The explanations provided by the staff, including the proprietress, are spot on. ⚫︎ The staff's excellent service makes you wonder how they grow to be so wonderful. ⚫︎ It feels like meeting a celebrity with the famous owner Hasegawa casually present in the restaurant. ⚫︎ Winning the 1st place as the Best Restaurant in Asia is well-deserved!

Autumn visit. Two months have passed in the blink of an eye. Once again, I had the most enjoyable time. The menu included: Anno sweet potato in a monaka shell, foie gras, grilled eggplant, okra, uni marinated in soy sauce, Den Tacky with green chili pepper and miso, roast beef of May Chidai pork loin aged for 6 days, wild grape leaves, rocket pepper salad, rice with winter melon and mushrooms, confit of maitake mushrooms, Nagano Purple, Shine Muscat grapes, pear, Chinese lantern fruit, custard, and osmanthus sake jelly. There were many surprising combinations of dishes this time, but the flavors were all delicious. I always love the monaka, Den Tacky, and salad so much that I want to eat them multiple times. The grilled eggplant, okra, and uni marinated in soy sauce were also incredibly delicious. The meal ended with mushroom rice, which was a pleasant surprise as a confit. It had a rich flavor that I enjoyed. Delicious sake, food, enjoyable conversation, and excellent service. This is one of the restaurants I want to keep visiting.

I visited Mr. Tsutae as usual, and this time I would like to review my experience in September 2023. The course started with a corn croquette! From eggplant to green chili peppers, bell peppers, winter melon, the dishes had a refreshing taste with a hint of summer still lingering, while the mushroom rice signaled the arrival of autumn. Each dish had a balance of flavors that showcased Mr. Hasegawa's unique touch. The tea pairing was also delicious on its own and paired perfectly with the dishes. It was a delightful experience from start to finish. Looking forward to the next visit!

I am already crossing boundaries! I always look forward to my visits, not only to enjoy the seasons but also to enjoy the chef's talks and the tea from the landlady. Suddenly, fried horse mackerel appears, and watermelon with crab??! They go well together, and summer eggplants wrapped in sirloin or shrimp are served. It's so delicious that my mouth is screaming with joy ^_^ The corn and butter rice at the end of summer was perfect! Everything was perfect, there's nothing more to say. It was delicious~

Mr. Den in the summer. I was looking forward to it even before going this time. Among them, plum, daikon bettara, foie gras, watermelon, rhubarb vinegar dish, hairy crab Den tacky, edamame mackerel, summer vegetables, ponzu grilled eggplant and beef sirloin, manning temple pepper red shrimp and winter melon soup salad corn rice, char siu tomato agar, laver, passion fruit, basil seeds. How do you combine this with this! It's a series of surprising dishes with only unexpected combinations, but it's amazing how they harmonize and come together. Personally, I liked the salad, the rice at the end, and especially the char siu. The char siu is quite delicious, as the chef trained at the famous Hong Kong restaurant The Chairman. The quality of the sake served with it is also high, and the service is excellent. I look forward to my next visit.

I have been visiting Den for about 10 years now, and I still find joy, deliciousness, and innovation in the new dishes that come out. At the same time, because I have been going for a long time, there are also dishes that I associate with certain seasons, which is also enjoyable. I wanted to write this because in the summer menu at Den, the "Tomato Agar and Junzai, Passion Fruit" dish and the "Watermelon and Hojiso with Brandy Jelly (sometimes with rhubarb)" dessert are usually the staples that remind me of early summer to summer. However, this time, the positions of these two dishes were switched, with the watermelon and hojiso dish now having a dashi jelly and the tomato agar being served as a dessert. This change felt completely natural and actually added to the enjoyment and excitement of the meal, making me feel refreshed. I love this kind of playful creativity, which is why I always want to come back. I had a great time once again this visit. Thank you for the wonderful meal.

This shop is located about a 7-minute walk from Gaienmae Station. The dishes such as fresh tofu steamed with hot water, beef sirloin with leaf wasabi pickles, sweet sea bream pork with sake lees sauce, fried new onion and wood sorrel salad, scallop and potato salad with seaweed and shirasu, and umeboshi dessert with yuzu sherbet were all delicious. Personally, I liked the fresh tofu steamed with hot water, Den Tucky, salad, and scallop and potato salad. The rice dish at the end was also excellent. The rice with shirasu and real mountain pepper was so delicious that I could eat it endlessly. The service and atmosphere are also wonderful, making it a great place to spend time. I want to keep coming back here for life.

The visit this time was just after the results of the Best Asian Restaurants were announced. I think I visited around the same time last year as well. Therefore, on this day, Mr. Den served dishes that fully enjoyed the spring ingredients. Starting with large taro sprouts, perfectly cooked Spanish mackerel, gentle bamboo shoots, and flavorful real sansho rice, I was very satisfied this time as well. Thank you for the meal.

It had been two months since my last visit to Den-san. I was so excited that I arrived early as usual. The cozy atmosphere was just like always and it felt great. The omakase course included: Kin Kan White Bai Gai, Rape Blossoms Den Tucky, Scallops, Pine Nuts, Golden Eye Snapper, Leaf Onion, Yellow Turnip, Wood Bud, Rape Blossom Salad, Kujo Green Onion, Beef Sirloin, Bonito Broth Warrabi Rice, Wakame Miso Soup, Hyuganatsu, Pudding, Orange Liqueur. The dishes were even more delicious than usual. The classic Kin Kan, Den Tucky, and Salad were so delicious that I could eat them anytime. The Golden Eye Snapper was surprisingly well done, it was amazing. The Warrabi rice as the finale was incredibly delicious, I always want to eat it all. Everything was delicious and comfortable, time passed in an instant. I can't wait for my next visit.

I had wanted to go to this restaurant for a while. Thanks to a friend's invitation, I was able to go. The tempura was delicious! However, overall, considering the ingredients used, I felt a bit lacking in satisfaction and the cost performance might not be great. It seems like the restaurant is making a good profit based on the cost. Also, the flow of the course was quite slow, with long waiting times between dishes.
