The thin chashu was tender like roast beef and blended perfectly with the dipping sauce. The noodles were thick but had a great chewy texture and excellent mouthfeel. The broth at the end had added pork bone soup, creating a mild flavor that felt like a new creation of tsukemen. The onion rice was also delicious with just the right amount of sauce. I checked Tabelog to find a delicious restaurant in Ichigaya, and found a nice-looking ramen shop just around the corner! Even though it was 2 o'clock, they were open all day. I decided to go for the tsukemen since it was still hot outside. I also found a dish of chashu rice. The colors looked great in the photos! The staff were friendly and the atmosphere was nice. The tsukemen and chashu rice arrived at the same time! The colors were wonderful. The tsukemen had thick noodles served piping hot, and the chashu rice had a perfect char on it! The chashu was finely chopped and easy to eat, and the charred flavor was amazing! Even though some highly rated restaurants may not suit everyone, this place was fantastic! After my health check-up, I found a restaurant that was open all day and had about 5 customers at the counter even though it was around 3:30 pm on a weekday. I was grateful that they were open all day. They seem to focus on their noodles, so I ordered the tsukemen (980 yen). The noodles came with 2 slices of chashu, green onions, seaweed, and sesame on top. The dipping sauce had bamboo shoots in it, which I accidentally bit into without noticing and burned my lip. Be careful, everyone! The dipping sauce was rich but not too heavy since it was fish-based, so it was easy to eat. I preferred putting the chashu from the noodles into the dipping sauce to make it softer. Eating the chashu on its own was a bit dry due to the searing. The noodle portion was normal, about 250g, so there was more than enough even without getting a large portion. Thank you for the meal.
