Located a 3-minute walk from Kamata Station, Hissui is a popular ramen shop with a rating of 3.77 on Tabelog. I visited the shop for the first time in January 2023. Arriving on a clear weekday evening at 7:50 pm, there were 4 people ahead of me in line. Although the shop closes at 8:00 pm, if you arrive before then, you are likely to be served. I ordered the Special Ramen for 1200 yen, which is one of the top left menu items on the ticket vending machine. The first sip of the soup brought a smile to my face - it was delicious. The soup had a relatively generous amount of chicken oil floating on the surface, with a strong flavor of both pork and chicken. The broth was well-balanced and flavorful, a result of careful preparation. The noodles were medium thick and slightly curly, cooked to a relatively firm texture. The toppings included two types of chashu, seasoned egg, and komatsuna (Japanese mustard spinach). The smoky chashu was excellent in both texture and taste. Overall, I found the ramen at Hissui to be delicious as always. The combination of robustness and refinement in the soup, along with the smoky chashu, was particularly outstanding. If the shop were closer to my home, I feel like I would be a regular customer.

Special ramen for 1,300 yen, Rice for 100 yen, Flavored egg for 200 yen. I traveled from Kumamoto to Tokyo. I arrived at Haneda Airport and took the Keikyu train to Keikyu Kamata Station. From there, I walked for about 15 minutes towards Kamata Station. I arrived 30 minutes before the opening. There were already 2 people waiting ahead of me. The store had seating for over 15 people. I purchased a meal ticket from the vending machine and sat in the order of arrival. I ordered my preferences when handing in the ticket. I ordered the noodles to be firm. The soup was rich but not heavy, and very tasty. Next, I tried the noodles. They were short noodles made by Sakai Seimen. They were delicious! Towards the end, I added ginger and doubanjiang, and enjoyed the seaweed and char siu soaked in the soup with rice. I enjoyed every last drop. Thank you for the meal.

Delicious. It's always clear that there's about a 30-minute wait in line. If you can experience this quality with a 30-minute wait, it's actually worth it. The richness of the soup pulls the flavor and continues in your mouth. The noodles are thick and satisfying to eat. Above all, each topping is really delicious. The char siu, despite being thinly sliced, has the flavor and richness of grilled meat. The flavored egg is half-cooked, allowing you to taste the rich flavor of the egg and bring out the taste of each ingredient. They must be using good quality ingredients.

I decided to eat ramen in Kamata and went to Hissui. I was surprised to see a long line even after 3 PM! First, I lined up and bought a meal ticket from the staff, then purchased my meal inside the restaurant and lined up again to wait for my turn. When my turn was near, I told them my preferences for noodle firmness, soup flavor, and oil amount and handed over my meal ticket. When I sat down, I was pleased with the short wait time until my meal was served. I asked for a lighter flavor, but the rich soup still had a satisfying taste. The balance between the amount of noodles and the soup was good, and the seaweed and komatsuna served as accents, keeping me from getting tired of the dish. It was very delicious. Congratulations on the grand reopening! I've been waiting for this day for so long - finally got to try it out! Waited in line for about an hour during Saturday lunchtime, but it was worth it. Buying the meal ticket in advance and the guidance from the staff were smooth. The interior of the restaurant is stylish and has a calming atmosphere. I ordered the special ramen with extra komatsuna (Japanese mustard spinach) on the side. The komatsuna was served separately on a plate, which I personally appreciated. The tonkotsu shoyu broth was packed with all the flavors I love. I could have easily finished the whole bowl of soup - it was that delicious! The noodles were cooked perfectly - not too soft or too firm. The char siu pork was so tasty that I couldn't stop chewing. And the nori (seaweed) was divine! The aroma, the texture when dipped in the soup, everything about it was just perfect. I now understand why my friend highly recommended this place. This bowl of ramen was simply perfect in every way and I can't wait to recommend it to others. Thank you for the wonderful meal! 🍜🙏

"Ramen priced at 900 yen with an extra 100 yen for a larger portion. This is my 285th bowl in 2023 (5th time). The ramen was served in 12 minutes, on a weekday at 13:27, with a wait of 2 people. The restaurant has undergone a complete renovation, creating a spacious and stylish atmosphere. The option to choose the type of meat has been removed, with some prices increasing. The new bowls are a fresh start for the restaurant. Today, the noodles from Sugi Seimen are perfectly delicious with their flat texture. The soup, loved by all ages, is the best in Tokyo. In addition to chicken, there was some mysterious char siu mixed in. It's a bit disappointing that the komatsuna only had stems and not enough quantity. Thank you for the meal!"

The table height seems to have changed to a more comfortable height than before. The consistently high-quality tonkotsu soy sauce soup. The noodles, which are easy to eat in length, are ordered firm and fit just right. Toppings are now served on a separate plate, allowing for adjustment to the eater's timing and preference. The bowls have also been replaced with new ones, evolving into a higher level of restaurant, with great expectations for the future.

