It was a Saturday, and as a solo customer, the only option available was the weekend special course priced at 8,800 yen for 7 dishes. The sake was priced per 60ml or 90ml, which I found to be on the higher side personally. It might have been more economical to add a drink-all-you-can plan. Below are the sake pairings that I came up with on my own. The first dish was an assortment of 3 appetizers including minced whelk with wasabi, kelp with roe, and cheese with pine nuts, among others, rated 4 stars. I paired this with Yukinoume (junmai) 60ml, 520 yen, which had a refreshing taste and was rated 4+. The second dish was 2 sashimi selections: bonito and sea bream. The sea bream was aged to a soft texture in the Kanto style and was to my liking. The bonito was also well-balanced. I paired this with "Ski Masamune - Hana" 90ml, 1340 yen, which was not a junmai. It was easy to drink and rated 4++. The third dish was grilled blackthroat seaperch with a crispy skin and juicy, fatty meat, seasoned perfectly with salt, rated 5. I paired this with Echigo Koshihikari - Special Junmai - Spring Water Brewed 90ml, 850 yen, which was dry and paired perfectly with the fatty fish. The fourth dish was a light Niigata-style simmered dish called "noupe" soup, with a flavorful yet light broth, resembling a high-end version of the traditional dish, rated 4+. I decided to pair this with a hot sake, Echigo Oyaji 90ml, 660 yen, which complemented the lightness of the soup, rated 4++. As a gift from the restaurant, I received a taste of "Ryoko" (junmai daiginjo sake, unfiltered, live), a sweet and fruity sake that paired well with dessert. The fifth dish was a salt koji minced cutlet, which was surprisingly delicious, rated 4++. I paired this with Sotendaibou - Gaiden - Dry Junmai 60ml, 440 yen, which was dry and refreshing, complementing the fried dish. The sixth dish was a crab hot pot rice dish made with snow crab, which was delicious and rated 5. The rice, made from Niigata's Koshihikari variety, was exceptionally tasty. I paired this with Kimi no I - Yamahai Junmai Ginjo BY27, 90ml, 850 yen, which had a strong yet balanced flavor that paired well with the crab dish. The seventh dish was a black sesame ice cream for dessert, which was flavorful and not too sweet, rated 4. I paired this with the leftover unfiltered sake from earlier, which was a great match. In total, the bill came to 14,696 yen including tax. The dishes were all well-prepared by skilled chefs, and the service was efficient with attentive staff. The counter seats were spacious and comfortable, although I found the chairs to be too low, bringing the food too close to eye level.
