Visited "Ebi Maru Ramen" in Jinbocho and Suidobashi. It's a popular spot in the area. It seems like a ramen shop opened by a French cuisine chef, so the expectations are high. Arrived around 11:30 am on a weekday and the place was packed, with a line forming outside. The menu was handed to me by the staff, so I looked through it while waiting. After some thought, I decided to go with the "Ebi Maru Ramen" and also ordered the lunch special "Salmon and Hijiki Rice Bowl". The turnover seemed fast, maybe because they were taking orders in advance? The interior had a stylish concrete finish with trendy BGM playing. The counter had a chic French vibe, with wine decor adding to the ambiance. The chef greeted me and served an amuse-bouche before the ramen. It was a cold soup amuse-bouche and it was delicious, raising my expectations. The ramen arrived. The Ebi Maru Ramen (1080 yen) was rich in flavor with a base of lobster broth. It was my first time trying this unique flavor. The rich shrimp broth was intense and the noodles were easy to eat, complementing the soup well. The chashu came in two types, chicken and pork, both flavorful and delicious. The chef explained how to use the sour cream on the baguette and the shrimp-filled chili oil to adjust the taste, and it was amazing. The Salmon and Hijiki Rice Bowl (300 yen) was topped with salmon, hijiki, and egg yolk, with a tangy flavor that had a French twist. It paired well with the shrimp soup. Overall, I was very satisfied. It was a long time since I had such an impressive ramen experience. The chef's attention to customers was also a highlight, with his friendly demeanor and energetic thank yous. Creating delicious food is truly an art. It was a moving experience. They accept various payment methods, and I chose Suica this time. It was incredibly delicious. With a variety of other items on the menu, I look forward to coming back to try more. [Interior] The owner is absent, with 3 assistants and 1 server. 6 counter seats, 2 tables for 4, total of 14 seats. Self-serve water, payment after ordering. [Order] "Original Ebi Maru Ramen with Flavored Egg" for 1510 yen. [Overall] Kudanshita and Jinbocho area are filled with delicious ramen, curry, udon, and other eateries, making it a gourmet paradise for food lovers. This time, I visited Ebi Maru Ramen, known for their ramen made with lobster soup by a former French chef, which has tremendous popularity. The owner moved to Tokyo at 17 and trained at a French restaurant in Kyobashi called "Chez Ino" before entering the ramen industry to make French cuisine more accessible. Despite having no ramen experience, the shop has been open for about 6 years and continues to be popular, which is impressive. I have high expectations! By the way, the lobster tsukemen at Hyonojin Somen 100-Nin Ten was also unique and delicious. Let's go check it out! Upon arrival in Kudanshita, I followed the path I took to Jin Ka and turned right. This area is filled with strong competitors like Maruka, a udon shop, Chuka Soba Katsumoto, and Hachitakarasu. As I walked, I checked the map on Tabelog and saw the line. Since it was a weekday, it wasn't too crowded, which was a relief. As I waited, the aroma of lobster was strong even outside the shop! The exterior looks like a stylish cafe and is very clean. A cute female staff member came out and handed me the menu. I already knew what I wanted to order. After a while, she came back to take our order. It was time for the shop to open. I sat at the counter, and the glass served for water looked like a wine glass. I think they call it a goblet for water. Having worked in the hotel industry, I felt a strange sense of nostalgia. It was fun. At this point, I felt like I was at a French restaurant. The surprises kept coming, with the female staff member bringing a hot towel and paper napkin. Then she said, "Excuse me. Here is an amuse-bouche of pumpkin and lobster cream pudding! Please enjoy!" An amuse-bouche?! In French cuisine, it's a small dish served before appetizers or snacks. Are we really at a ramen shop? At this point, I was starting to feel like I was at a French restaurant. Everything was so surprising and enjoyable. The interior was very clean and had a relaxed atmosphere with soothing jazz music playing. As someone who used to work in hotels and even taught table manners, I felt a strange sense of determination. Let's do this! French showdown! Anyway, the ramen was served a bit late, about 15 minutes later. The rich, bright red soup with cherry tomatoes, sour cream baguette, chashu, and red onions had a stylish and elegant look! The presentation was truly impressive! I picked up the soup with the spoon, and it was thick and rich. When I slurped it, the intense flavor and aroma of lobster spread throughout my mouth, followed by the subtle sweetness of various vegetables and ingredients. It was delicious! There was no unpleasant or off-putting taste, and the soup was elegantly enjoyable, which would surely captivate female customers. However, if you're allergic to shellfish, this is not for you! Next, when I slurped the noodles, they were medium-thick and had a chewy texture that paired well with the thick soup. The noodles were not bad in terms of texture and flavor. The sour cream baguette had a crispy outer layer and a fluffy inside, with a hint of acidity that complemented the rich soup perfectly. This was an essential topping. The chashu was thinly sliced and made from chicken, and the thin slices paired well with the rich soup. The aroma of wheat was also pleasant and delicious. Overall, it was a delightful experience with surprising elements that made it enjoyable. The atmosphere was elegant and relaxing, and the food was delicious and beautifully presented. I visited on Saturday afternoon, located between Jimbocho and Suidobashi. I had visited the branch of Rakuwa before and enjoyed it, so I decided to visit the main store. I ordered the limited "Ebi Maru-style Tsukemen without soup" for 1500 yen, with an additional seasoned egg topping for 220 yen. Even though it was a soupless tsukemen, it was not very spicy and had a creamy texture which was delicious. The thick noodles matched well with the dish. It was nice that they also provided a soup as an amuse-bouche. The grapes that came with it were refreshing. I will definitely visit again.

