In 2005, "Alcântion" opened at Tokyo's Hoyasu Station. In 2016, "Alcântion NERIMA" also opened at Nerima Station. Chef Morimoto trained at "L'épicurien" in Kichijoji and "Brian Avnille" in Odawara (now closed), then went to France in 2003, where he trained at several establishments including "Marque" in the Bordeaux region, where the flagship product "Dunette" originates from. After two and a half years of training in France, he returned home, bringing with him "Dunette," which is a specialty (patented product) of "Marque." "Alcântion" is the only place in the world where it is sold. When I arrived around 18:30, most of the fresh sweets were sold out, but they still had "Dunette." "Dunette" (boxed) costs 1,050 yen, Kugelhof costs 250 yen, and Pool Car costs 560 yen. "Dunette" is made using cognac, pine nuts, and almonds (from Marcona in Spain). The soft dough is rich with cognac flavor, enhanced by the aroma of chocolate, with the texture of almonds adding to its sophistication. As the flagship product, it offers a unique taste that I haven't experienced elsewhere. When you visit Alcântion, this is definitely a must-try! It would also make a delightful gift. Pool Car is a cake made with three types of chocolate (bitter, milk, and white), combined with pistachio and strawberries. The pistachio base provides a crunchy texture, complementing the bitterness of the chocolate and the acidity of the strawberries. The combination of chocolate and fruit acidity is a typical French pairing. Kugelhof, resembling the shape of a canelé, is a fermented pastry originating from the Alsace region of France. It's baked in a unique mold with a hollow center resembling a mountain peak. Traditionally, almonds are placed at the bottom of the mold, and then a brioche-like dough with raisins soaked in liquor is added. It's said to have been Marie Antoinette's favorite. Although I couldn't buy canelé this time because it was sold out, Alcântion's canelé adheres to the authentic recipe of Bordeaux. In Japan's patisserie scene, Alcântion stands out for mastering traditional French techniques from Bordeaux and inheriting the "Dunette" from "Marque."
