I have been visiting Mr. Den regularly. This time, I will review July 2023. Den is in full bloom with edamame, eggplant, winter melon, and corn, giving off a summery blue scent and a refreshing taste. The dishes exude Hasegawa's unique touch, with a natural, gentle, and balanced flavor profile that allows you to fully experience the aroma and five tastes. Each dish was filled with Hasegawa's essence! Not only the dishes but also the tea pairing was incredibly delicious on its own and even more amazing when paired with the food. Eating was great, drinking was great, and combining them was even greater! Looking forward to the next visit!

Detailed review:
- Sweetfish Matsumaki Fry: The aged sweetfish had a savory aroma reminiscent of crustaceans, and the smooth texture of the flesh combined with its rich umami was captivating.
- Vinegared Dish: The combination of watermelon, rhubarb, hairy crab, and dashi jelly offered a harmonious blend of sourness, sweetness, and umami, creating a vibrant and natural flavor profile.
- Den Tucky: The Den Tucky with edamame and mochi rice in the batter had a refreshing green scent and a rich umami flavor, complemented by the oiliness and animalistic deliciousness of the dish.
- Sashimi: The aged horse mackerel with finely chopped spring onions, spring onions, myoga, and ponzu sauce melted in the mouth, enhanced by the texture of the condiments and the refreshing taste of ponzu.
- Eggplant Beef Roll: The grilled eggplant wrapped in beef sirloin with soy sauce glaze and served with Shishito pepper was a delicious combination of meaty aroma, eggplant's smoky flavor and sweetness, and the savory umami and sweetness of the soy sauce glaze.
- Den Salad: A refreshing and flavorful salad that highlighted the seasonality of the ingredients.
- Simmered Dish: A dish featuring red seat prawns, winter melon, and wood ear mushrooms cooked in a savory broth.
- Rice Dish: Buttered corn rice that was fragrant and flavorful.
- Dessert: Tomato heart-shaped confection that was average in taste.