The taste was a bit vague, not as sharp as I expected for a house-style ramen. It was delicious, but the lack of sharpness made it less outstanding. The chashu and seaweed were extremely tasty, with a strong smoky aroma on the chashu and a good fragrance on the seaweed. The seasoned egg was the usual maximum flavor egg, with a rich yolk that was delicious. Adding ginger or vinegar as accents improved the overall taste significantly!

Today, I had the special ramen with rice at "Ramen Hiki (Hii-ki)" located at 5-2-5 Kamata, Ota-ku, Tokyo, which reopened after renovation on September 18, 2023. The total cost was 1400 yen (1300 yen for the ramen + 100 yen for the rice). The bowl now has the name of Hiki on it. The rice is a must-have for the house style ramen. The special ramen comes with 5 extra seaweed sheets, 2 slices each of thigh and belly chashu, and 1 flavored egg. The soup had a slight hint of pork smell this time. Hiki had been closed for renovation since August 21st and reopened today on September 18th. This was my 7th visit to the restaurant. The storefront now has an outdoor air conditioner unit installed, and the sliding door has been replaced. Inside, there are 8 counter seats just like before. The ticket machine has been updated, and some menu items and prices have changed. The menu includes ramen, flavored egg ramen, special ramen, chashu ramen, rich chicken broth soba, spicy chicken broth soba with mustard and sansho pepper, and rice. The condiments on the table remain the same. The special ramen I had was ordered as normal for everything. The noodles are the same thick, short, low-water, flat noodles from Sakai Seimen. The chashu, made of thigh and belly, was tender and delicious. The soup, although slightly more porky than usual, was still rich, well-balanced, and tasty. I went to "Ramen Hiiki" in Kamata. Ramen Hiiki consistently ranks high in the tonkotsu division of TRY (Tokyo Ramen of the Year). It has been listed in the Tabelog Top 100 from 2019 to 2021, with a Tabelog rating of 3.81, making it the number one in Tokyo for house-style ramen as of August 20, 2023. It is known as a new generation of house-style ramen that does not identify itself as such. I had been wanting to go there for a while, but they were going to be closed for a long renovation starting on August 22, so I decided to visit before that. It's about a 4-5 minute walk from JR Kamata Station. I arrived around 4:30 PM on a Saturday and was second in line. It didn't seem too crowded for the evening. By the time I entered, there were about ten people waiting. The interior of the restaurant is clean, and the service is good. They thanked the regular customers saying "thank you as always." It seems like they have quite a few regulars. I ordered the "Momo Ramen" for 900 yen and an additional seasoned egg for 150 yen. When I handed over the food ticket, they asked about the firmness of the noodles, the richness of the flavor, and the amount of oil, so I chose everything as normal. The soup does have a unique taste of house-style ramen, but it feels refined. It's a guilt-free kind of taste. You can drink the soup easily. The noodles are the familiar Sakai Seimen noodles for house-style ramen. They are medium-thick and short, with a chewy and delicious texture. The toppings include seaweed, chashu, spinach, and egg. The chashu is thin and tender but has a good bite to it. The ramen itself is not very filling, and many people were ordering rice, which may be necessary for house-style ramen. There are condiments on the table like chili, ginger, and garlic, and adding them changes the taste dramatically to a more junky flavor, which is delicious! This would be amazing with rice. It's been a while since I had house-style ramen, but it was delicious! I slightly regret not ordering rice. There is little to no odor, making it easy for those who are not used to house-style ramen to enjoy. If you're in Kamata, I highly recommend trying this place.

I visited for lunch! There were about 7 people ahead of me, but as I waited, the line kept growing and eventually there were about 15 people in line. Truly a popular spot. My expectations are high! But it's hot... The system is to buy a meal ticket in advance and then line up. I tried the special ramen with extra seaweed and a side of rice. It took about 40 minutes to get in and about 10 minutes to be served. The presentation is beautiful! First, the soup. It's not too salty, mild and easy to drink. Personally, I prefer a soup with a stronger punch, but this one is delicious. The noodles are medium thickness straight noodles from Sakai Seimen. They were cooked a bit on the softer side. The chashu pork is four large slices, tender and juicy. Delicious! Dip it in the soup and slurp it up with the noodles for a satisfying experience. The soup is mild, so I didn't really need the rice. I got a medium portion and ended up stuffed. The staff were cheerful and the atmosphere was pleasant. It's a shop with a different charm from the typical family-run ramen places. Char siu ramen + cabbage renovation I visited the shop before it closed for renovations☆ Even after 2 pm, there was still a line, showing how popular this place is. Today's soup was exceptionally delicious. It perfectly balances the junkiness of a home-style ramen with a touch of elegance, making it truly unique. This time, I added ginger halfway through and vinegar towards the end, which was a great success. I might make this my new routine. I like all the char siu options, but I especially love the smoky pork char siu. It would be great if they sold it separately for takeout.

