"Muromachi Wakuden | Kyoto京都「室町和久傳」 is an outstanding traditional Japanese restaurant known for its exceptional sourcing skills and the ability to bring out the best flavors of ingredients. While their clam soup and Sansho pepper hot pot are excellent, the star of the show is the bamboo shoots. They are boiled to perfection with no bitterness. What truly amazed me was their bamboo shoot rice dish, where they mix boiled bamboo shoots with freshly cooked white rice without simmering them together. This allows the natural sweetness of the bamboo shoots to shine through. Similarly, they prepare matsutake mushroom rice without simmering, which has become a popular trend lately. When the ingredients are of high quality, simmering them together can be a disadvantage. I doubt I'll be satisfied with bamboo shoot rice cooked any other way in the future. In April 2019, I also enjoyed dishes like sea urchin and yam soba, Oma-produced sea urchin, wasabi jelly, Biwako-produced young ayu fish, and a sauce made from fresh leaves and miso. They served a stunning array of seafood including red clam, turban shell, northern turban shell, abalone, and mirugai clam. They also served locally sourced boiled bamboo shoots, grilled bamboo shoots with real Sansho pepper sauce, fried ginseng, zenmai fern, dried daikon radish, and shiitake mushrooms in sesame dressing. The meal concluded with roasted kinmedai fish, sautéed rapeseed greens, and ink sauce. They also had a hot pot featuring Iwai beef Chateaubriand and sirloin with Sansho pepper. Finally, dessert included a silky smooth yokan jelly and cherry blossom viewing in the evening."
