4-5 years ago, I visited a ramen shop called "Togyushi" that was only open on Sundays. I suddenly remembered it at dusk in Kita-Senju and decided to go check it out! It was a bit far from the station, so I thought if it was crowded, I would give up. But luckily, there was a line of about 3 people, and I was able to enter in about 5 minutes! When I asked the owner, he said that "Togyushi" was no longer in business, so I realized that I had the opportunity to try a rare ramen back then. It was before I started writing reviews on Tabelog, so I couldn't review it, which was a shame! I ordered the following at the ticket machine:
- Luxurious grilled beef ramen (with seasoned egg) ¥1,150
- Salt ramen ¥900
The ramen arrived in 5-6 minutes, and it was incredibly meaty! Australian roast beef filled about 70% of the bowl. I was overwhelmed by the soup that was made from a variety of ingredients. It was so complex that I almost lost sight of what was the main flavor. I'm glad I came to eat! My companion's salt ramen had a stronger flavor than expected, but the saltiness didn't overpower. It's all thanks to the various ingredients. When comparing the two, I am definitely a fan of the luxurious grilled beef ramen.

This is Matador's first post. It must have been over 10 years ago, when Matador was still under construction and had just opened. I remember waiting in line for over 30 minutes for the rare beef bone ramen and roast beef instead of chashu. It was a hot weekday at 11:40 am with only two customers ahead of me in line. I quickly chose the "Luxurious Grilled Beef Ramen" button at the counter and sat down. In about 5 minutes, my bowl arrived. There were three slices of roast beef, and the noodles and seasoned egg were hidden from view! I took a sip of the soup, which had a sweet soy sauce flavor that still tastes fresh today. The menma hidden under the roast beef and the beef tendons added great flavor. The noodles, made by Mikawa-ya Noodle Company, were the usual thin noodles that paired well with the sweet soup. I finished my meal with satisfaction. Thank you for the delicious meal! ^_^

Every day, it's extremely hot. I was prepared for crowds, but when I went around 1pm, there were no customers. Probably because students are on summer break. I bought the luxurious roast beef ramen for 1150 yen from the ticket machine and sat at the counter. When the ramen arrived, my heart danced. The three slices of roast beef covering the ramen were delicious. There was also a slightly sweet and different textured corned beef. The noodles and soup mixed well. However, slurping the soup made me break out in sweat, which was a bit of a problem. Overall, it was a satisfying ramen experience.

I finally made it to a restaurant I had been wanting to visit. We arrived around 12:30 on a Sunday and the counter-only seating area was full with just us. Phew. I ordered both salt and soy sauce, feeling extravagant. The water was delicious to start. The restaurant had a unique aroma of beef broth that I had never smelled before. The noodles were thin and slurpy. These noodles were sweet. Maybe they stood out more because of the broth, which was also sweet. The soy sauce broth was on the sweeter side, but not overpowering. It had a rich flavor that paired well with the roast beef. I actually preferred the bits of corned beef-like pieces inside over the roast beef. It was easier to eat and I liked it. Of course, the soup took on a sukiyaki-like flavor. If you want to taste the beef bones, go for the salt! The clear broth really brought out the sweetness of the beef bones. The temperature was just right too. It's a taste you can't find elsewhere. If I were to nitpick, the chairs were fixed, so the distance between the bowl and me felt a bit far. Also, it was a bit off-putting to see a staff member using alcohol to wipe down the counter right next to where they were assembling the dishes... I wondered if it was not a hindrance when they were placing the roast beef on top? They could have just moved to the other side of the counter to wipe it down. Just a little thing that bothered me.

After 7 years, I revisited Matador, and it was just as delicious as I remembered. Although there wasn't a long line like before, the soy sauce ramen was still amazing. There are more shops offering delicious soy sauce ramen now, but Matador's unique Western touch sets it apart. The shredded beef, or should I say the meat beneath the chashu, was particularly tasty.

I was hesitant to visit the Nishiarai location after hearing negative reviews about the closed Minami-Senju location, but I decided to give it a try during a less crowded time. I was amazed by the variety of ingredients they use and couldn't help but wonder how many kinds they have! The meticulous work of the owner assured me that the food would be delicious even before I took a bite. However, the meat was too big to chew through, so next time I'll order a menu with smaller pieces. Despite the bar-like interior and the temptation to have a glass of red wine, the atmosphere of the restaurant made me appreciate the great value for money considering the generous amount of ingredients used. I understood why it was so popular. I left feeling grateful to the chef and looking forward to coming back to enjoy their ramen.

I started sweating after a short walk. Kitasenju also seemed less crowded than usual. We wandered around in the morning and by 1 pm, we decided to have lunch at the Gyu-kotsu Ramen Matador. There was only one group outside. It was not crowded. We waited for about 10 minutes and then entered the restaurant. The interior had only counter seats. It seemed like they were short-staffed. I purchased the ticket for the luxurious roast beef ramen for 1150 yen. You can self-serve water and use paper aprons. After a short wait, the ramen arrived. It looked luxurious with two slices of roast beef on top. There was also something like corned beef and a flavored egg. The soy sauce-based soup was strong but delicious. The noodles were thin and straight with whole wheat flour. The roast beef was delicious! The corned beef-like meat was shredded beef and tasted great with the soup. The flavored egg had a firm yolk, which was a bit disappointing. Since there wasn't much of a line and we didn't have to wait long, we were able to enjoy our meal without much stress. Next time, I want to try the salt ramen.

I selected the 1150 yen option from the ticket machine on the top left, which included a soup with plenty of seafood and vegetables infused with the ingredients, along with thin noodles and a topping resembling roast beef slices. It had a slightly flat finish and was reminiscent of beef stew. It also came with two slices of roast beef and a flavored egg. The quality was definitely worth the price of 1150 yen. Even if it was priced at 1500 yen with two slices of roast beef included by default, it would still be worth it. The soup was so delicious that I finished every drop. I only visit Kita-Senju once every few years, but I always make sure to visit Matador each time. I have never regretted not going anywhere else, and I will continue to visit Matador whenever I come back.
