On a weekend in mid-September, I visited in the morning. There were 26 customers waiting before me and 15 customers waiting as I left. I decided to have breakfast here before a sauna event in Tokyo. This was my first visit in about 8 years. The ramen street in the early morning was quiet, but there was a line forming here. The turnover was fast though. The store had many foreign customers as well. I was prompted to buy a meal ticket. I chose the option on the top left of the LCD ticket machine. I was quickly guided to a counter seat. The staff asked if I wanted to use a paper apron. The service was reliable. There were 2 male staff members in the store, and the kitchen was not visible. It took about 30 minutes from my arrival to when the ramen was served. The turnover was fast, so waiting in line wasn't bad. I was directed to use a pot for adding soup to the noodles. First, I tried the noodles. They were thick and straight noodles with low water content. You could sense the time from boiling to serving, but the texture and flavor of the noodles were good. The amount of noodles felt like about 220g. Next, I tried the dipping sauce on its own. It had a rich flavor with a good balance of saltiness and sweetness. Although it wasn't very concentrated, it had a deep umami taste. I think it falls under the category of pork and seafood broth, but it was delicious without being overpowering. When I dipped the noodles in the sauce, the high viscosity of the sauce made lifting the noodles gentle, allowing the flavor of the noodles to shine. The toppings included raw seven spice powder, shiso, chashu, menma, nori, negi, and naruto. The raw seven spice powder had a sour and green spicy flavor, which served as a great accent when eaten with just the noodles or with the sauce. The melt-in-your-mouth chashu was tender and flavorful. The menma had a crunchy texture. The nori was enjoyable when wrapped around the noodles. The roughly chopped negi added a refreshing touch as a condiment. On the table, there was fish powder, black roasted seven spice powder, citrus vinegar, and more. Sprinkling the fish powder, black roasted seven spice powder, and remaining raw seven spice powder on the noodles added layers of flavor without spoiling the original taste. Adding citrus vinegar along with shiso provided a refreshing flavor change. Lastly, I tried the soup base on the table. The light and clear kelp-based soup base was extremely hot and the abundance of negi enhanced its satisfaction. It seemed like there was a lot of negi to increase the satisfaction of the soup base! I finished it all in no time. It was still delicious, a luxurious morning dipping ramen meal. Thank you for the meal.
