You can enjoy various cocktails made with different types of tea such as sencha, gyokuro, matcha, hojicha, genmaicha, and oolong tea. Even if you're not sure what to order because you're new to cocktails using tea, it's nice that there is a course where you can choose 3-5 recommended cocktails from the menu. This was my first time trying tea-based cocktails, and I was pleasantly surprised by how well fruits like kumquats and strawberries (amaou) paired with tea. It's not so surprising when you think about how fruits and tea are often enjoyed together. The Matcha Godfather, with its amaretto almond flavor, also paired well with matcha. It's not so strange when you consider that nuts are a common accompaniment to tea. It was interesting to have cocktails in a matcha tea bowl for the first time. The bar is located inside a department store (Ginza Six) and the glass walls make it easy to see inside, making it inviting for those not used to bars.

The friends and I had 9 cocktails for about 18,000 yen. The waitress had excellent English. We ordered all tea-based cocktails, which were delicious. There was a service charge of 800 yen per person. We tried the Signature Tea Cocktail Course with 3 cocktails for 5,100 yen. The atmosphere was great, and the bar specializes in tea-infused cocktails. It's a good place for those who like tea and alcohol. The staff's English was very fluent. The clientele was mainly foreigners, and it's a nice place for those who aren't fluent in Japanese and want to drink in the afternoon.

I made a reservation for 13:30 on a weekday and it was my second visit, but it was very crowded and fully booked! They offer a course with 3-5 cocktails based on tea, and my friend and I tried a course with 4 cocktails, slightly changing it to taste 6 different ones. Some cocktails didn't seem to have any connection to tea from their appearance, but when you got closer, you could smell the tea! I wanted to take my overseas friend to a place where they could enjoy something typically Japanese, so I decided to visit here. My friend was also very happy! The owner mentioned that about 80% of the customers are from overseas. It's nice that they are open for lunch as well (^^)

A cocktail bar with tea as its base. It offers a variety of Japanese teas such as green tea, genmaicha, and hojicha, as well as Chinese teas like oolong and Taiwanese teas. The cocktails are very creative and the flavors change with each sip, making it very enjoyable. Located in GINZA SIX, the seating is limited so it's recommended to make a reservation before 7 pm or call ahead to check for availability. The atmosphere of the shop is very nice, and the bartender was friendly. I would definitely like to visit again.

I visited this place for the second stop on a date. I wanted to experience a tea-based mixology cocktail, but it was getting late so I only ordered one drink. The cocktail had a strong tea flavor and aroma, which surprised me! It seemed to be popular among foreigners, as I noticed many around me were from overseas. I heard they also offer a cocktail course, so I'd like to go earlier next time and enjoy it!

I took a break and found a bar inside GINZA SIX for the first time. I tried a cocktail made with Japanese red tea and strawberries, which was dangerously easy to drink. I heard that there are many cocktails based on tea, so I want to try various ones next time. As expected, the majority of customers were foreigners, with my husband and I being the only Japanese couple.

A small bar located on the 13th floor of Ginza Six. The name "Mixology" is a coined term blending "mix" and "logical". They incorporate tea into their cocktails using technologies like centrifugation, vacuum distillation, and sous-vide to create Japanese-style cocktails. The space offers tea-based cocktails and mocktails using non-alcoholic spirits. Despite its small size, the space is highly refined, striking a balance between Japanese and Western elements to create a unique atmosphere. The seasonal fruit Seedrops Spice 092 is a non-alcoholic cocktail featuring strawberries, which is easy to drink. The tea snacks served alongside are also well-crafted and complement the tea-based drinks. However, the experience was somewhat dampened by the bartender repeatedly giving instructions to the staff. Despite the intricate techniques and knowledge involved, a cocktail that is enjoyed while being lectured feels lacking. Leaving the bar with a feeling of being nagged.

The appearance is stylish. Upon entering, it feels like a tea room. That's because it is. Enjoy tea cocktails and tea tails. Carefully selected tea leaves are used, influencing both the cocktails and non-alcoholic drinks. According to the restaurant's website, the cocktails are tea-based, with options such as sencha, hojicha, Taiwanese oolong tea, and jasmine tea. Gaze at the glasses gently swaying like watercolor paintings, and be soothed by the changing flavors and aromas when you taste them. Experience blissful moments. Indulge in cocktails made with carefully selected tea leaves at this adult hideaway bar. Mixology creates cocktails that cannot be found anywhere else in the world by utilizing techniques such as centrifugation, vacuum distillation, and sous-vide cooking to create entirely new ingredients. However, on this particular day, in this humid weather, I was in the mood for fruit cocktails and martinis. Blow away the humidity with cocktails such as pear cocktail (vodka-based) for 1760 yen and martini for 1650 yen. Cover charge is 800 yen.

I dropped by Mixology Salon. I was looking for the limited edition fig yokan and a tea cocktail recommended for pairing, the Darjeeling Tea Tail No.2. The cocktail is made by delicately adding alcohol and herb syrup to preserve the subtle taste and aroma of the tea. This one had Darjeeling tea, rose vodka, lavender syrup, elderflower liqueur, Lillet Blanc, and a few drops of nocello walnut liqueur. The aroma that filled the wine glass was amazing. Women will definitely love this. Each cocktail is delicate and allows you to appreciate the unique aroma without overpowering the tea. The desserts are also subtle to complement the tea. The fig yokan was not too sweet but satisfying. The harmony of the taste and the ambiance of the space creates a sense of contentment. The yokan is from VERT in Kagurazaka, available in limited quantities during a collaboration event. They also serve complimentary matcha brownies and senbei. They offer cocktail courses with 3-5 drinks to choose from. They even have mocktails for non-drinkers to enjoy the experience. The bartender's hospitality helped me relax after a long week. I definitely want to visit this place on the 13th floor of GSIX again.

