When I come to Kyoto, I always crave for fu (wheat gluten). While strolling through Nishiki Market in the morning, I found a shop selling fresh fu. They offer a set of 5 mini fried fu for 648 yen. The set includes fu flavored with awa (foxtail millet), sesame, mugwort, and two plain ones. The special miso and sesame sauce goes well with them. They are not too greasy or heavy. It's also nice that you can sit and eat inside the shop.

The Kyoto Seifu specialist store at Nishiki Market, which has been in business for nearly 200 years. You can eat the freshly made seitan purchased at the store on site. I bought the Kyoto Namafu no Dengaku (648 yen). It was listed as a limited weekend service item, limited to 100 servings. The dengaku miso, cooked for 8 hours, was spread on the deep-fried homemade seitan. It was delicious. If you liked the review, please follow the account and save the restaurant.

I just wanted to share this restaurant because it seems like everyone is only talking about "Fukakusa." (laughs) In a world where restaurants with a lot of media exposure are praised, it seems like there has always been a trend of things going viral. Even the iconic "Seigoin Yatsuhashi," which was the top Kyoto souvenir of our generation, could easily be dismissed by my grandmother. She would say, "That only became famous because they started selling it at the Shinkansen station as a souvenir." And then she would stubbornly only eat Nishio brand. (laughs) While it's uncertain whether there is a sense of boasting about tradition and worshiping the original, I agree that we should be cautious about media exposure that makes something seem like the ultimate choice, disregarding the efforts of our predecessors. There are many old establishments in Kyoto that deliberately hold back from commercial success, such as the pickles shop "Akao-ya" and this "Fubou Roushou" shop. I've heard that many shops prioritize local regulars and long-time customers, and actively put the brakes on becoming too mainstream. The fresh wheat gluten at Fubou Roushou has a chewy texture that sets it apart from other shops. It has a soft, comforting mouthfeel and a gentle, Kyoto-esque flavor. Perhaps it's because I grew up eating this kind of food at home, but I think I could identify it even blindfolded in a taste test. Currently, "Fukakusa Nishiki Market Branch" has a rating of 3.64 with 173 reviews, "Fukakusa Main Branch" has a rating of 3.73 with 257 reviews, while "Fubou Roushou" has a rating of 3.19 with 44 reviews. It was quite good. Whenever I come to the Kinsho Shopping Street, I always end up stopping here. It's delicious no matter what. Even when it's cooled down, it's still so chewy and has that gluteny taste, which is excellent. I wonder if it would be even more delicious if warmed up?

I received a lot of information on various uses, but 90% of them were about my favorite dish, "tanzaku." I also purchased homemade miso sauce. From the colors, there were white, yellow, and dark green. The white one was soft and sticky, while the dark green one had a nostalgic charm. When the thinly sliced raw wheat gluten swells up in oil, it's time to eat. The finished tanzaku had a texture similar to rice crackers. The miso sauce was rich and sweet, and overall well-received by the people of Fukuoka. Indulging in tanzaku that you can't get at the store was a happy experience. Thank you very much.

When I went to Nishiki Market, I visited a shop that sells fu manju. I love fu manju, so whenever I find a shop that sells it, I can't help but stop by. I had it as soon as I got back home. It was the most chewy and had a nice texture out of all the ones I've tried before. It had a great bite to it, and the anko filling was also delicious. I can't resist this.

In December, I took a food tour in Kyoto and first visited Nishiki Market, known as Kyoto's kitchen. I tried a deliciously tender hamburger at Kyoto's meat shop Hiro Nishiki, then stopped by Fubou Rojo, a shop selling various types of wheat gluten products. I love wheat gluten, so I decided to check it out. Inside the shop, they sold fresh wheat gluten, wheat gluten buns, sesame tofu, and yuba. I bought the limited edition Kyoto-style fried wheat gluten with sweet miso sauce, where three types of wheat gluten are deep-fried at 180 degrees and topped with miso sauce. The chewy texture of the fresh wheat gluten was really pleasant, and it paired perfectly with the sweet miso sauce. It was a delicious treat.

I love fresh fu! Whenever I come to Kyoto, I always crave fresh fu, but it's hard to buy it because I'm always on the move. Last week, I had to sadly give up on buying "Fu Daraku," but today I was able to purchase it successfully! However, on my way back, amidst the crowded Nishiki Market, my fu from Daraku got squished and turned upside down. But the taste remained the same, so it's okay. I consoled myself and made my way back home. Once I got back, I immediately tried it, and the taste was excellent! The black sesame and yomogi flavors were all chewy and delicious. Despite the appearance being a bit disappointing, it was a delightful meal. Thank you for the feast!

