to enjoy the aftertaste even after finishing the soup. Since the soup was delicious, I drank it all. The noodles were thin straight noodles with a soft texture, almost like somen noodles. There were two types of large chashu, one was tender and melted in the mouth, with a good sweetness from the fat. The other chashu had a moderate elasticity, a moist texture, and a smoky flavor that seemed to belong to a tonkotsu ramen. When chewed, the umami overflowed, providing a juicy taste. Since each chashu was completely different, I was able to enjoy the goodness of each. The ajitama was soft and jiggly, with a semi-soft and sweet taste inside. I was able to finish it all even with the extra noodles. Overall, I thought it was a high-level ramen, but personally, I didn't prefer the softer noodles like somen. I prefer noodles with a firmer texture, but maybe soft noodles go well with this type of soup. I initially thought the owner with glasses and a beard looked intimidating, but he turned out to be friendly and kind. I arrived a little after 11 PM on a midsummer Monday. There was no line, so I entered the restaurant without waiting. It's relatively empty in the summer compared to winter. The food was delicious today too! The soup was rich. I purchased a 180g chopped chashu for 300 yen. The expiration date is the day after purchase. It was vacuum-packed in about six pieces.
