Tournage is a bakery specializing in authentic natural yeast bread, founded in 1995 in Jingumae, Shibuya-ku. Since then, we have been dedicated to making our own natural yeast with a strong commitment. All our bread is made using natural yeast and domestic wheat, ensuring that they are additive-free, safe, and healthy. Natural yeast bacteria produce essential nutrients such as vitamins, minerals, amino acids, and enzymes. They promote digestion, absorption, and immune function, as well as balance the intestinal bacteria. Similar to miso, soy sauce, sake, and salt koji, natural yeast is a fermented food. By adding our special yeast broth, packed with umami components, to dishes, they gain a deep richness and a subtle yeast flavor. We sell around 30-40 types and about 300 pieces of bread on weekdays, but the variety may decrease early in the afternoon on some days. Due to the nature of natural yeast bread not being suitable for mass production and our location in an office area, most customers come during lunchtime, resulting in fewer visits in the afternoon. Therefore, we only bake once a day.