Visited around 5:00 pm on a holiday. There were about 3 people waiting in line. I came for the limited edition item again this time. The limited edition was the Black Wagyu and Pear Vichyssoise Ramen for 3000 yen. Arrived around 5:15 pm. Today, there was a chef with a strong presence. Some people might come here just to see him. The amuse-bouche with clams was delicious. The limited edition item was a bit pricey at 3000 yen, but the thickly sliced Black Wagyu was satisfying. The meat was delicious. The soup had a slightly strong salty flavor but was tasty. The noodles were thin to complement the soup. This limited edition item was a hit.

This is Ebi Maru's 6th anniversary second edition. Using the new Takana Nashi from Ichikawa, Chiba Prefecture. When it comes to Ebi Maru, the first thing that comes to mind is the Amuse-bouche. Today's limited edition is a cold pumpkin and scallop dish. I always think I want to drink more. The cold Vichyssoise soup with a hint of pear sweetness. The noodles are thin and straight, and they mix well with the soup. Toppings include leafy vegetables and colorful vegetables. The chashu is made from Wagyu sirloin, and it's so delicious that I want more. I thoroughly enjoyed sprinkling the leftover soup over the risotto 5-6 times, then shaving cheese on top and finishing it off. It was so tasty that I licked the bowl clean. Visited on a regular weeknight. Arrived just as the restaurant opened, but there was already a line forming. Clearly a popular spot. Managed to get in on the first round, and the turnover seemed quick, so even if you arrive late, you wouldn't have to wait too long. Ordered the standard shrimp ramen with egg and ravioli toppings. Started with a pumpkin soup as an appetizer. Creamy with a subtle sweetness, the small portion increased my appetite. The ramen was all about the delicious broth. Rich shrimp bisque with a strong dashi flavor, yet still maintaining the essence of ramen. The chicken chashu was incredibly tender, while the pork loin was more like ham than chashu, giving a hint of French cuisine. The ravioli, originally pasta, was filled with minced shrimp, resembling a thick wonton. The egg was flavorful and well-cooked. Served with a baguette and sour cream, dipping the bread in the soup added a creamy touch to the already exquisite flavors. They recommended adding a special condiment halfway through, a French-style yuzu pepper that enhanced the soup with citrusy and peppery notes. Being able to adjust the flavor like this was a luxury. I had been interested in this restaurant. When I passed by and saw only one person in line, I reflexively got in line. The rich shrimp soup with chewy noodles had the perfect texture and flavor for me. I also tried the risotto made with the remaining soup. I will definitely be coming back again.

