Half a year since my last visit on a Sunday, and this time I managed to get in without lining up, but there was a line forming quickly. I remember how great the soy sauce was last time, and I was quite intrigued by the dried fish broth too, but since winter is almost over, I thought I'd go for the miso this time, opting for the limited edition fish miso for 910 yen. I also got the glass noodle rice for 170 yen. In total, it came to 1,080 yen including tax. It only took about 5 minutes for my two bowls to arrive. I've already talked about how delicious the glass noodle rice is in my last review, so just three points. The impact of garlic and ginger, the richness of unexpected ingredients, and the incredible value for money. If it's only 170 yen, I'll definitely order it even when I'm not hungry. Now, onto the limited edition fish miso. True to its name, it's a perfect match of bonito broth and miso. The umami is rich but with a sharp and refined taste. The spiciness of sansho pepper and black pepper, along with ingredients like Chinese cabbage, complement each other perfectly, showing exceptional creativity. If this place was closer to my home, I'd definitely become a regular. I still want to try the dried fish broth and the soy sauce ramen.

The soy sauce ramen costs 870 yen, and the extra-large portion is an additional 160 yen. The extra-large portion consists of two servings in one bowl. The highlight of this ramen is the savory aroma of burnt dried fish. The combination of the crispy thin noodles is also great. The burnt skin chicken thigh, large slices of chashu, half a boiled egg, and thick bamboo shoots are included in the bowl. Mitaka Station is known for its ramen shops. I arrived on a sunny weekday at 1 pm and there were 7 people ahead of me in line. It seems that during the day it's Suzy-ki, and at night it's Suzy-oni. They might serve Tsukemen at night. This is a well-known shop in the industry run by Mr. Su.
Koku Shio: 870 yen + Special: 180 yen
The menu on the top left of the vending machine is called Koku Shio. Despite the name of the shop, the soup is more focused on dried fish and bonito rather than chicken. Perhaps the chicken flavor is closer to a clear broth similar to chicken shio. The saltiness is quite strong. The noodles are thin and straight, often paired with low water content in dried fish. They seem to be from Mikawa-ya Noodle Company. The toppings include three types of chashu. The large slice is tender, the chicken is moist, and the thick slice has a nice aroma. The flavored egg was slightly overcooked. Other toppings include bamboo shoots and green onions. Overall, it was a satisfying bowl with various umami flavors and a good portion size. The shop had a long line leading underground, showcasing their high level of craftsmanship. It seems to have many fans, but personally, I tend to get full quickly.

It's a normal day but there are already about 10 groups waiting in line and the wait time is about 30 minutes. The restaurant only has 10 seats. The free paper apron service is a nice touch, as the broth splattered. The ramen that arrived was... a month's worth of oil and salt. It's common for people to add extra pork fat on top. The noodles are thick and firm, which is to my liking. The taste is... hard to describe, it's simple yet rough. Thanks to the ginger topping, I managed to finish it. Personally, one visit here is enough for me.

It's hot again today, but it's ramen time. Three people are waiting to ride their bikes. Even though I wanted to eat cold noodles, I haven't eaten them yet. But when there is a limited edition ramen, I always choose that. In this day and age, the ramen comes with a generous portion of 210g and costs less than 1000 yen, which is very much appreciated. The finished bowl has a floral aroma with a punch from the Sichuan pepper. When you take a sip of the soup, there is a gentle sweetness and a subtle miso flavor mixed with the Sichuan pepper, serving as a supportive element. The noodles are delicious as always, and there are plenty of low-temperature cooked chashu slices. The menma is not bamboo shoots, what is it? Perhaps kamaboko? It has a crispy texture and is enjoyable. The seasoning is probably soy sauce. The idea behind these toppings is interesting and enjoyable. The sprinkled seaweed also adds a nice touch. I had a good meal!

Today, I had ramen which is still hot, but a limited edition bowl of ramen, not cold dipping noodles or tsukemen. Therefore, I was curious. It was a grilled dried fish Chinese soba for 910 yen. The soup had a strong, bitter dried fish flavor, with a solid soy sauce base that was not very sweet. The shredded chashu on top was plentiful and of high quality, with a volume similar to a chashu ramen. The noodles, with the aroma of the sea, were delicious, especially with the chunky menma. The flavored egg was slightly sweet as usual. This limited edition ramen was also delicious.

I visited the shop during lunchtime and was hesitant to join the line because there were about 25 people ahead of me. However, my companion wanted to wait in line, so we did. It took us about 40 minutes to get inside the shop. We bought food tickets first and then waited. The underground area where we lined up had air conditioning to help with the heat. I ordered the Special Miso Ramen with extra toppings. When I sat down, they asked if I wanted garlic and other toppings, so I decided to go with all of them. The ramen came in about 10 minutes. It wasn't very spicy, but it had a similar taste to the ramen from Aliran Ramen, with thick slices of pork and sautéed onions as toppings. The noodles were thick and curly. Although it was a bit heavy for lunch, most people around me ordered all the toppings by default. It would have been better if there were more choices in terms of portion sizes for the toppings. Having a heavy meal during lunchtime can be tough.

This shop transforms into a spicy stamina ramen shop called "Suzuki" at night, but during the day, they serve ramen with rich salt or soy sauce-based broth. Today, I ordered the abura soba. Abura soba is a local specialty, said to originate from the neighboring town of Musashisakai alongside Musashino udon. We usually go to "Ippei Soba" in Higashi-Koganei for abura soba, but my daughter tried it with her friend and said it was the best abura soba she's ever had. So, the three of us ordered abura soba. It was indeed delicious!

It was delicious, but personally I felt the salt was a bit too strong. In the middle of eating, I discovered that I could adjust the richness, and I regretted not knowing that earlier. This is a revisit to R5.6 during lunchtime after 12 o'clock. I purchased a special ticket for their rich soy sauce ramen and waited with two other people on the bench inside the store. The rich soy sauce soup had plenty of chashu, thick menma, a seasoned egg, sliced green onions, and mitsuba. Even with a regular serving, I felt full thanks to the special toppings. The rich and flavorful soup was so delicious that it became addictive. I enjoyed it thoroughly, thank you for the meal.

It is an inconspicuous ramen restaurant with only a sign at the entrance to the underground stairs. After going down the stairs of an old building and advancing to the back, there is a ticket machine where you buy a meal ticket. Today, I ordered the most popular salt ramen. I arrived around 11:40 am and was able to sit without waiting. The dish was served and the soup was a seafood-based broth with thin noodles. There were two types of char siu, and the quality was satisfying. Some customers ordered extra-large portions, which looked quite voluminous. Some regular customers requested customizations. It is a hidden gem of a ramen shop loved by locals. The area is currently undergoing redevelopment near Mitaka Station, so it may disappear in the future, which makes me feel a bit sad. Although the building is old, I hope it can continue to exist through renovation and preservation efforts.

Mornings at Mitaka Station South Exit, just a 2-minute walk away, you'll find "Torikoku Chuka Suzuki," a ramen shop. Arriving at 11:00, we had to wait for about 20 minutes as there were 4 people ahead of us. Once seated, we ordered the "Tasty Salt Ramen" for 870 yen and the "Mixed Cold Noodles" for 250 yen. The soup was rich with the flavors of simmered fish and chicken. The noodles were straight and chewy, filling every bite with a burst of deliciousness. Toppings included green onions, thick bamboo shoots, and flavorful pork and chicken chashu. The chicken chashu was especially good! The mixed cold noodles allows you to choose between soy sauce or salt seasoning, making it a delicious option to have on its own. We also added extra noodles to finish up every bit of the soup, completing the meal with satisfaction.
