I recently visited "Hiyoko," which is often featured in the "Umitsuru Gurume Guri" that I am currently enjoying. It is a restaurant that mainly serves chicken dishes, but they also put effort into serving horse sashimi and kalbi. Each table has a shichirin grill, and you basically grill the food yourself. Not knowing what to order for my first time, I decided to go with the top four popular items listed on the board. 1) Tsukune - The tsukune is served in a bamboo container, and you grill it yourself. The carefully made and fragrant tsukune was very delicious. 2) Gun Tori Bone-in Thigh - The restaurant grills this for you. You can tell they use high-quality chicken meat. 3) Matsuba - Crispy and delicious. It's well-seasoned, so it's tasty enough even without adding salt. 4) Carpaccio - Surprisingly, even the vegetables are delicious. The chicken inside doesn't stand out much, but it's a refreshing and tasty dish. Overall, everything was delicious, and I couldn't help but keep saying how tasty it was throughout the meal! Additionally, I ordered the Nekku (chicken breast sashimi) and Tori Zosui (chicken rice porridge). The draft beer is cheap at 380 yen, and the oolong tea is reasonably priced at 250 yen. However, since the staff is busy serving all the customers, it can be challenging to place orders. They even forgot my order of draft beer, and I had to remind them three times. The restaurant is quite popular, so I recommend making a reservation or arriving at 6 PM to avoid the rush.

The chicken cuisine restaurant "Hiyoko" in Higashi-Maizuru, Kyoto Prefecture. I recently discovered this place thanks to a colleague and have visited 3 or 4 times. They specialize in dishes made with gamecocks, offering a variety of cuts for grilling and sashimi. You can grill the meat on a shichirin grill at the counter or on a hearth at the table. Not only the chicken but also the side dishes are delicious. They have a wide selection of shochu. If it were closer, I would love to visit this place once a week. Since the seating is limited, it's safer to make a reservation, especially on weekends. My favorites are the matsuba (tongue?), tsukune, and kimchi porridge.
