When passing by this restaurant, there would always be a line of about 10 people, and I would always think, "I'll just go to another place!" and ended up not visiting for nearly 6 years. After all, there are plenty of delicious restaurants in Nishi-Ogikubo! However, one rainy Saturday, I passed by the restaurant and saw only 2 people in line. I thought, "Is this my chance to try the food here!?" and impulsively joined the line. I was able to enter the restaurant without waiting for even 10 minutes. I usually order tantanmen, so this time I decided to try the soy sauce-based ramen. The Char Siu Wonton Ramen for 1200 yen. As mentioned in previous reviews, the Char Siu here is prepared with attention to detail, using different cuts and processing techniques, and the bowl is filled with carefully prepared Char Siu that hides the wontons completely. However, when you uncover the Char Siu, the wontons are neatly tucked underneath, which is reassuring. First, I slurped the soup, and wow, it's delicious!! The style is nostalgic, but the sharpness and aroma of the soy sauce, combined with the richness of the broth, are at a high level and incredibly tasty. When you go to a local Chinese restaurant and have soy sauce ramen, sometimes you encounter a somewhat blurry-tasting soup, but this is the taste of nostalgia! I've had moments in the past where I compromised and thought, "Well, this is also good!" but the nostalgic soup here was so delicious that there was no need for any compromise. The rich and sharp flavor is superb, so tasty that you'll want to keep drinking the soup. The thin noodles in the soup, when slurped, spread a rich umami taste that glides down your throat, making your taste buds and sense of smell rejoice. The delicate preparation of the Char Siu exudes the unique charm of this restaurant. The meat, which is not excessively tender, offers a delightful texture of firmness and moistness, with a well-infused soy sauce flavor. While simmered pork belly is also good, this kind of Char Siu is not bad at all. The wontons have a bouncy skin filled with well-seasoned meat, which is rich in flavor and extremely delicious. The snap peas and narutomaki add a nice color contrast, complementing the nostalgic taste perfectly. Anyway, in terms of soy sauce ramen at this restaurant, the stars are undoubtedly the soup and the noodles. The Tantanmen with salt soup is also good, but the ramen with soy sauce soup is not bad either. It was such a restaurant! Thank you for the meal!

The Tanmen for 800 yen with an additional Char Siu topping for 400 yen was delicious! The Tanmen had a gentle salty flavor, with nostalgic Chinese noodles that had a hint of wheat aroma. The Char Siu had different cuts, some with hidden knives, and everything was done with care! Very satisfied!!! I'm also curious about the Wonton Men.

The interior only had 5 seats, and the elderly owner managed everything alone, so the service was slow. It took about 15 minutes to get inside and another 20 minutes for the food to be served. The menu includes ramen, wonton, wonton noodles, Tanmen, bean sprout noodles, char siu ramen, and char siu wonton noodles, with most customers ordering Tanmen. I ordered the Tanmen (800 yen) with an additional serving of char siu (400 yen). The Tanmen had a clear broth with a mountain of vegetables and about 10 slices of char siu on top. Although it looked simple, I wondered about the taste. I started with the mountain of vegetables, including cabbage, bean sprouts, onions, and carrots, which were fresh and mildly sweet. The soup, while slightly salty due to seasoning, had a light and gentle flavor. When combined with the vegetables, the soup enhanced their sweetness and umami. The combination of the soup and vegetables was delicious. The noodles were medium-thin and slightly firm, while the char siu was also firm, which wasn't my favorite type. Overall, the Tanmen lived up to its reputation and was particularly delicious due to the combination of vegetables and soup. I went to "Hatsune" in Nishi-Ogikubo for the first time in a long time (about 20 years?). I ordered Tanmen with char siu topping. There were 5 people waiting outside, and I waited for about 30 minutes outside. One downside is that depending on where you are standing in line, you may be hit by the exhaust from the ventilation fan. The restaurant only has 5 counter seats, and since it's a one-person operation, it takes time from ordering to serving, so the turnover is not very fast. The soup is well seasoned with a rich vegetable flavor and delicious, but since the char siu has a strong flavor, it tastes bland after eating the char siu. I noticed that the owner pays attention to the presentation of the vegetables and carefully arranges them. It's a thoughtful gesture! The price of 1200 yen for Tanmen with char siu topping may be quite high for ramen, but being selected as one of the top 100 ramen shops every year, the taste is reliable, so I think it's worth trying.

