這是我非常喜歡的餐廳,我曾兩次在午餐時造訪,這次終於來到了我夢寐以求的晚餐。主要是吧台座位,但也有兩張桌子和一個包廂。無論午餐還是晚餐都只提供預訂菜單,午餐是7,000日圓,晚餐是13,000日圓。(截至2022年1月)這次我們沒有選擇配酒,只點了茶(800日圓)和一杯葡萄酒(1,600日圓)。《菜單結構》・前菜:不在菜單上的小點心。它是在餅皮上放置了蘿蔔、芋頭和奈良漬。・扇貝:與蔬菜和青蘿蔔一起搭配的青醬。・鰤魚和芝麻菜的涼拌。・蝦仁油炸:油炸的內餡是蝦仁、蓮藕、里芋,配上醋味麵醬。・鵝肝:一盤上有各種配料,混合著一起享用。(橙子、金柑、胡蘿蔔絲、鮮奶油、南瓜籽)醬汁是煮縮的鵝肝和昆布湯、白子日本酒和牛油乳化的醬汁、撒上黑七味和帕馬森起司。濃郁的白子和香濃的醬汁味道絕配,真是美味極了,令人陶醉的一道菜。・鯖壽司:鯖壽司、洗過的芝士味噌和紫蘇包。這可以說是Kabi的招牌菜,每一口寿司都充滿了用心製作。・生蠔:生蠔美乃滋、香草、Orecchiette(形狀像耳垂的義大利麵)、百合根和大根的醃製。一年發酵的魚子醬、清爽的大根和帶有適度風味和鹹味的魚子醬、發酵的番茄、濃郁的奶油乳酪平衡得恰到好處。雖然是口腔清潔的小吃,但它的水準確實是一流的。・鰆:這是主菜之一。鰆魚上淋著和式芥末、蔥和菠菜的碳烤,旁邊是蔥的油炸。肥美的鰆魚當然好吃,這些碳烤蔬菜也很美味。每種蔬菜的甜味都突出,巧妙地突顯了鰆魚的味道。・北海道蝦夷鹿肉:主菜是北海道蝦夷鹿的碳烤,搭配菜是Chima di rapa(義大利甜菜),醬汁是鹿肉高湯、芋頭醬、黑蒜和發酵藍莓。・五穀米燉飯:燉飯風格的五穀米,上面放著河豚子,還有鮭魚子。香氣撲鼻的燉飯帶著溫暖的味道,其中帶有一絲酸味,非常美味。・草莓湯:這是甜點,底部是無花果奶凍,搭配黑醋、發酵玫瑰和荔枝,還有薄荷。清爽的口感非常適合用來結束一頓飯。・黑豆甜點:最後是黑豆冰淇淋甜點。下面是巧克力慕斯,配有金柑和牛蒡片,還有鮮奶油。巧克力的甜味、牛蒡的苦味和金柑的酸味等完美的組合。如果加上菜單上沒有的一道菜,總共有14道奢華的菜品。這種料理不僅讓你用眼睛、鼻子、耳朵和嘴巴來享受,而且可以全身投入其中。Kabi料理絕對是一種全方位的美食體驗。這是一家我非常喜歡的餐廳,每次來都能體驗到不同的感受。謝謝款待!

Joining forces with sommelier Kentaro Emoto, both have honed their skills overseas and, upon returning to Japan, opened Kabi. They employ fermentation techniques learned in Denmark to create a unique culinary style that can only be experienced at Kabi. Their restaurant offers more than just wine pairings, showcasing an innovative approach. They emphasize not only the cuisine but also the ambiance and tableware, making it a delightful dining destination. However, for someone like me of modest means, the cost-effectiveness is a concern. The portion sizes are small, and there aren't many dishes included in the course. Additionally, the lunch menu mainly features chicken as the main course, yet the prices are relatively high. With a considerable number of staff, one wonders about the labor costs involved. While the quality is unquestionably high, it feels like paying for a luxury brand with added prestige. Despite many excellent restaurants available, I'm not sure if I would return to this one. -----------
