【SunT Vintage】Opened at the end of September 2022! A hidden gem wine restaurant without a signboard, incorporating the essence of Japanese cuisine, offering modern French cuisine with a focus on seasonal organic vegetables and Ezo deer directly delivered by hunters. Enjoy wine pairing with a wine list that is second to none in Akabane and the chef's carefully selected ingredients that incorporate a Japanese taste into a seasonal and modern French cuisine, as well as wine pairing by a sommelier. Indulge in hearty and delicate dishes along with carefully selected wines with all five senses. The dishes are hearty and delicate.
I ordered a course meal that was packed with the chef's commitment, featuring Ezo deer directly delivered by hunters as the main dish, incorporating the essence of Japanese cuisine and plenty of locally sourced fresh fish and seasonal vegetables from organic farms. Here are some highlights from the course:
- Spinach bite-sized potage
- Chiba Prefecture Shibakai Farm-grown "NIKKOROGASHI" taro
- Choshi Fishing Port's nodogro in bouillabaisse style
- Roasted Ezo deer directly delivered by hunter Saito with foie gras
- Vacherin "SunT" Blanc dessert
The taro cooked and fried, sautéed new onions, new onion sauce, and taro jelly harmonize beautifully. The new onions are incredibly sweet, and the sauce is too beautiful. The bouillabaisse-style soup poured over the favorite high-quality fish nodogro from Choshi Fishing Port is so luxurious that you'll want to soak in it. The deer from Ezo has no gamey taste, it's tender and easy to eat, especially when paired with crispy foie gras. The vegetables served with it are full of umami and have a satisfying texture. The dessert, Vacherin "SunT" Blanc, is too stylish, with meringue and white chocolate infused with wine, giving it a taste that is too adult to keep up with.
The wine list includes over 500 types and more than 1000 bottles. The restaurant is adorned with wine everywhere, creating an overwhelming and stylish atmosphere that will surely excite wine lovers. The Domaine Marie Demets CHAMPAGNE Tradition is a wine favored by British VIPs, including the likes of Paul McCartney of The Beatles. Even though I'm not an expert, I loved it. If you're a fan of celebrities, be sure to visit this adult space perfect for dates, anniversaries, and other special occasions. Lunch courses are available from 4,000 yen, making it easy to try.