In the morning, I wandered around Nishiki Market. It was before 9 o'clock, so most of the shops were not open yet. I found a shop that was open and bought some delicious tofu dengaku. It was quite ordinary but tasty. I paid 600 yen for 4 pieces, which felt a bit expensive since they were cold.

The Inariage Tanakatsu was very delicious! At 600 yen plus tax, I thought it was a bit expensive, but it was soft and chewy, and the sauce had a subtly sweet and elegant flavor that satisfied me! I would definitely want to visit again when I come back to Nishiki Market.

I visited early in the morning on a weekday in search of the "tadaku" style of fresh fu. However, they did not have the tadaku style available, and there were not many types of fresh fu to choose from. I selected the ones without artificial coloring, and bought sesame, walnut, and perilla seed flavored fresh fu. The staff, a rather unfriendly woman, quickly processed my payment without providing any explanation on how to eat them. They also did not include a cooling pack, even though the fresh fu needs to be refrigerated. The taste of the fresh fu was chewy and delicious, but I feel like I would prefer Fu-ka, another fresh fu shop in Nishiki Market, where they have a wider variety, provide friendly customer service, and include a cooling pack. So, I don't think I will be a repeat customer here.

This is a traditional shop located in Nishiki Koji, specializing in fresh fu (wheat gluten). On the first day of my one-night trip to Kyoto, I went shopping in Nishiki Koji. After purchasing pickles and tamagoyaki, I visited the long-established fu shop "Fubou Roppyo" established in Tenpo era. The storefront was lined with delicious products made with fresh fu. I bought the Fu Dango and Fu Manju. The Kyoto-style Fu Dango pack costs 600 yen, made by deep-frying fresh fu at 180 degrees and finishing it with a unique miso sauce, allowing you to enjoy the chewy texture of the fu. The Fu Manju, when unwrapped from the bamboo leaves, reveals a moist and smooth texture. Inside the nori-flavored fresh fu, there is plenty of homemade sweet red bean paste. Everyone seems to be all about "Fukoka" so I just wanted to share this shop. "Fukubou" is a long-established shop dating back to the Edo period, almost reaching 200 years soon. On Tabelog, "Fukoka" has a rating of over 3.6, while this shop has a rating of 3.15. The difference is not that big, or maybe even the opposite. I personally think the dishes here are genius and delicious, like "Kyoto-style raw wheat gluten with sesame" (¥648) and "Kyoto-style raw wheat gluten with millet" (¥648). They have a subtle and sophisticated taste reminiscent of "wabi-sabi." The "Kyoto-style raw wheat gluten with flower petals" (¥432) is often used in traditional Japanese restaurants and adds a touch of elegance to dishes like chawanmushi. While accolades don't necessarily mean everything, this shop's products are always top-notch. Along with "Hanbei Fukoka," this is a long-established shop worth knowing about. I passed through Nishiki Market on my way from Shijo Station to Shin Kyogoku♪ Strolling around, I stumbled upon some fresh Fu dengaku at a storefront!!! I couldn't resist and bought it on the spot. It was a bit pricey at 630 yen for a set of 5 small skewers, but they had various types of fresh Fu available (^o^) I also purchased a single yellow Awafu, which was around 500 yen. The Fu dengaku was absolutely delicious (^o^) I devoured it in no time! Each type of Fu had a slightly different flavor, but they were all chewy and mochi-like♪♪♪ Fu is really tasty (≧∇≦) The dengaku miso sauce on top was also very delicious! The white sesame seeds sprinkled on top added a nice touch. They were also selling the miso sauce separately. I should have bought some! I tried the Awafu later, and it was delightfully chewy and mochi-like as well! They had various other types of Fu available. I'm curious about the walnut Fu!!! There are several Fu shops around, but I really liked this one (^o^) It's a bit on the pricey side, but it's so delicious that I'll definitely go back for more☆☆☆

One of the souvenirs I always buy at Nishiki Market is fresh fu. I usually buy it from "Fu-ka" but this time, I purchased it from "Fu-bo" as I was mainly interested in their deep-fried fu dengaku. I also bought some fu manju as a souvenir. The dengaku is made by deep-frying homemade miso-coated fresh fu, and while it is best enjoyed hot and fresh, reheating it in the microwave at home the next day also resulted in a tasty, albeit slightly less crispy, dish. The fu manju, on the other hand, was individually wrapped in bamboo leaves, with a chewy texture and a subtly sweet and elegant red bean paste filling. Unlike rice cakes, the fu manju did not harden even when refrigerated, maintaining its chewy texture. Overall, I would rate the fu manju 3.5 points and the deep-fried fu dengaku 3.3 points, with an average rating of 3.4 points. "Thank you for the meal."
