Regular visit. I had "Chinese soba + hand-kneaded noodle change" at "Chuka Soba Charumee" located on the 1st floor of Maruei Building EAST, 2-1-4 Hagi-naka, Ota-ku, Tokyo (880 yen + 50 yen = 930 yen). I changed the noodles to thick hand-kneaded noodles. It costs an additional 50 yen. It came with two types of pork and chicken chashu, green onions, menma, spinach, and seaweed, looking delicious as always! This is my 15th visit to Charumee. I arrived at the restaurant at 2:30 pm on a holiday and there was no wait. When I arrived, all the rice dishes were sold out, so if you want to eat, it's better to come early. I visited this restaurant for the first time at the request of my family. It's not far from Keikyu Kojiya Station, and I thought it faced a main street, but it was actually around the corner where a line had formed. We lined up around 1 p.m. on a Sunday and were about 10th in line. You can sit on chairs until you reach the top 3 spots. It took about 30 minutes until we reached the front of the line. We purchased meal tickets at the vending machine and chose the special soy sauce-flavored ramen for 1200 yen. The vending machine accepts new 500 yen coins. I wasn't sure what was in the special ramen, so I thought it would include wontons, but it didn't. Other customers were ordering wonton ramen with seasoned egg toppings, etc. I see, you can also change to hand-kneaded noodles for an additional 50 yen. After taking a sip of the soy sauce-flavored soup, I was like "Ahh! This taste is nostalgic." I finished every last drop of the soup. I visited a ramen shop called "Chukasoba Charume" in Kojiya this time. The owner, who trained at "SORANOIRO," a well-known ramen shop among ramen enthusiasts, opened "Chukasoba Charume" in 2019 as the first officially recognized branch of "SORANOIRO." The name "Charume" comes from the owner's nickname, which means "not mature enough to be called Charumera." The Special Chukasoba costs 1200 yen. The toppings include three types of pork and chicken chashu, greens, menma, seaweed, flavored egg, green onions, and naruto, all generously served, almost covering the noodles. Luxurious! The soup seems to be a mix of seafood and chicken, with a well-balanced and deliciously flavorful broth where neither flavor overpowers the other. It has a classic yet somewhat modern taste. The chashu slices are thick, with the pork being fatty and meaty. My favorite was the moist and crispy chicken chashu. I came from Haneda Airport Station to Kojiya Station and it was a short walk. It was a little past 11 o'clock, but there was already a line. I got in within 10 minutes, but there was a line behind me. The interior of the restaurant is not spacious but clean. The atmosphere of the couple running the place is very good. Even just looking at the ramen, you can see the beautiful craftsmanship. It looks delicious even before you eat it. By the time you come here, it starts to look like a piece of art. I waited for about 15 minutes before getting a seat at the bright restaurant with an L-shaped counter for 9 seats. I ordered the special soy sauce ramen. The soup had a very gentle flavor with a hint of chicken and seafood. There were some charred green onions floating on top, adding a nice touch. The first sip was refreshing, but the taste was smooth and rich. The medium-thin noodles matched the soup perfectly. The chashu, including chicken chashu, was very delicious with 4 slices. The simple and genuine taste, where each element seems to be carefully crafted, truly conveys the essence of the restaurant's name, "Charme." Thank you for the meal.

I arrived at 11 o'clock and was able to be seated immediately with 4 customers already there and no waiting outside. After that, 4 more people came in and it became full, so the timing was good! The ticket was for the special Chinese soba, and it seemed to be run by a couple who made each bowl carefully and efficiently. The mazesoba of the person in front of me also looked delicious. My special Chinese soba arrived. Topped neatly with toppings and thin noodles, I first tried the soup. It's soy sauce-colored but not too strong in soy sauce flavor, with a bit more fragrant oil, making it a bit rich. Maybe it's burnt onions? It has a good depth and goes well with the soy sauce soup. The interior had a kitchen surrounded by an L-shaped counter with about 9 seats. I ordered the "Special Salt Chuka Soba" (1200 yen). The visual presentation of the ingredients and the amber-colored soup was beautiful! The broth, made with chicken bones, bonito flakes, dried sardines, kombu, and aromatic vegetables, was clear and clean with no hint of impurities. The balance of saltiness and richness was excellent. It was incredibly delicious! The soup, which was smooth and flavorful, made me want to slurp it repeatedly. The noodles were moderately straight and thin, with a soft yet chewy texture that felt great in the throat. The flavor was also excellent. The basic ingredients included 3 types of chashu, spinach, chopped green onions, menma, seaweed, and flavored egg. The lineup of chashu was fantastic!
