After training for 12 years at the famous Sapporo miso ramen shop "Sumire", the head chef received guidance and opened his own shop in Funabori, Edogawa-ku. The specialty here is the "Rich Spicy Miso" ramen, available only at night. I was impressed with the default miso ramen a few years ago and had been longing to try the "Rich Spicy Miso" version, so this revisit was a dream come true. I visited at 6:15 pm on a weekday and there was no wait. The soup is a blend of rich animal-based broth, lard, sweet vegetables, and intense miso. Despite being called spicy miso, the spiciness is quite mild, more of a gentle hint of heat. The aroma and flavor are delightful, similar to the default miso ramen but with a nice spicy kick. The soup is not as bold as the aggressive punch of "Sumire" in Sapporo, but it has a milder, distinct broth. It's a flavor I love. The noodles are the classic Morozumi noodles used in Sapporo miso ramen, thick curly noodles with a chewy texture that complements the soup perfectly. The toppings include two slices of tender chashu, rolled chashu, green onions, grated ginger, seasoned egg, ground meat, and half a soft-boiled egg. The egg is only included in the "Rich Spicy Miso" version. I've tried various miso ramen, but this is truly the best in Tokyo. Oh, how I'd love to go on a pilgrimage to Hokkaido to explore the pure Sumire-style ramen. Thank you for the feast.

Finally, I got to try the famous miso ramen at Ojima-san’s shop! It was Saturday afternoon and I was prepared to wait about 40 minutes. But I really wanted to eat this! The Sapporo miso ramen with a hint of ginger! Creamy and a bit junky in a good way, the hot soup was so good I finished it all. This was the real deal! It cost 950 yen for the miso ramen and 160 yen for the menma topping. There was also furikake in front of me… I wish they had rice too haha. And I'm curious about the Sapporo soy sauce ramen at the Sapporo miso ramen shop... I want to come back again but I need to gather my strength. Thank you for the meal!

Arrived around 7:30 PM on a regular day. There were 3 people in line. Waited for about 15 minutes before entering. Since we had already purchased our meal tickets and handed them over, we didn't have to wait much after being seated. We ordered miso ramen with extra egg and miso chashu noodles. The soup had a strange flavor with a strong taste of ginger, not very much like miso. You could tell how rich the soup was by its consistency. It seemed to have a lot of fat in it. The first sip of the soup was delicious! The noodles were firm. As they soaked in the hot soup, they reached the perfect firmness. The chashu was thick but tender and tasty! After eating about half, it started to feel quite spicy... I'm glad we didn't order rice!! I wonder what it was? I felt full and bloated until the next day's early afternoon. It really keeps you satisfied for a long time. I think I'll take a break from ramen for a while...I'm curious about the curry rice.

Visited on Sunday at 3:00 PM. There were four people in our group. We purchased our meal tickets first and while waiting, the staff came to take our order. I ordered miso ramen without green onions and a beer. After about 10 minutes of waiting, we were seated at a table inside the restaurant. The staff were all young and energetic, with decent hospitality. While sipping on my beer, our food arrived in about 3 minutes. The miso ramen was quite light in flavor, but had a good richness to it. I had never tried sumire before, so I couldn't compare, but I did notice the flavor changed slightly after adding some vinegar and shichimi. The "Seto-style sprinkles" brought back childhood memories and paired well with the extra rice my friend shared. I had been disappointed with miso ramen in the past, but this time I was satisfied! This prompt service contributes to the high turnover rate, which is great. Now, onto the ramen itself - the rich miso soup with medium-thin noodles and plenty of grated ginger. The thick slice of chashu is a generous portion even with the additional menma. The soup has a strong ginger flavor and is hot. I found the ginger flavor to be divisive, but overall, it was delicious. Despite the heat, I found myself enjoying it with each mouthful, although I had to cool my mouth with water between sips. The noodles are smooth and typical of miso ramen. In a certain ramen manga, it was mentioned that miso ramen is difficult to make stand out due to miso being a versatile seasoning, but this restaurant's ginger flavor is unique and tasty. Visited on September 8, 2023 (Friday) at 18:21 and was able to sit right away. It was raining lightly during the day as a typhoon was approaching, which may have been the reason. Ordered miso chashu and rice (medium) from the ticket machine at 18:24. The dish came with ginger on top, giving off a nice ginger aroma. Mixed it all together before eating. The soup had a soft sweetness to it. The chashu was thick but a bit dry. Next time, I'll try the regular miso ramen. Ordered a medium rice but it was quite filling, so I decided I'll go for a small next time. While eating, customers kept coming in without a break, causing a queue to form. The shop was still crowded, but I only had to wait for about 10 minutes for my bowl of ramen. I ordered the Miso Ramen for 950 yen. The bowl came with chashu pork, menma, onions, grated ginger, and green onions. The chashu pork was tender and delicious, and there were two types: a chunk and sliced pieces. The onions were sautéed to a soft texture, and the broth was a blend of pork bone and vegetables with a white miso base. It was rich and creamy, with a strong umami flavor that was quite addictive. The noodles were thick and curly, providing a nice chewiness that complemented the broth well. Overall, the ramen was rich but not too heavy, making it a satisfying and delicious meal. I haven't had miso ramen in a while, so I really enjoyed this bowl.

On Saturday morning, I had some errands in the Kasai area, and since it was almost lunchtime and I hadn't had breakfast, I was looking for a delicious lunch spot. I came across Oshima-san, who had left Sumire Ramen. Excited, I drove by around 11:30 and saw a line of about 7 people. My son and I couldn't resist and decided to line up (laughs). The miso ramen was incredibly delicious, with a rich flavor. The pork char siu was melt-in-your-mouth tender! It truly felt like the best miso ramen in Tokyo! My son was also thrilled and kept saying how delicious it was. He eagerly slurped the noodles and even mixed them with rice! He got hooked and it was amazing! We also bought some spicy miso ramen to take home, and when we tried it at midnight, it was also delicious! I could tell a lot of trial and error went into perfecting this flavor. I will definitely get takeout again next time! When dining in-store, I might add a bit of water to the soup for my preference. I'll definitely be back!

I came to eat the miso MAZE that I couldn't eat last time, just before 8pm on a regular day. There was a short line. I ordered with less noodles and was able to get seated right away. Since the green onions were sold out, I chose sesame, black fungus, and seaweed as toppings. The total was 1320 yen. The miso MAZE had almost the same ingredients as miso ramen, but the garlic flavor was stronger. I mixed it well and added red pepper halfway through, and finished it. I'm glad I was able to try the limited-time menu, but next time I think I'll stick to regular miso. I haven't tried the spicy miso available only at night yet. Thank you for the meal.
