I went to "Hinokizaka" located on the 45th floor of The Ritz-Carlton Tokyo for a celebratory lunch on a special day. The hotel, located on the upper floors of a high-rise building, is luxurious and offers a great view!! The elegant and sophisticated atmosphere is very calming. The service at this lovely hotel is impeccable down to the smallest details. At Hinokizaka, you can enjoy teppanyaki, kaiseki, sushi, and tempura. It seemed like the eating location varied depending on the dish. This time, we ordered the Teppanyaki Hisui course for 11,500 yen, which included dishes such as Green eggplant and loofah with octopus in Tosazu jelly, Sweet and spicy fried Manjuya pepper, Sauteed sea bream with burnt butter sauce, Fresh salad with sesame dressing, Black wagyu beef fillet steak 60g, Seasonal grilled vegetables, Garlic rice, Miso soup, Pickles, and White coffee blancmange. The beautifully presented dishes were not only visually appealing but also delicious. The well-maintained teppan, carefully crafted dishes, and attentive service made for a truly satisfying experience. It was a fitting restaurant for a celebration! The green eggplant and loofah were served with a tangy dashi jelly and myoga, providing a refreshing taste. The chewy texture of the octopus added a nice touch. The sweet and spicy fried Manjuya pepper included dried young sardines and had a sweet yet robust flavor, making even a small portion satisfying. The sea bream was served with a burnt butter sauce. The skin was crispy and fragrant, while the flesh was tender and flavorful. The yellow sauce was made with grated zucchini and kombu dashi, resulting in a smooth and sweet sauce with a pumpkin-like flavor. The organic vegetable salad was a palate cleanser with a slightly bitter taste complemented by sesame dressing. The black wagyu beef fillet steak was cooked medium-rare and served with a variety of condiments such as Suzu salt, Cambodian black pepper, real wasabi, miso, soy sauce, ponzu, and sweet chili sauce. The steak was tender with a satisfying umami flavor. The garlic rice, made with onions, beef, shiso, and egg, had the perfect amount of oil coating the rice, giving it a fluffy texture. The crispy garlic chips on top added a flavorful touch. The creamy egg mixed in well, creating an elegant and fulfilling taste. For dessert, we had white coffee blancmange, which was sweet and firm. The chestnut paste on top was also delicious. All the dishes were delicious, and the ambiance of the restaurant was excellent. It was a wonderful experience to enjoy the elegant atmosphere and savor the dishes in a sophisticated manner, making it a memorable day.