I started lining up at 11:20 and entered the restaurant 30 minutes later. Many people were ordering rice, but I didn't because they didn't have Chashu Don. I regret not asking for it because there was a lot of Chashu on the ramen. The soup was just the right thickness and I didn't get tired of it until the end. The taste changes with garlic and ginger, which I liked. Especially when I added ginger, it reminded me of the ginger ramen at Jimbocho Menya Biku.

Waited for about 50 minutes under the direct sunlight before finally getting in. Opted for the special dish. The char siu here is truly delicious. The soup is not too salty, with an elegant finish. JR Kamata Station East Exit is just a 3-minute walk away. There is a sophisticated ramen shop that does not claim to be a traditional family-run ramen shop. Recently, it has been gaining popularity and is now the highest-rated restaurant in the Kamata area (3.81 on Tabelog). I'm not a big fan of traditional family-style ramen (it's too heavy and makes my stomach feel heavy), but I decided to give it a try. I arrived at the restaurant at 10:23 and thought it might be crowded since it's during the Obon holiday, but I was the second in line, surprisingly there wasn't much of a line even at this early hour. By the time the restaurant opened at 11:00, there were 15 people waiting. The sun was harsh. The restaurant only has a counter with 8 seats. After the opening, I purchased a ticket in order. I ordered the Special Ramen for ¥1200 (with 2 slices of pork belly, 2 slices of pork shoulder, seasoned egg, seaweed, and greens). It's a bit expensive for a family-run ramen shop, right? Since it seems different from the usual family-run ramen, I decided to keep the noodles, flavor, and fat levels normal. The noodles were served firm and arrived in about 8 minutes. The impact of the pork slices was amazing. There were only seasoned egg and seaweed on top, while the greens and noodles were hidden underneath. The noodles were straight flat noodles from Sakai Seimen. They were short and bumpy, but they were quite tasty. Although there was no slurping sensation. The soup was delicious! It had a mild flavor that was unexpected for a family-run ramen shop. The taste of the soup itself was typical of a family-run ramen, with a hint of the traditional smell, but it was a refined and refreshing soup. It wasn't overpowering and I could keep drinking it. The flavor was just right. I think it's best as it is. Towards the end, when I added the garlic, ginger, and spicy condiments on the table, the flavor became stronger and a bit salty. The pork slices were delicious. The pork shoulder was good, but the pork belly slices were fantastic. They had a smoky aroma that was delightful. The seasoned egg had a nice creamy texture and a bright orange yolk. Among family-run ramen shops, this may be my favorite. I could enjoy it without feeling heavy in my stomach. By the time I was satisfied and ready to leave, there were 19 people waiting in line. The ramen level in Kamata is definitely improving.

I visited a refined ramen restaurant around 6 pm. There was a line of about 6 people outside. I ordered the special ramen with rice. The ramen arrived quickly after entering the restaurant, which was efficient. The soup was mild and full of flavor, easy to drink until the end without getting tired. It didn't need any additional seasoning. The noodles were slightly short, but they paired well with the soup and were easy to slurp, making it easy to eat. I soaked the seaweed in the soup and enjoyed it with the ramen rice. The rice was cooked just right, not too soft or too hard, perfect for ramen rice. The first bite of the meat was impressive and flavorful. However, the special ramen had a large portion of meat, which made me feel a bit full towards the end. I was really impressed by the high level of completion. I think I will be able to fully enjoy the regular ramen with rice next time.

We arrived at the restaurant and lined up in order, as waiting for a representative was not allowed. There were about 15 people in line, but the turnover rate was good so we were able to enter in about 40 minutes. We were instructed to buy meal tickets while waiting in line. This time, I ordered the special ramen. There were 8 seats at the counter, and even if you have a child, you have to order at least one ramen. Since there were no available seats, it was okay for a child to sit on a lap when sharing a ramen. We were provided with small plates, which was a very thoughtful gesture. The ramen allowed you to choose the firmness of the noodles, the amount of flavor, and the amount of oil. When the ramen arrived, the soup had an elegant taste typical of a house-style ramen. My wife, who doesn't like strong pork flavors, found this ramen to be mild and easy to eat. The thinly sliced chashu, cooked at a low temperature, blended well with the soup, creating a smooth and flavorful experience. It was a very delicious ramen. Thank you for the meal.

I wanted to eat ramen from a certain shop in Kanamachi, but I couldn't make it in time, so I ended up coming here. Today, the soup was not rich or elegant, but rather weak. The soup had no depth of flavor, and the firm noodles I ordered didn't go well with it, making the noodles stand out in a bad way. I've noticed this in other shops too, but I don't think tonkotsu ramen and chashu go well together. However, the soup here is quite minimal. The bowl's shape seems to be designed to have less soup. Even without drinking much, I found the soup to be lacking at the end.
