I had been curious about the duck ramen at Kaede. Finally, I visited. It was just past noon, and the restaurant was about 80% full, so I entered without waiting. The spacious interior resembled an elegant Japanese restaurant. The service was attentive. Although the duck ramen was at the top left of the ticket machine, I was drawn to the duck and clam in the middle and selected it. You can choose between soy sauce and salt, and after some hesitation, I chose soy sauce. The soy sauce soup, with the distinctive aroma and sweetness of duck spreading throughout my mouth, was a standout feature. When the accompanying clam paste is mixed in, the umami of the clams comes to the forefront, creating a soda-like umami flavor. The noodles were a blend of homemade thin noodles called "Haru yo Koi" and "Mochi Hime," offering a smooth and easy-to-eat texture that slightly melts in the mouth, with a satisfying throat feel. The duck confit was delicious, with a meaty texture akin to duck loin and a rich aroma. If I were to make a wish, I would have liked a bit more duck meat. This time, I also ordered a duck bowl as a side, which was a bit underwhelming. I love duck ramen, and this restaurant, which puts it at the forefront, is rare and valuable. Next time, I would like to indulge in the duck ramen with special toppings. Thank you for the meal.

On the way back from visiting a grave, I was looking for a new restaurant in the direction of Hachioji and found this one with a high score on Tabelog. I hurried so as not to be late for the opening time. I arrived a little after 11 am on a weekday. There were 2 customers already there. I was a bit surprised (laughs) when the food was served, the staff politely explained how to eat and the soup ratio. While I thought it was my first time trying rye noodles, I followed the explanation and started with salt. Hmm, more like soba noodles than ramen. The duck broth in the soba sauce was excellent. It felt like having duck soba, but it was delicious. Thank you for the meal.

On Monday at 12:00, I tried the Duck Ramen with Soy Sauce for 1,130 yen without waiting. I knew this restaurant as part of a group of restaurants around Hachioji, but for some reason, the ratings have been increasing rapidly, so I became curious and decided to visit. I have a few favorite restaurants in Hachioji, so I'm happy to have an excuse to go there again. The duck soup was refreshing at the start and became milder towards the end. When I added the mountain pepper from the table, it was quite good. The noodles were the type that I like, firm and chewy. One slice of duck meat felt a bit lacking... If the grilled green onions were a bit larger, it would have enhanced the duck experience even more! If you have the chance, I recommend trying the special features!

Duck ramen. I think duck and green onions are good ingredients, but they are quite challenging for ramen. I have mentioned this before in another review. Now, Kaede 2nd branch is a store that has seen an increase in ratings this year compared to previous years. I was curious and decided to visit. I arrived 10 minutes before opening on a Sunday, and there were already 5 people in line at opening. I ordered the Duck Shoyu Ramen (1130 yen). The presentation was beautiful, and the soup was decent, but not outstanding. The topping, duck, was only one piece. The taste was not bad at all. Hmm, I still didn't feel the richness of the duck. The noodles were straight and good. I'm not sure what it is. It just didn't resonate with me. I'm sorry. Thank you for the meal. I left at 5:50 PM, and there were no more customers from the opening time. I think now it's a place where you can enter without waiting.

I arrived after 11:00 on Saturday and was able to get in without waiting. The restaurant has 6 counter seats and 3 tables for 4 people each. I had been wanting to try this place in Hachioji for a while, and even though I had no business in Hachioji, I couldn't resist and came. The food was incredibly delicious. When I left, there were a few people waiting outside, but I was grateful that I didn't have to wait much to eat.