I have only been to the Akasaka branch of the Mixology series, but each store has its own concept and is enjoyable. This shop in Ginza focuses on tea as its concept, offering a variety of tea cocktails such as green tea, hojicha, and black tea. There are also many snacks that pair well with tea, and on this day, they even had a paste dish that I couldn't resist ordering. It's great that they open for lunch too.

I visited a favorite Japanese tea dessert specialty store called Veil in Kagurazaka for the first time, located in Ginza Six. I participated in an event pairing their sweets with tea and cocktails using fruits and spices. The bartender was friendly and we had a great time chatting while enjoying the alcohol and desserts. Thanks to the collaboration event, I discovered a wonderful new shop. It's a lovely place where even solo visitors can feel comfortable. It seems like a great spot for meetups as well ❤️ I have more details on my blog if you're interested, so please take a look: https://ameblo.jp/pon0119/entry-12759328096.html

In Ginza, where bars gather, there are limited options for daytime drinking. I visited a place where you can have a drink after lunch. The concept of the place is "tea cocktails". It is a small establishment with a few seats at the counter and one table. It is located on the 13th floor of GINZA6's restaurant floor. The atmosphere is more like a cafe than an authentic bar, making it a space that even women can feel comfortable in.
I tried the Pear Mountain Tea and Rum cocktail, which uses tea leaves from the famous tea-producing region of Pear Mountain in Taiwan. The combination of rum's sweetness and the refreshing bitterness of oolong tea creates a delicious flavor. I was able to relax and enjoy my time in this cozy space. However, I found the table charge of 800 yen a bit high considering the location. It cost 6500 yen for two people, and I would like to visit again if I have the chance.

Ginza SIX's 13th floor is home to BAR Ocha, a sophisticated space where you can enjoy tea and cocktails with a Japanese touch. This time, I tried the Houjicha Rum Manhattan and Nashi Sansho Martini with Gyokuro jelly! Both drinks were quite strong, especially the Nashi Sansho Martini, which made my throat feel warm after a long time! The refreshing scent of Nashi Sansho lingered in the aftertaste, bringing back nostalgic feelings. Inside the bar, branches gently swayed, casting shadows on the wooden tables, while the aroma of freshly brewed tea filled the air. It was a soothing space perfect for leisurely conversations. This is one of my favorite shops. I dropped by right before closing time because I wanted something light and lounge-like, rather than alcohol. I ordered a sweet non-alcoholic drink and something warm. It was a pleasant time with the perfect sweetness of black honey and matcha. The sommelier mentioned that they are currently making fermented vinegar, showing me a half-finished bottle. The depth of fermentation is quite enjoyable. I don't know much about this world, but just listening to the conversation was fun. The roasted green tea gin next to me also looked very delicious. This shop, always with a comfortable atmosphere, is a place where I can enjoy myself easily.

I visited in the evening, it's a rare bar that opens from 11 pm inside the Ginza Six building. They serve cocktails with a natural tea aroma, not artificially intensified. In their Tea Tail series, they mix roasted tea with vintage port wine, XO cognac, and cassis. At first, the alcohol scent hits you, but then a rich roasted tea aroma follows. The tea becomes the star with a gentle sweetness from the cassis that surprisingly matches well. The high-quality mixology is impressive, and the atmosphere is laid-back and enjoyable without being pretentious.

GinzaSix's "Mixology Salon" is amazing with their concept of tea-based bar drinks, especially their Gyokuro Martini. It's clear but tastes and smells like tea! Their attention to detail is incredible. Personally, I think enjoying it with smoked olives is the best. #GinzaGourmet #Ginza #GinzaSix #MixologySalon #Mixology #Bar #Gyokuro #tea

Mix "Mix" + Ology "Theory" = Mixology. It seems to be a coined term. You can't leave without trying a cocktail made with tea when you come here. The cocktails made with homemade spirits distilled with tea leaves are different from any other bar. I didn't have much time on this day, but it's easy to drop by for just one drink. I vaguely remember, but I think I had a tea cocktail made with Kyoho grapes. I believe it was rum-based with oolong tea flavor. You can enjoy the sweetness of Kyoho grapes and the tea flavor little by little. I was surprised that Kyoho grapes and oolong tea go so well together. It's delicious. The homemade? brownie from Charm is also incredibly delicious. It might be worth knowing about such a refined and interesting concept bar.

I stopped by for a break because I was nearby! It was around 5 pm on a weekday and there were about two other groups of customers. I ordered a mocktail and a matcha Godfather, both made with seasonal fruits. The mocktail used Kyoho grapes, creating a beautiful cocktail in autumn colors. They used grape vinegar from Coco Farm Winery, which I trust immensely, and I was almost moved to tears by the superb taste of the bar.

If you are a bar lover, you may be familiar with Ne Plus Ultra, a bar owned by Mr. Ito. When I first visited with my grandfather, I was overwhelmed by how sophisticated the place was and almost wanted to run away because I felt so out of place with my cigarette, suit, and shoes. It's been almost 20 years since then. Have I become more relaxed in bars since then? I recently visited a bar with a concept inspired by Japanese tea and mixology, where I could see the attention to detail in every aspect. Young bartenders are following in the footsteps of their mentor.