On Saturdays in Jimbocho, if it's before noon, go to Fukumen Tomo for ramen, and if it's past noon, go to Ebimaru Ramen. It's great that they don't take a break on holidays. If it's lunchtime and there's a long line, I'll skip it. On this day, I had the limited edition ramen with a refreshing seafood broth infused with lemon. It had a thick texture from vegetables and kelp. The scallop, shrimp, and mussel salad was like a course meal on its own. The price of 1800 yen was reasonable considering the generous portions. The salad had more ingredients than it looked, and the shrimp and scallops were fresh and chewy. The lemon and orange compote served as a sweet dessert. I felt like there was a bit too much noodles, so I should have ordered half a portion and added a side dish. The ramen at this place may seem extravagant and French-inspired from a ramen perspective, but I wonder how impactful it is from a French cuisine standpoint. However, since the concept of this restaurant is to introduce ramen made with French techniques to a wider audience, such doubts are unnecessary. I visited this restaurant because I was interested in the high ratings. I went on a weekend night and although it was full, I only had to wait about 5 minutes before being seated. The restaurant has 14 seats and specializes in ramen made with lobster soup. I ordered the "Original Deluxe Ramen," which is equivalent to the "special" at other establishments. The soup was very flavorful with a strong lobster taste. The noodles were medium thickness and had a good texture. When the ramen was served, the staff explained that there were condiments for flavor variation - sour cream to dip the noodles in for a pasta-like taste, and shrimp chili oil to mix into the soup for a spicy Asian flavor. The low-temperature cooked chashu pork was also delicious. Overall, it was a satisfying ramen that allowed you to enjoy multiple flavors in one bowl. The hospitality of the staff is also excellent. The menu includes wine and à la carte options, so it's recommended for those who want to enjoy a light drink. The ramen is delicious. Chilled Almond Ramen (1600 yen) was so delicious! I didn't know about Ajo Blanco, but the garlic and olive oil were tasty. The vegetables and almonds added depth to the dish. The sliced almonds added a nice flavor and texture as well. The crispy shrimp shells had a nice aroma, but can be overpowering on their own. However, they were well-balanced in the soup. The mint jelly was amazing, with a hint of acidity reminiscent of a mojito. I loved the spearmint flavor! It was a bit too sweet on its own, but when mixed in, it was perfect.

Visited on a holiday at 12:30 pm. About 8 people in line. Waited for about 15 minutes to get seated. Ordered today's special, which cost around 1,600 yen - cold almond ramen. The soup is made from almonds, garlic, shallots, and Pedro Ximénez sherry. Topped with dill oil, roasted red shrimp, and muscat jelly. The noodles were thin, which I didn't really like. The soup was okay. The muscat jelly gave a refreshing touch. The shrimp was decent.

I had plenty of time before watching the Giants vs. Swallows game at the Tokyo Dome, so I decided to visit. I love shrimp, so I ordered the original Ebi Maru ramen. The interior of the restaurant was stylish and didn't feel like a typical ramen shop. The soup was very rich and delicious.

It was my first time, so I ordered the original Ebi Maru Ramen! The soup was really rich and the shrimp used in it was delicious. They had an original eating chili oil made with shrimp on the counter, and when added, the flavor changed drastically and it was also delicious!

Ebi Maru Ramen Bucket (not shown in the photo, but 3 pieces). There was a long line on weekday nights, so I gave up and visited on a weekday opening. I was able to get in right away. As it approached 12 o'clock, more people started lining up, so opening time might be the best time to go. Next time, I want to try the carbonara.

This was my first visit to a ramen shop with a French twist, where amuse-bouche suddenly appeared. It's about a 5-minute walk from Jimbocho Station on the Toei Shinjuku Line. I had the original Ebi Maru Ramen (1,290 yen, cash payment) with an added extra chashu using a coupon. [Noodles] I expected delicate thin noodles due to the French influence, but they were actually medium-thick straight noodles. Given the rich flavor of the soup, these thicker noodles seemed to hold up better. [Soup] The soup was rich in shrimp essence, with a strong saltiness that seemed calculated for the overall taste, possibly considering the risotto that comes at the end. [Toppings] The chashu comes in two types: chicken, which was moist, and pork, which was juicy. The vegetables included cherry tomatoes, chopped purple onions, and greens. A baguette on top was already unusual, but on top of that, sour cream was added. Slowly melting it and eating it changes the taste and deliciousness. [Other] I was surprised when the amuse-bouche (cold corn soup with lobster sauce) suddenly appeared, as I had no prior knowledge of anything other than ramen. I didn't have room for the risotto this time, but I think it completes the meal, so I definitely want to try it next time. After visiting the Tokyo National Museum of Modern Art, I stopped by this restaurant that had a long line. It was around 1pm on a weekday and there were about 5-6 groups ahead of me. I decided to wait, thinking the turnover would be quick, but ended up waiting for an hour. While waiting, I ordered the recommended original Ebi Maru ramen and risotto set. First, they served a cold and delicious soup as an amuse-bouche. This got me excited for the ramen. Finally, the ramen arrived. It had a rich bisque-like soup that was a cross between ramen and pasta. The rich soup paired perfectly with the noodles. The soup was so delicious that I had high expectations for the risotto. It arrived in a hot bowl with a generous amount of cheese on top. Even though I was already full from the ramen, the sound of the soup being poured in made me even hungrier, and I managed to finish it all.