When I arrived right at 11:00 on a weekday, there was no line and I could easily get in. In the world of ramen, once a restaurant becomes popular, it quickly turns into a place with long lines, so now might be a good chance to go. I'm curious about the limited 30 bowls of Duck White Tantanmen, but for the first visit, I decided to try the Duck Chinese Soba Soy Sauce for 1,130 yen. What arrived was a beautifully presented dish that matched the delicate duck. The thin straight noodles are a type that harmonizes well with the duck's flavor without overpowering it. The beautiful duck broth made from premium Kishu duck (from the Ota poultry farm in Arita region) has a gentle taste yet spreads the duck flavor in your mouth. The duck chashu comes in two types, one rare and one thoroughly cooked, allowing you to taste the difference in flavor. The addition of grilled green onions is also interesting. However, towards the end, I found myself thinking that maybe I would prefer duck soba at a renowned soba restaurant. I can't help but feel that the flavor of soba and duck go well together. This was literally my "third time lucky." Despite it not being close by, I made up my mind to go to Hachioji no matter what. I didn't even check where the coin parking was, but luckily parked right next to the store. I arrived within seconds of walking. It was 13:45. I purchased a meal ticket from the ticket machine outside and sat down on the fourth bench outside the store. The impressive exterior caught my eye. The duck ramen with salt for 1130 yen seemed to use carefully selected ingredients, hence the slightly higher price. The location near the station exuded a sense of luxury both inside and outside the store, making it reasonable for the ramen to be priced at 700-800 yen in Hachioji. The soup, made with Kishu duck, lacked the inherent flavor of duck this time, tasting somewhat ordinary. However, there were no unnecessary flavors. The noodles were meticulously made with ingredients like "Hokkaido spring love" and "Iwate mochi princess." The thinly sliced chashu, cooked at low temperature, was tender and had a good amount of fat. Along with finely chopped green onions, sliced white onions, menma, and a simple addition of one tsukune. Personally, I liked the tsukune. The menu also featured other carefully selected ingredients like "Yuyama soy sauce/Japan's best soy sauce" and "Awashima salt/Mongolian rock salt." The meticulous work was evident throughout. I actually wanted to try the "Duck and Hamaguri Dashi Ramen" with Kishu duck and direct delivery hamaguri from Kujukuri for 1180 yen, but it was sold out. I'll leave it for next time. However, what impressed me the most was the floor staff's customer service. I have always praised the warm and friendly service at ramen shops in Hachioji when reviewing them. The only thing that left me questioning was the service at the main store here. Despite having slight concerns, the refreshing and gentle reception from the time of waiting outside to leaving the store was consistent. By the way, all staff members in the kitchen and on the floor were women. If they maintain this level of service, they should definitely make it into the top 100 next year, as it is a popular store that deserves it.

Duck and clam dashi ramen for ¥1190 at Kamon Chinese Noodles Maple in Hachioji, Tokyo. I was lucky to have one of the last few bowls of this duck and clam dashi ramen. I arrived around 11:30 on Saturday and was able to get in without much of a wait! I tried the "Chinese noodles with duck and clam dashi broth"! Can you believe it was already sold out at this time...! I tried both the soy sauce and salt flavors, but the soy sauce one had a rich flavor and was overwhelmingly delicious. I decided to change the taste halfway through with black shichimi pepper and it was a winning move. Perhaps because all the chefs were women, the dish was meticulously presented and I enjoyed it very comfortably. Thank you so much!

