I had some business to attend to on Heiwajima, and since it was getting late, I decided to have dinner somewhere before heading back. I searched for nearby restaurants on Tabelog and found that "Ramen Tei Hinari Ryuoh," part of the Waugh Group, located two stops ahead at Ume-ya Shiku Station, had high ratings. I arrived at the restaurant at 6:32 PM and there was no line, so I went inside.
Upon entering, I saw that there were customers already seated, but there were empty seats available. I checked the menu on the ticket machine and bought a ticket for the "Special Soy Sauce Ramen for 1,400 yen." I then sat at the counter and handed over my ticket, waiting for my order.
At 6:38 PM, the Special Soy Sauce Ramen arrived. It was filled with ingredients such as flavored egg, two slices of low-temperature cooked pork shoulder cha-shu, medium-temperature cooked pork shoulder cha-shu, hanging grilled cha-shu, chicken thigh cha-shu, wontons, bamboo shoots, seaweed, chopped green onions, and more. The soup was carefully prepared using a blend of various shoyu sauces cooked in-house with precision calculated extraction times for vegetables, premium pork, and dried ingredients. It had a deep and rich flavor, although I personally found it a bit salty.
The homemade medium-thick, wavy noodles were chewy and smooth, matching well with the soup. The low-temperature cooked pork shoulder cha-shu was moist and flavorful, while the medium-temperature cooked cha-shu had even more meaty goodness. The hanging grilled cha-shu was also delicious, and the chicken thigh cha-shu was tender and juicy. The wontons were ginger-flavored, with a smooth and juicy texture. The flavored egg was perfectly runny and delicious.
Overall, it was a satisfying meal, and I left the soup unfinished but cleared my plate. Another delicious meal tonight. Thank you!
