The noodles are champon noodles. Actually, I always think that this could also be good with rice, maybe even better with curly egg noodles... Anyway, the staff turnover is quite high, so I see unfamiliar staff members sometimes. Their service is lacking a bit, as they don't seem to notice when the water or tea needs refilling without being prompted. But I guess it's understandable since it's a good hotel, and this level of service should be expected. The appetizers like Peking duck, soup, and saliva chicken were delicious. The saliva chicken was so good that I was inspired to make it myself when I got home. Aside from dim sum, they also brought out one of each other menu item, so you can eat a lot. The staff were polite and attentive, but I was a bit rushed at the end when they told me the last order was 30 minutes before closing, but then they came 40 minutes early to ask for my order. It's been a while since I had lunch at the Grand Hyatt. During my 20 years in Roppongi Hills, the place where I had lunch the most was ChinaRoom. I used to go there every week and enjoy their collagen-rich chicken soba. When it comes to chicken soba, there is a well-established famous shop near the Roppongi intersection, but I personally prefer the chicken soba at ChinaRoom because the richness of the soup is more pronounced and it goes well with the thin noodles, making it my favorite. The contrast between the rich collagen and the crispiness of the vegetables in the soup is excellent, making it a top-notch dish that lives up to its reputation as a beauty hot pot! And when you eat the almond jelly with lemon on top, it refreshes your mouth after enjoying the collagen-rich chicken soba, which is delightful.