The homemade thin noodles are smooth to slurp, with a delicious wheat flavor. The tender duck loin matches perfectly with the fruity sauce, so tasty! The toppings include two different types of chashu, meatballs, menma, and green onions, which are quite satisfying even without any special additions. I visited "Kamo Chuka Soba Kaede" for lunch on a weekday. It is a second brand of the popular restaurant "Ramen Kaede" located in Oiwada-cho, Hachioji City, which opened in December 2003. This time, I stopped by on the way to a meeting at the company's Hachioji branch. The location is very convenient, just a 2-minute walk from Keio Hachioji Station. I arrived 10 minutes before the 11:00 AM opening, and there was no line outside! At the exact opening time, there was a line of 6 people. Before entering, you purchase your meal ticket from the ticket machine located outside the entrance. The main noodle menu includes "Kamo Chuka Soba (soy sauce/salt) for 1,130 yen," "Kamo and clam Chuka Soba (soy sauce/salt) for 1,180 yen," and "Kamo white broth tantanmen (limited to 30 servings) for 1,230 yen." Additionally, limited-time menu items are also available and announced on the official "X" old Twitter account early in the morning of that day. This time, I chose the default "Kamo Chuka Soba" based on the rule on the upper left of the ticket machine since it was my first visit. I specified "soy sauce" when handing over the ticket. The restaurant has a counter with 6 seats in a row and 3 tables for 4 people each. The interior is predominantly black, creating a calm and chic atmosphere. I could see the kitchen! A male staff member was in charge of cooking the noodles, while the female staff efficiently prepared the toppings. Three female staff members managed the front of the house. After about 5 minutes, the eagerly awaited "Kamo Chuka Soba" arrived. The soup, with a tea-brown color, was topped with pork chashu, duck chashu, thick menma, grilled leeks, and green onions. A grapefruit sansho tapenade sauce was added to the duck chashu as a finishing touch. When I tasted the soup, I could feel the refined duck broth made with Kishu duck and the richness of the bonito base spreading in my mouth. The perfectly blended seasoning complemented the broth well. The chicken oil on the surface enhanced the richness and umami of the soup. The noodles were thin straight noodles with a chewy texture. They were slightly softer than al dente, which paired well with the soup and held plenty of it. The duck chashu included two types: a seared portion and breast meat, both providing a unique texture with a juicy umami flavor. The pork chashu was tender and full of its inherent deliciousness. The grilled leeks, which paired well with the duck broth, were fragrant, and the sliced green onions added a subtle sweetness. The thick menma had a crunchy texture and was well-seasoned. I finished every last drop of the soup and noodles. It was a bowl that showcased the high quality of ingredients and flavor. The limited-time menu on that day was the "Duck Seiro with Rye Noodles." Although I was tempted by the standard menu, I will look forward to trying the limited-time menu next time. P.S. Currently, the "Kamo and clam Chuka Soba" is no longer available, and it seems that duck meatballs are now being served instead of duck chashu.

We ordered our dishes from the ticket machine outside and were guided to a table by the attentive staff in the nearly full restaurant. The interior had a spacious feel with 6 bar counter seats and 3 four-seater table seats. The jazz background music and stylish bar-like atmosphere were refreshing and clean, attracting a lot of female customers (*´ω`*)♪ We handed our tickets to the staff and placed our orders! My husband had the Duck Chuka Soba (Soy Sauce) for ¥1,130... The duck broth soup made with a blend of Yunasa soy sauce and Japan's number one soy sauce is delicious on its own, but when you mix in the homemade grape sansho tapenade sauce, you can taste the sansho flavor, making it even more delicious. First sip of the soup... delicious! The flavor is moderate. The umami of the soup made from Kishu duck from Wakayama Prefecture blended with branded soy sauce gives richness, mellowness, and depth. I visited around 11:55 on Sunday. There was no line at the time of the visit, and I just managed to get a seat. It seemed that they had just been letting people in before me, as half of the customers were waiting for their orders. I purchased duck ramen and a seasoned egg at the ticket machine, and when they handed it to me, they asked if I wanted soy sauce or salt, so I chose salt. They efficiently made 3-4 bowls in one batch. The noodles were thin and were cooked for about 45 seconds. Most of the cooking time seemed to be spent on plating. The dish arrived about 10 minutes after entering the restaurant. The soup was amber-colored with a chicken-based broth and the aroma of yuzu pepper. The toppings included green onions, bamboo shoots, thinly sliced ​​chashu pork, duck chashu pork, pieces of duck meat, a seasoned egg, and yuzu pepper. The soup wasn't very duck-flavored and was refreshing. With three types of meat, the dish had a satisfying texture. The duck meat was firm and delicious. The seasoned egg was slightly runny. The yuzu pepper did a great job, and it kept the dish refreshing until the end. I sprinkled a little black shichimi pepper to my liking, and it was a perfect flavor enhancer that tightened up the soup at the end. It was very delicious. Thank you for the meal.

