The website introduces it as follows: "Enjoy premium sushi while enjoying the night view of Ginza. Located a 1-minute walk from Higashi-Ginza Station, Sushi Yamaken offers the ultimate sushi that focuses not only on taste but also on aroma, texture, and appearance. The carefully selected fresh fish, from classics to seasonal items, are all delicious. The skilled craftsmen prepare the sushi with dedication, without compromising on quality. In addition to sushi, you can enjoy a wide range of dishes using fish and even meat. It seems to offer a modern Japanese cuisine that combines sushi and kaiseki dishes. The atmosphere in Ginza's prime location seems perfect. I was really looking forward to visiting. Sushi Yamaken also has a store in Shinjuku, which also seems popular.

This time, we were guided to a private room at the back.
3. What we had at Ginza Sushi Yamaken
- We started with a colorful and refreshing dish: Crab and salmon roe cocktail with finely sliced pickled radish. The combination of rich salmon roe, mild crab, and finely sliced pickled radish created a fresh taste.
- Three appetizers: White shrimp, tomato, and golden snapper with caviar. The creamy white shrimp was sweet, and the golden snapper with custard cream had a refreshing taste with the richness of caviar.
- Sashimi trio: Bluefin tuna, sandfish, and button shrimp. The bluefin tuna had a beautiful pink color and melted in the mouth, while the button shrimp had a soft texture with a firm bite.
- Smoked meat sushi: A surprising dish where the meat was smoked, and the texture was melt-in-your-mouth.
- Nigiri sushi: Flounder, scallop, golden snapper, striped jack, and squid. The scallop was soft and sweet, and the striped jack had a moist sweetness.
- Snow crab and sweet corn gratin: A rich white sauce with crab flavor, with corn adding a touch of sweetness and acidity from tomatoes for flavor variation.
- Turban shell: The turban shell was pre-cooked in broth and had a tender texture, but the liver was quite bitter.
- Wagyu beef and Kujo green onion hot pot: A light shabu-shabu dish with elegantly cooked Wagyu beef and Kujo green onion.
The experience at Ginza Sushi Yamaken was delightful, with each dish meticulously prepared and presented in a sophisticated yet approachable manner.
