Located in Shibuya and founded in June 2006, "Ramen Nagi BUTAO Shibuya" is the first self-operated store of the well-known ramen chain "Ramen Nagi" that has expanded globally. The starting point of "Nagi" was in Golden Gai in September 2004, initially operating as a subleased store until March 2006. After that, it reopened in Golden Gai in March 2008 with its own store, and has been thriving since then. The location is about an 8-minute walk east from Shibuya Station South Exit, slightly off the main street with a ticket machine outside.
The Shibuya store is known as "BUTAO (Pork King)," a brand of tonkotsu (pork bone broth) ramen that is also available internationally. While "BUTAO" was briefly offered at Golden Gai Shin-Kan and Omiya stores in the past, currently only the Shibuya store serves "BUTAO" in Japan. Customers can customize the richness of the flavor and the firmness of the noodles when ordering. Additionally, they can choose from four types of oil:
- Pork King (Normal)
- Black King (Charred garlic and squid ink)
- Red King (Chili oil)
- Green King (Olive oil with basil and cheese)
Upon entering, there are a few counter seats and tables in the back. Condiments like pickled ginger, mustard greens, garlic, and sesame are available on the table. The "Ramen" costs 790 yen, and the recommended option is the normal "Pork King" with regular fat. The dish comes with two slices of pork, plenty of green onions, wood ear mushrooms, and a spicy sauce, making it luxurious even in its default state.
The soup, which was frothy, is rich in pork umami and sweetness. It has a silky base but is perfectly balanced with high-quality lard and sauce. The noodles are homemade straight ultra-thin noodles, low in water content, giving them a chewy texture that complements the soup well. The two large slices of pork shoulder are tender and substantial, adding to the overall satisfaction of the ramen. The generous portions of green onions and wood ear mushrooms are also commendable. The mustard greens on the table are quite spicy.
As a brand that expands internationally, the "BUTAO" ramen at this restaurant is flawless in terms of completion. Despite being a bit far from the station, the value for money is excellent.