It was quite a struggle in the heat, but I was able to enter after about 40 minutes. The head chef in the kitchen, who looked intimidating from the outside, turned out to be warm and understanding when taking orders, noticing that my companion and I were together and guiding us separately. I ordered the popular Tanmen (regular size) for 800 yen with an extra serving of pork. The clear soup had a balanced saltiness and a rich yet refreshing flavor thanks to the flavorful broth. The vegetables covering the noodles were finely chopped into sizes easy for elderly and female diners, showing thoughtfulness towards the customers. The medium-thick noodles paired well with the soup. The pork, slightly salty to complement the overall flavor of the Tanmen, was tender and delicious. After a while, I entered. There are only 5 seats at the counter! The food is carefully prepared by a single staff member. I ordered tantanmen, which is a simple dish without meat. The soup has a distinct "tantanmen!" flavor. It's different from salt ramen. Tantanmen has its own richness. It's like the story of a monk who practices the same movements for years and eventually becomes refined. For example, in martial arts. It's not about winning competitions but about the practice of repeating the same thing, like the Buddhist path. But in the end, it makes you stronger. That's the kind of taste it has. It feels like something amazing. (I'm just discussing this without knowing the details. The owner might be constantly studying delicious dishes and trends to improve, but setting that aside, if I were to honestly describe the impression I received) This tantanmen has reached a level where it has been made every day without unnecessary changes. Just a minute walk from Nishi-Ogikubo Station. Located in a shopping street, this old-fashioned ramen shop known as "The Ramen-ya". Arrived at 13:30 and there were 4 groups waiting in line. With only 5 counter seats, the turnover isn't that fast. Not a ticket system, so you order directly from the owner. Ordered the specialty Tanmen (with char siu topping) this time. The owner, who diligently continues making Tanmen, exudes passion and craftsmanship. Served in about 10 minutes. The soup is clear... Taking a sip, a pleasant saltiness spreads in the mouth. The char siu has a firm texture. The curly noodles mix well with the soup, and the texture is good. The cozy atmosphere with a hint of Showa era in the radio playing inside the shop. I couldn't help but fantasize while waiting for my ramen at this nostalgic Showa-era shop on my first visit. On this day, during a walk in Okutama after a long time, I stopped by Nishi-Ogikubo for lunch and visited this shop for the first time. It's a small shop with 5 counter seats, run by a quiet owner. The wooden interior creates a nice atmosphere. There were 3 people ahead of me when I arrived, so I waited about 15 minutes before entering. I ordered the Char Siu Wonton Ramen. The soup has a subtle aroma of chicken broth, bonito flakes, and a good balance of soy sauce. The curly thin noodles with less moisture have a satisfying texture. The dry char siu blends well with the soup. The wontons have a smooth texture. The naruto adds a nice touch. A popular shop at the top 100 restaurants in Nishi-Ogikubo on Tabelog! Finally made it to the renowned "Hatsune" on a scorching hot Saturday just before closing at 15:53, becoming the third in line. The line was mostly middle-aged women, with two more joining after. Amazing popularity! Waited for about 10 minutes before entering. Despite being a small shop with a lot of history, the demeanor of the shop owner couple was elegant and gentle, with the lady being very beautiful. No ticket machine, pay after. Couldn't find the restroom. Counter seating for 5, all female. The duo in front ordered half a portion of wonton noodles. The wonton ramen tasted like soy sauce, with elegant wontons and a leisurely and meticulous process. After sitting for 20 minutes, the signboard "Tantanmen" was served after the previous customers finished eating. Piled high in the middle, the vegetables were crisp and flavorful, with a nice balance of sweetness. Slightly firm curly thin noodles, which I liked. Trying vinegar, pepper, and chili oil on the table carefully with lotus root in the second half resulted in a perfect flavor change. The tantanmen, subtly delicious, explains its long-lasting popularity. Perhaps the combination of popularity and slow turnover causes the long lines?

