On Monday, August 7, 2023, I visited Hinata Mata Noboru, which was one of the top 5000 restaurants on Tabelog with a rating of 3.76 as of today. Last time I came on a Tuesday, but they were closed. While Tabelog indicates that they are open for lunch on Tuesdays, it seems to be their regular closing day. This time, I made sure to check online to confirm their operating hours, and since their Twitter was updated, there were no issues. I arrived early, so I took a stroll around the neighborhood. The restaurant opens at 11:30, so when I returned at 11:25, I realized I had underestimated the situation as there were already two customers ahead of me. Nevertheless, the restaurant opened promptly at the scheduled time. I ordered the 950 yen niboshi ramen ticket. Inside the restaurant, the rock music was blasting at a moderate volume. It seemed like the music was the main focus, not catering to female customers but rather exuding a masculine vibe. When I tasted the soup at 11:40, it didn't have a strong niboshi flavor, but it was delicious. The noodles were thin and chewy, typical of niboshi ramen. The niboshi flavor was gentle, and when eaten with onions, it added a hint of sweetness. The chashu was thick and had a good chewy texture, although the taste was average. The atmosphere inside was lively, with a camaraderie between the staff and customers. Despite the laid-back vibe, the niboshi ramen with animal-based soup was simple yet tasty. Overall, the restaurant had a decent performance, with a somewhat lackluster effort in service and customer engagement. The staff seemed relaxed yet efficient, providing a satisfactory dining experience. It was delicious. Thank you for the meal.
