Yes, the motsu stew here is a golden broth with a hint of soy-based richness, truly a "stew that you can drink." This soup would probably taste great even with slightly firm noodles like ramen added to it. Most importantly, there is zero smell and 120% umami, indicating a significant effort in sourcing high-quality ingredients. Before ordering various dishes, start with a lemon sour as an appetizer! Fresh green peppers... known as "Ajishio"? The blue deliciousness coming from inside the green pepper, along with its refreshing flavor, enhances the experience! Wait, this is the ultimate appetizer! Enjoy the homemade spicy miso cucumber while savoring the main dish of hormone sourced in the morning! "Shibire"... a tender, juicy part, the cow's thymus? After the closure of lunchtime due to the pandemic, Shinagawa Hormone, which had been lending its space to Ramen Ren and Miso Chanpe, has started serving ramen themselves. They seem to be focusing on serving rich tantanmen only, so I had been putting off visiting for a while. It's been about a month since then, so I decided to finally give it a try. As I approached the shop, I noticed that the menu had changed from Stamina Ramen to Jiro-inspired ramen. I entered the shop around 12:50, with only one customer before me. I sat at an empty counter seat and placed my order, specifying "extra vegetables!". The ramen was served in about 5 minutes. First, I tried the soup. The soy sauce-based soup had a slightly blurred taste. The noodles were thick, but thinner compared to typical Jiro-style ramen, and although I asked for extra vegetables, the portion was more like a small serving compared to traditional Jiro-style ramen. The standout feature was the chashu. It was over 3cm thick, tender, and easily chewed. The flavor had soaked in well, making it a perfect match with the vegetables and noodles. However, I felt that it didn't quite justify the price point. To exceed the 1000 yen mark, there is still room for improvement.

On Saturday night, my sister and I visited this bustling restaurant that we had been curious about, wanting to have a quick meal and drink. The first floor had only a counter, where locals and acquaintances were dining shoulder to shoulder. We opted for a table on the second floor, where there was a self-service alcohol drink bar! This was a paradise for alcohol lovers. We wanted to go for the course menu with all-you-can-drink option, but it required reservation in advance, so we settled for a la carte and all-you-can-drink. The liver sashimi was amazing, we even ordered seconds. The other skewers were also delicious, being served hot from the kitchen on the first floor. Toppings like green onions and shiso leaves were generous and delightful. The all-you-can-drink menu included Hoppy, shochu, Chamisul, wine, soft drinks, and more! The all-you-can-drink automatically extends, so be careful not to get too drunk if you're not keeping track of time (laughs). We enjoyed drinking and eating for a little over 2 hours. Next time, I'd like to make a reservation in advance and try the course menu. On our way out, we met the owner, who was very friendly. Thank you for the wonderful meal!

Visited for the purpose of trying out the raw meat dishes. Unfortunately, many of the raw meat dishes were out of stock. The raw liver had a slight smell to it, which was tolerable but not exceptionally delicious. The raw beef tongue tartare was also just average. It wasn't bad, but not outstanding either. The bill came to a little over 2000 yen, which didn't feel particularly cheap.

The menu said the spiciness levels were normal, beginner-friendly, but I almost considered increasing it. I'm glad I didn't because it was very spicy. I was sweating a lot and it really hit the spot. When I asked the owner if it was quite spicy, they said the Mapo is made quite spicy.