When searching on Tabelog in the Hachioji area, most of the top-ranked restaurants are ramen shops. I visited this place that caught my attention. It's just a few minutes' walk from Keio Hachioji Station, located on the first floor of an apartment building. There's a ticket machine outside where you purchase your meal ticket. The staff who greeted me was very friendly, and the interior of the restaurant was surprisingly clean for a ramen shop. It seemed like they separated the staff's footwear between the kitchen and seating area. On this day, I ordered the Duck Shoyu Ramen (1,130 yen). It may seem a bit pricey for a standard ramen, but considering the atmosphere, taste, and toppings, I think it's a reasonable price. The soup is a bit salty but rich in flavor. The homemade noodles are smooth and have a good texture. They serve homemade tapenade (olive paste) on the side, and when you mix it into the soup, it enhances the aroma and tastes delicious. You can feel their dedication to quality ingredients, making it a highly satisfying ramen shop.

After seeing the reviews, I really wanted to try the "Rye Noodle Duck Seiro" priced at 1500 yen. I had a reason to go to Hachioji, and if I missed it today, I felt like I would miss out on trying it, so I decided to go to the restaurant. I had my heart set on the duck seiro, but just before ordering, I found another limited menu item called "Kishu Duck and Sudachi Cold Ramen." Sudachi sounds nice... I was quite torn, but I stuck to my initial choice and went with the duck seiro for 1500 yen. It's quite a price for lunch, but I thought if it's delicious, it's worth it. Since I avoided lunchtime, there was no wait outside and the inside of the restaurant was calm. As usual, being alone, I sat at the counter and watched the cooking process. Then, a beautifully presented pink noodle dish with duck arrived. I started with the noodles, then enjoyed the duck which was generously served on top. It was tender and delicious. I'm not usually a fan of duck, but the duck meat here is always delicious. I added the accompanying seasonings and also tried the noodles with salt. The noodles were delicious with a firm texture that made them easy to eat with chopsticks. Whether it's the noodles, dipping sauce, or toppings, everything felt like it was done with care. The plum dipping noodles from the spring limited menu were also delicious. The summer limited menu's dipping sauce with sudachi was refreshing and tasty. The topping of green vegetables had a slight bitterness and spiciness, which added a nice accent. Finally, I finished with a soup refill. It was delicious again today. Since at Maple in Yamada they have chicken dipping noodles, I'll try that next time.

I came to Kamon Chuka Soba Kaede in Hachioji at 20:15 on Friday, August 18, 2023. It seems that it is ranked 3.82 in the Top 5000 on Tabelog as of today. The restaurant has 6 counter seats and 3 tables for 4 people, making the interior spacious. The beautiful interior seems like it could be Michelin-starred, enhanced by the jazz music playing. There are 2 customers, a young owner, and a female staff member running the shop, and the refreshing greeting from the owner creates a pleasant atmosphere. At 20:20, I tried the Kamon Chuka Soba soy sauce for 1130 yen. The noodles are beautifully arranged, showing attention to detail. I personally find duck delicious these days. When I drink the soup, the duck flavor is elegant with no overpowering taste. The aroma of the flavored oil gently spreads in the mouth. The seasoning might be slightly sweet. The noodles are homemade, with a fluffy texture and a wheat fragrance. They are thin and straight, with a slightly low water content, complementing the soup well. The chashu is average, with a thin texture that leaves a bit of a chew. The menma is ordinary, tasting like it could be found in a famous ramen shop. The high rating on Tabelog is understandable after having this bowl. In terms of Power Pro stats, it might be a favorite taste for both men and women (Meat B), but those looking for a punch like what a male student (Power C) might seek could find it lacking. In the competitive ramen scene of Hachioji, being close to the station could be an advantage. The clean and pleasant interior, along with the refreshing owner, adds to the appeal. The customer traffic isn't too high, and since the owner is the one preparing the food, there seems to be little variation in taste. It was delicious. Thank you for the meal.
