From Tokyo Station, the restaurant is located along Yaesu-dori near the Kyobashi 1-chome intersection and near the Higashi Shin-go exit of the Tokyo Expressway. The closest station is Hatchobori, but it is also within walking distance from Tokyo Station, Nihonbashi, Takaramachi, Kyobashi, and other nearby stations. The restaurant opened in July 2015, with its roots tracing back to Seigetsu in the Seibu Shinjuku Line in 2007, before moving several times and finally settling here. The staff members wear T-shirts with "SINCE 2007" printed on the back. I arrived about 15 minutes before the 11 am opening time on a weekday and there was already a small line. By opening time, the counter seating for about 10 people was full and there was a line outside as well. I ordered the Ajitama Ramen (sardine broth) and watched as the staff skillfully made fresh noodles right in front of me. The attention to detail was impressive, not only in the noodles but also in the soup, made with chicken, deer bones, kelp, shiitake mushrooms, dried baby sardines, salt, soy sauce, and other carefully selected ingredients. The rich and flavorful soup paired perfectly with the handcrafted noodles, which were thick, short, and had a great texture. The toppings of cha siu, green onions, finely sliced menma (bamboo shoots), and seasoned egg complemented the dish well. I would love to try their tsukemen next time, as well as their rice dishes.
