Yusushi @ Higashifuchu, Fuchu City, Tokyo @ Located north from Higashifuchu Station on the Keio Line, along Heiwa Street lined with trees, and about 200m on the left after crossing the Koshu Kaido, is a long-standing sushi restaurant. It has been in business for 56 years. In fact, it is a restaurant that my family used to visit frequently during the previous generation, but for some reason, we drifted away and it has been 6-7 years since our last visit. The reason I remembered it was because a friend told me it was good. Inside the restaurant, as you enter, there is a white wooden counter, and at the back on the right, there is a space with tatami flooring that is slightly elevated, with two 4-seater tables and two 6-seater tables in a black-themed setting. This space was renovated a few years ago. As a COVID-19 measure, the windows are open. The previous owner passed away 6 years ago, and his son has taken over. The restaurant has never had a lunch menu and only operates with a grand menu. The nigiri sushi is available in three levels: ¥2,000, ¥2,500, ¥3,000, and there is one chirashi sushi option for ¥2,500. It is a restaurant where regular customers enjoy their meals as they like. I chose the chirashi sushi for ¥2,500 (excluding tax). The elegant black dish is divided in the middle, with vinegared rice and toppings suitable for a bowl on one side, including sea urchin, salmon roe, crab, whitebait, simmered eel, and kanpyo, and on the other side, daikon radish, shiso leaf, and myoga are laid out, with fatty tuna, white fish, and tamagoyaki placed on top. The toppings, including fatty tuna, horse mackerel, Japanese horse mackerel, seared flatfish, simmered eel, shredded crab, salmon roe, sea urchin, raw whitebait, sweet shrimp, and tamagoyaki, are all fresh and delicious. The vinegared rice was a bit too sweet and sour for my taste, but the deliciousness was outstanding. It was mentioned that there was a reservation after my visit, and a sign indicating that preparations were underway, but when I peeked in, I was warmly welcomed. The only other customer was a lone daytime drinker. I was able to enjoy my lunch leisurely. During my stay, there were many reservation calls, so I feel that reservations are essential for dinner.