On July 23rd, I went to Ramen TOKYO, a restaurant selected as one of the top 100 in 2022 on Tabelog, for lunch. This time, I went to the one near Nishi-Ogikubo Station. It's less than a minute's walk from the station. Even on such a hot day, I wonder if there will be a line? There was indeed a line. Since the restaurant opens at 4 p.m., I went a little after 3 p.m. but gave up due to the long line. The second time, there were about 6 people waiting, so I decided to line up. After waiting for about 30 minutes, I entered the restaurant. The interior has only counter seats, with 6 seats in total. You order verbally and pay afterwards. I had the Tanmen for 800 yen, which had a gentle saltiness. It was delicious. The noodles were a bit chewy. I finished it in one go. And yet, the owner was handling everything alone until halfway through. Truly impressive.

Established in 1961 by the second generation, ranked 89th out of 100 on Tabelog Tokyo's list of top restaurants. Seating for 5, but turnover rate is quite slow. Customers are expected to wait as acknowledged by the owner. The most popular item is the tanmen, but they also offer ramen and other options. Today's noodles were cooked slightly firm by default, thin and curly type. The soup was on the salty side with a noticeable presence of chemical seasoning. I wonder if this is one of those restaurants where the limited seating leads to slow turnover, and they tend to have high ratings on Tabelog. My expectations dropped a bit. Then the bowl arrived. It looked just like the photos I had seen beforehand, visibly light. Starting with the soup. It's a bit on the salty side but incredibly clear. Is this a chicken broth base? Maybe no kombu? The saltiness is well-balanced in the soup. Despite that, the transparency is remarkable. I was impressed by how meticulously it was prepared! The noodles are thin and slightly curly. They resemble the noodles from Mikawadani Seimen served at Tenraiken. "These noodles tend to get mushy and are tricky to cook," so my expectations dropped slightly again. However, they were cooked perfectly. They retained a firm texture that paired well with the rich soup. It's impressive to have such firmness with these thin noodles. The vegetables are lightly seasoned with a refreshing taste. Instead of asserting themselves through seasoning, they impress with their crisp texture and juiciness. Many places nowadays tend to heavily season and cook the vegetables to make them rich in flavor, but ramen vegetables are originally meant to be like this, and it's deeply moving. It was delicious. Next time, I want to try the soup with a lighter flavor.

I want to have the Hatsune Tanmen for my last supper. I came here to make up for the disappointing dish I had earlier that day. It's amazing how nothing has changed in the 35 years I've been coming here! With only one staff member managing 5 seats, the wait was 70 minutes. This wait reminded me of Masami. Each dish is carefully crafted. I ordered the Tanmen with extra chashu for 1200 yen. The chashu was delicious, with no fatty parts and a spread of savory flavor that complemented the light Tanmen well. The thin curly noodles were mixed with vegetables and I couldn't stop eating. It was delicious.

Located right in front of Nishi-Ogikubo Station, "Hatsune" is a renowned ramen shop known for its tanmen. It had been a few years since my last visit, but the place was still bustling with customers even on a weekday afternoon around 2 o'clock. I ordered the tanmen, which had gone up in price a bit to 800 yen. Initially, I couldn't understand why this tanmen was so popular when I first tried it, but on my second visit, I was struck by the exceptionally clear soup and the subtle vegetable umami hidden beneath a hint of salt, especially when compared to tanmen from other shops. I visit this place about once every few years, and each time, it feels like my dulled taste buds are being refreshed by this clear tanmen, as I usually eat richly flavored ramen. It was delicious this time as well. I truly believe that the tanmen here is the best in Japan.
