I made a reservation in advance and visited the restaurant at 7:00 PM on the weekend, but it was fully booked! This pizzeria, which has been selected as a Bib Gourmand in the Michelin Guide Tokyo 2023, is known for its delicious pizzas. We started with a Prosecco Extra Dry DOC and homemade ginger ale with amaretto. As a starter, we were served corn potage. I wanted to fully enjoy the pizzas, so we only ordered pizzas without any appetizers.
We ordered the Tamaki pizza, which features cherry tomatoes, fresh smoked mozzarella, pecorino, and basil. Normally, I always order the simplest Margherita pizza, but this time I decided to try the pizza named after the restaurant. The cherry tomatoes were meant to be crushed while eating, so I followed the instructions. The smoked mozzarella didn't have a strong smoky flavor. The pizza dough was chewy, the cheese was melty, and it was simple but delicious.
Next, we tried the Bismarck pizza, which had fresh mozzarella, mushrooms, homemade pork sausage, pecorino romano, and quail eggs. The abundance of mushrooms and sausage was delightful, and I especially enjoyed the runny yolk from the Bismarck egg.
We also tried the Special Bianca pizza, which was a cheese lover's dream with fresh burrata, buffalo mozzarella, mascarpone, and white truffle oil. The aroma of the truffle-flavored olive oil added to the happiness of indulging in this cheesy pizza.
We sat at the counter on the first floor, where we could watch the pizzas being made right in front of us. The unique way they made the crust, with uneven thickness and a puffy edge, was interesting to see. The slightly burnt parts were intentional and considered part of the pizza's appeal, but personally, I found it a bit too burnt. Despite eating three pizzas between the two of us, we didn't feel too full or uncomfortable afterwards.
