It's like a modern arrangement of the famous Ginza solo shabu-shabu restaurant, Shabu Sen. This chain has been opening new stores one after another recently. Their specialty is using black wagyu beef, and they offer a very reasonably priced lunch set. As soon as they open, customers start coming in one after another. The "full set" includes 180g of beef and pork, a variety of vegetables, two types of sauce, rice, and ramen for finishing, all for 1280 yen. I chose the limited 20 servings option. First, the vegetables arrive. Lettuce, Chinese cabbage, red core radish, sweet potato, bean sprouts, enoki mushrooms, tofu, carrots, seaweed, and kaiware - 11 different kinds of colorful vegetables. It looks beautiful. It takes a bit of time to prepare the meat. I leisurely waited while watching the slicer in action. The meat arrived with a beautiful piece of beef that covered the plate. It had a nice marbling, beautiful color, and was very attractive. Underneath, there was pork belly. The pork belly was slightly thick with a good texture and chewiness. The beef was very thin but filled the mouth with a satisfying feeling. Many people were cutting it into two pieces with chopsticks and enjoying it shabu-shabu style. There was also a limited 20 servings option of "black wagyu beef offcuts." It was 80g, but it was piled up nicely, with excellent aging and fat content. It's a smart product using the trimmings effectively. The ponzu sauce was refreshing, while the sesame sauce was rich and creamy. Drizzling some chili oil and sprinkling fried garlic as a topping enhanced the flavor of the meat and made the rice more enjoyable. A large bowl with a katsuobushi-based ramen sauce was served. They suggested boiling the ramen and pouring the boiled soup over it to make ramen. Surprisingly, it was delicious too. I was impressed by the creativity.
